BACON CHEDDAR MONKEY BREAD

Bacon Cheddar Monkey Bread image

This Bacon Cheddar Monkey Bread is a scratch-made savory pull-apart bread that's extra cheesy and loaded with bacon bliss.

Provided by Maegan - The BakerMama

Categories     Breakfast

Time 2h40m

Yield 10

Number Of Ingredients 10

4 tablespoons butter, melted & slightly cooled
3/4 cup milk
1 large egg
1 teaspoon sugar
1 (1/4 ounce) package active dry yeast (2-1/4 teaspoons)
1/4 cup warm water
2-1/2 cups bread flour (or all-purpose flour)
1 teaspoon salt
12 slices bacon
3 cups shredded cheddar cheese

Steps:

  • In a large bowl, melt the butter. Set aside to cool slightly.
  • Add the yeast and sugar to a small bowl. Gently pour the warm water over it. Let proof until foamy, about 10 minutes.
  • Once butter is slightly cooled, whisk in the milk, egg and yeast mixture. Add the flour and salt and stir until well combined. Using well-floured hands, form dough into a moist ball. Place in a buttered bowl and cover in plastic wrap. Let dough rise in a warm place until doubled in size, about 1-1/2 hours.
  • While the dough is rising, fry the bacon until extra crisp, reserving 1/4 cup of the bacon fat. Let bacon cool on a paper towel and then crumble into bits.
  • Preheat oven to 350°F. Butter a 9 or 10-inch tube pan. Sprinkle 1/4 cup cheese and a few tablespoons of bacon onto the bottom of the tube pan.
  • Gently punch down on the risen dough to release the air bubbles. Take half of the dough and form it into 1-inch size balls, dipping each one into the reserved bacon fat before placing into the bottom of the tube pan. There should be an even layer of dough balls in the bottom of the tube pan with about a thumbs space between each one. Sprinkle dough balls with 1-1/4 cups cheese and half of the remaining bacon bits. Form remaining dough into 1-inch size balls, dip in remaining bacon fat and place on top of the first layer in the tube pan. Sprinkle dough balls evenly with remaining cheese and bacon bits.
  • Place tube pan on a baking sheet and bake in the preheated oven for 35-40 minutes or until golden brown and cheese is melted and crisp on top.
  • Let cool for just 5 minutes before running a knife around the edges of the bread and inverting it onto a serving plate. Serve warm or cooled.

APPLE CHEDDAR BACON BREAD

Apple cheddar bacon bread image

to make ahead, bake the bread and completely cool it. Wrap the loaf in freezer paper. Freeze for up to one month. To serve, thaw bread to room temperature. Note: if you prefer chunkier bread, feel free to dice Apple rather than shredding it. Try using chunky instead of smooth applesauce also. This is a take on my mom's apple...

Provided by Lynnda Cloutier

Categories     Sweet Breads

Number Of Ingredients 11

six strips thick sliced bacon, diced
2 cups flour
1/2 teaspoon table salt
1/2 teaspoon baking soda
vegetable oil
1/2 cup sugar
two eggs
one granny smith apple, peeled and shredded, about 1 cup
1/2 cup unsweetened applesauce
1/4 cup buttermilk
1 1/4 cups shredded cheddar cheese, divided

Steps:

  • 1. preheat the oven to 350°. Coat an 8 1/2 by 4 1/2 inch glass loaf dish with nonstick spray. Sauté bacon in a skillet over medium-high heat until crisp. Use a slotted spoon to transfer cooked bacon to a paper towel lined plate. Set aside. Reserve drippings.
  • 2. Whisk flour, salt and baking soda in a large bowl. If a well in the center. Set dry ingredients aside. Add enough oil, about 1/4 cup, to the reserve drippings to make 1/2 cup. Mix with sugar and eggs in a large bowl and vigorously whisk until coat lightens. Add shredded apple, applesauce, and buttermilk, stirring to mix.
  • 3. Pour buttermilk Apple mixture into well with dry ingredients. Stir only until dry ingredients are moistened. Stir in 1 cup cheddar and the cooked bacon. Immediately pour batter into prepared loaf dish.
  • 4. Bake the loaf for 50 minutes. Sprinkle remaining 1/4 cup cheddar on top of loaf. Continue baking until a skewer inserted into center comes out clean, about 10 minutes more. Cool bread in the loaf dish on a rack for 10 minutes, then turn bread out of dish. Allow bread to completely cool on a rack before slicing. Makes one loaf.

  • Weigh your all-purpose flour; or measure it by gently spooning it into a cup, then sweeping off any excess.
  • Combine the flour with the remaining ingredients and mix to form a shaggy dough., Knead the dough — by hand, mixer, or bread machine set to the dough cycle — until it forms a smooth, somewhat tacky ball, adding more flour or water if necessary., Place the dough in a lightly greased bowl, cover, and let it rise for 60 to 90 minutes, until it's puffy though not necessarily doubled in bulk., Lightly grease a 10-cup Party Bundt Pan or other tube-style pan., Gently deflate the dough and form it into a large ball.
  • Use your fingers to pierce a hole through the center of the ball and place the resulting dough ring into the prepared pan., Cover the pan with greased plastic and let the dough rise for 60 to 90 minutes, until it's puffy and starting to fill the pan.
  • Towards the end of the rising time, preheat the oven to 350°F., Uncover the pan, and bake the bread for 25 to 30 minutes, until it's golden brown on top; a digital thermometer inserted into the center will read 190°F., Remove the bread from the oven, allow it to cool for 10 minutes in the pan, then turn out onto a rack to cool completely., While you’re waiting for the bread to cool, cook and chop the bacon (we recommend baking it), and chop the chives., In a medium bowl combine the bacon with the cheese., Once the loaf has cooled, slice it down to within 1” of the base (you’ll want the bottom to remain unsliced in order to maintain the ring), using the scalloped pattern as a guide if the loaf was baked in a party Bundt pan, or cutting at 1" intervals if it was baked in another tube-style pan., Gently pull each section of the Bundt away from its neighbor and fill the cavity with a heaping tablespoon of the bacon-cheddar mixture., Once all the cavities have been filled, sprinkle the chop

From instructables.com
Estimated Reading Time 2 mins
  • Prep Your Yeast. In a large mixing bowl, combine 3 cups of warm water, 2 teaspoons of yeast, 2 teaspoons of salt and 2 teaspoons of sugar. Stir ingredients and set aside for several minutes.
  • Makin' Bacon. Cook the pack of bacon using your preferred method. I have been known to use the microwave in a crunch, but my favorite way to make bacon is in the oven at 400° until done, which is usually about 10-15 minutes.
  • Grate Cheese. Even though I will give you a pass about cooking bacon in the microwave, don't use the bagged cheese. The bagged cheese is never a substitute for the grate-it-yourself variety.
  • Bring Back the Yeast! Combine to your yeast mixture, 6 cups of flour, 1 cup of cheese and half of the bacon that has been broken up into pieces.
  • Get Those Loaf Pans Out. Cut the dough in half, put in loaf pans and then top with 1 cup of cheese and the rest of the bacon pieces.
  • Proof the Dough Pt. 2 Cover the dough with the towel again and place in a warm area for 30 minutes.
  • Baking Time! Put in a preheated 400° oven for 15 minutes. After 15 minutes, loosely place aluminum foil on top of the loaves and lower the temperature down to 350° and bake for 35 minutes.
  • Slice and Serve. I honestly don't know how many days this bread will last, because my family usually has both loaves eaten within a few days. It goes great with any meal and it does make the best grilled cheese I have ever eaten.
