BACON CHEDDAR BEER BREAD
Found thru Pinterest, this is similar to the Tastefully Simple beer bread recipes, with the addition of bacon and cheddar. Tasty, with a nice crust, this takes no time to mix together, and you have great, hot bread in less than 75 minutes. Credit for recipe goes to The Slow Roasted Italian blogspot.

- Preheat oven to 350°.
- Prepare bread pan by greasing with butter; set aside.
- In a large bowl, combine flour, baking powder, salt and sugar with a whisk. Make a well in the center; add bacon, about 3/4 of cheese and beer into the well.
- Stir mixture with a spoon until combined.
- Pour mixture into prepared bread pan; add remaining cheese and drizzle with 1 tablespoon of butter.
- Bake for 30 minutes; remove from oven and drizzle remaining butter over the top.
- Bake for an additional 25-30 minutes or until browned on top and loaf thumps when you tap the top.
- Remove to a wire rack and allow to cool for 5 minutes. Remove from pan and allow to cool on wire rack. You can brush with more butter if you choose.

- Cut half the cheese into 32 small cubes; shred remaining cheese.

- 1. Pre-heat oven to 400 degrees. Grease two 5 x 9 loaf pans.
- 2. In a large frying pan, cook bacon until crisp. Drain excess grease on paper towels. Cut strips up into bite size pieces.
- 3. In a large mixing bowel, sift salt, baking soda and flour together.
- 4. With your fingers, combine 2 tbsp. of butter until thoroughly combined. It should look like sand. Stir in cheese and bacon until well mixed. Add buttermilk until dough just comes together.
- 5. Divid dough evenly between both loaf pans. Smooth tops of dough. With a knife, cut a thin slice down the center of each loaf. Thinly slice remaining butter and put in the slices, using more if needed.
- 6. Bake until tops are golden brown and a tester comes out clean, approximately 25 - 30 minutes. Allow to cool for 30 minutes before slicing. Enjoy! :o)

- In a large bowl, melt the butter. Set aside to cool slightly.
- Add the yeast and sugar to a small bowl. Gently pour the warm water over it. Let proof until foamy, about 10 minutes.
- Once butter is slightly cooled, whisk in the milk, egg and yeast mixture. Add the flour and salt and stir until well combined. Using well-floured hands, form dough into a moist ball. Place in a buttered bowl and cover in plastic wrap. Let dough rise in a warm place until doubled in size, about 1-1/2 hours.
- While the dough is rising, fry the bacon until extra crisp, reserving 1/4 cup of the bacon fat. Let bacon cool on a paper towel and then crumble into bits.
- Preheat oven to 350°F. Butter a 9 or 10-inch tube pan. Sprinkle 1/4 cup cheese and a few tablespoons of bacon onto the bottom of the tube pan.
- Gently punch down on the risen dough to release the air bubbles. Take half of the dough and form it into 1-inch size balls, dipping each one into the reserved bacon fat before placing into the bottom of the tube pan. There should be an even layer of dough balls in the bottom of the tube pan with about a thumbs space between each one. Sprinkle dough balls with 1-1/4 cups cheese and half of the remaining bacon bits. Form remaining dough into 1-inch size balls, dip in remaining bacon fat and place on top of the first layer in the tube pan. Sprinkle dough balls evenly with remaining cheese and bacon bits.
- Place tube pan on a baking sheet and bake in the preheated oven for 35-40 minutes or until golden brown and cheese is melted and crisp on top.
- Let cool for just 5 minutes before running a knife around the edges of the bread and inverting it onto a serving plate. Serve warm or cooled.

- 1. preheat the oven to 350°. Coat an 8 1/2 by 4 1/2 inch glass loaf dish with nonstick spray. Sauté bacon in a skillet over medium-high heat until crisp. Use a slotted spoon to transfer cooked bacon to a paper towel lined plate. Set aside. Reserve drippings.

Cool bread in the loaf dish on a rack for 10 minutes, then turn bread out of dish. Allow bread to completely cool on a rack before slicing. Makes one loaf.

- Prep Your Yeast. In a large mixing bowl, combine 3 cups of warm water, 2 teaspoons of yeast, 2 teaspoons of salt and 2 teaspoons of sugar. Stir ingredients and set aside for several minutes.
- Makin' Bacon. Cook the pack of bacon using your preferred method. I have been known to use the microwave in a crunch, but my favorite way to make bacon is in the oven at 400° until done, which is usually about 10-15 minutes.
- Grate Cheese. Even though I will give you a pass about cooking bacon in the microwave, don't use the bagged cheese. The bagged cheese is never a substitute for the grate-it-yourself variety.

- Baking Time! Put in a preheated 400° oven for 15 minutes. After 15 minutes, loosely place aluminum foil on top of the loaves and lower the temperature down to 350° and bake for 35 minutes.
- Slice and Serve. I honestly don't know how many days this bread will last, because my family usually has both loaves eaten within a few days. It goes great with any meal and it does make the best grilled cheese I have ever eaten.
