- 1. In a medium saucepan, melt the butter over medium-low heat. Add the onion and cook, stirring, until softened, 4 to 6 minutes. Gradually whisk in the flour and cook, whisking constantly, until lightly browned, about 1 minute. 2. Gradually whisk in the beer and half and half. Cook, whisking constantly, until the sauce is thickened and just begins to bubble, 5 to 7 minutes. Reduce the heat to low and gradually add the cheeses, whisking constantly, until melted and combined. Remove from the heat. 3. Whisk in the dijon mustard and the Worcestershire sauce. Garnish with chives and black pepper, if you like. Serve with pretzels; re-warm gently as needed.

- Melt butter, flour, onion powder, garlic powder, and cayenne pepper over medium heat in a saucepan. Cook 1 minute.
- Stir in milk and beer a bit at a time, whisking until smooth after each addition. Continue cooking over medium heat, add in mustard and Worcestershire, cooking sauce until thick and bubbly.
- Reduce heat to low, add cheeses, and stir just until melted and smooth.
- Serve warm with vegetables, tortilla chips or soft pretzels.

JALAPENO BEER CHEESE DIP

- Preheat the broiler.
- Toss the Monterey jack and Cheddar cheeses together in a small bowl.
- Heat the oil in a medium cast-iron or ovenproof skillet over medium-high heat. Add the scallions, jalapeno and a pinch of salt and cook, stirring, until tender, about 3 minutes. Add the tomato and cook, stirring, until soft, about 1 minute. Add the beer and cook until all the liquid has evaporated, about 7 minutes. Remove the skillet from the heat. Add the cheese mixture to the skillet and stir once or twice to combine.
- Put the skillet under the broiler and broil until the cheese is melted, bubbling and lightly browned on top, 2 to 3 minutes. Serve hot with warm tortillas or tortilla chips.
CHILI-CHEDDAR BEER DIP
This addictive dip goes fast and is a great one to make quickly and serve fast. The plate gets cleaned. Lower in fat with the neufchatel and if you sub in 2% cheese. This is from a Kraft cookbooklet for Superbowl 2010. It was so colorful and the flavors fresh. Hope you all enjoy it as much as our guests did. - Melt butter in a medium saucepan over medium heat. Add flour; cook, whisking, about 2 minutes. Add thyme and mustard, then gradually add beer, whisking constantly until smooth. Bring to a boil and cook 1 minute more.
- Reduce heat to medium. Add cream cheese, a piece at a time, whisking constantly until smooth. Whisk in cheddar and Gruyere, a handful at a time, until melted. Remove from heat. Add Worcestershire. Season with salt and pepper. Serve, sprinkled with pretzel crumbs, with pretzel rods and celery.
RED PEPPER CHEDDAR DIP
Another magazine find. Hope you enjoy!!!! The recipe calls for Tabasco sauce, but you can use your favorite. It is also recommended that you either use the thick slice bacon or either double the amount of bacon if you are using the thin slice. Cook time is mostly "chill" time. one of those dips that gets better as it sits.

- Blend all ingredients, excepts the bacon and scallions in a food processor until fairly smooth.
- Saute the bacon until crispy and drain.
- Reserve some of the bacon to use as a garnish, the stir the rest into the the cheese mixture.
- Chill for at least 1 hour.
- Just before serving, garnish with remaining bacon and scallions.
- Serve with favorite bread sticks, veggies, toasted baguettes, etc.
