GINGERED DATE BALLS - NO COOK
Inspired by Sharon123 from her recipe #186127, I added raisins to bring down the price because dates are costly and added ginger to give a refreshing bite to all the sweetness.

PEANUT BUTTER DATE BALLS
These things are great! The dates add natural sweetener - no sugar added! They come from the Biggest Loser Cookbook and are probably the best recipe in there! Note: These taste great with natural peanut butter, which avoids having sugar added because of the sugar added to regular peanut butter.

CHOCOLATE RUM BALLS (NO COOK)
A coworker brought these to a potluck and they were inhaled. I misplaced the recipe for a while and found it again today. Before I lose it again I'm going to post it. I haven't made them myself yet so the number of balls this makes is an estimate. Unlike many rum ball recipes, this recipe contains no corn syrup. **Chill time not included in time to prepare**

DATE BALLS
A holiday tradition. My mother made these date balls every year at Christmas time. They may be stored in a plastic or glass container. If the weather is warm, keep them in the refrigerator. Make sure balls are cooled thoroughly before storing.

- Combine the remaining ingredients in a food processor, and pulse to process until a “ball” forms. If the mixture is still too dry, add 1 tsp of water at a time until it does form a ball.
- Roll the mixture into approximately 25 to 30 small balls—I use a #100 scoop for this—then roll through the lemon zest mixture to coat. Place on a plate, and transfer to the freezer for 5 minutes to harden. Then transfer to an airtight container for storage in the refrigerator or freezer—I store in the freezer in a quart container.

- Place all ingredients in a food processor (we use a mini food processor), sprinkling the spices evenly around the processor bowl.
- Process the date mixture until it reaches your desired consistency (from a bit chunky and chewy to silky-smooth), scraping the bowl once or twice if needed. Note that dried dates vary a bit in how moist they are – if you are having difficulty processing your dates because they're extra-dry, you can add just one or two drops of water to help loosen the mixture. Be very careful not to add too much water, though!
- With very slightly dampened hands (to prevent sticking), roll the date mixture into 1-inch balls and lay the balls on parchment or wax paper to dry.
- If you are rolling the date balls in the optional pecan coating, coat each ball immediately after you've shaped it, while it's still a bit sticky and damp. Press pecans into the date balls lightly to help them adhere. If you are having trouble getting the pecans to stick to the date balls, or you forgot to add the pecan coating immediately, you can help the pecans to stick by again slightly dampening your hands and rolling the date balls around to dampen them just a little.
