Inspired by Sharon123 from her recipe #186127, I added raisins to bring down the price because dates are costly and added ginger to give a refreshing bite to all the sweetness.

1/2 lb almonds, finely chopped, toasted and divide in 1/2
1 cup dates, pitted, chopped
1 cup raisins
1 ounce candied ginger, chopped Candied Ginger and Syrup
1/4 cup honey

Steps:

  • Place one half of the almonds and the remaining ingredients in a food processor and pulse until blended.
  • Roll into balls and then coat in the remaining almonds.

These things are great! The dates add natural sweetener - no sugar added! They come from the Biggest Loser Cookbook and are probably the best recipe in there! Note: These taste great with natural peanut butter, which avoids having sugar added because of the sugar added to regular peanut butter.

1 cup granulated sugar
1 egg
1 (8 ounce) package pitted dates, chopped
1/2 cup nuts, chopped
4 cups crispy rice cereal
coconut

Steps:

  • Melt margarine in large pot (4 quart or larger).
  • Add sugar, egg, and dates.
  • Stir constantly over low to medium heat.
  • Cook approximately 5 minutes until mixture thickens.
  • Remove from heat. Add chopped nuts and rice cereal.
  • Roll into walnut-sized balls; then roll in coconut.

A coworker brought these to a potluck and they were inhaled. I misplaced the recipe for a while and found it again today. Before I lose it again I'm going to post it. I haven't made them myself yet so the number of balls this makes is an estimate. Unlike many rum ball recipes, this recipe contains no corn syrup. **Chill time not included in time to prepare**

1/2 cup butter
1/2 cup sifted icing sugar
3/4 cup semi-sweet chocolate chips
2 eggs, slightly beaten
1 pinch salt
4 tablespoons dark rum
1 3/4 cups vanilla wafer crumbs (about 40 small wafers)
ground nuts or coconut, for rolling

Steps:

  • Combine butter, icing sugar and chocolate chips in a microwavable bowl.
  • Microwave on low to melt - do not cook.
  • Stir in beaten eggs and salt until thick and smooth.
  • Add rum and crumbs then mix well.
  • Refrigerate until mixture is stiff enough to form balls (about 3 hours).
  • Roll balls in chocolate shots, ground nuts or coconut.
  • Chill.

A holiday tradition. My mother made these date balls every year at Christmas time. They may be stored in a plastic or glass container. If the weather is warm, keep them in the refrigerator. Make sure balls are cooled thoroughly before storing.

1 cup white sugar
½ cup margarine
3 cups crispy rice cereal
1 cup chopped pecans
1 teaspoon vanilla extract
½ cup confectioners' sugar, or as needed

Steps:

  • Cook and stir dates, sugar, and margarine in a large saucepan over low heat until sugar dissolves; remove from heat. Fold crispy rice cereal, pecans, and vanilla extract into the date mixture until evenly mixed.
  • Grease your hands with margarine. Roll date mixture into 1-inch balls.
  • Spread confectioners' sugar into a shallow dish; roll date balls in confectioners' sugar to coat.

  • Place all ingredients in a food processor (we use a mini food processor), sprinkling the spices evenly around the processor bowl.
  • Process the date mixture until it reaches your desired consistency (from a bit chunky and chewy to silky-smooth), scraping the bowl once or twice if needed. Note that dried dates vary a bit in how moist they are – if you are having difficulty processing your dates because they're extra-dry, you can add just one or two drops of water to help loosen the mixture. Be very careful not to add too much water, though!
  • With very slightly dampened hands (to prevent sticking), roll the date mixture into 1-inch balls and lay the balls on parchment or wax paper to dry.
  • If you are rolling the date balls in the optional pecan coating, coat each ball immediately after you've shaped it, while it's still a bit sticky and damp. Press pecans into the date balls lightly to help them adhere. If you are having trouble getting the pecans to stick to the date balls, or you forgot to add the pecan coating immediately, you can help the pecans to stick by again slightly dampening your hands and rolling the date balls around to dampen them just a little.
