  • In a small bowl, put 2 dried shiitake and 3 Tbsp water and rehydrate for 15 minutes. When shiitake becomes soft, squeeze water out and slice them thinly. Tip: This liquid is shiitake dashi. If you want to use this shiitake dashi as a part of your ½ cup dashi in this recipe. To do that, strain shiitake dashi (to remove any impurities), and add dashi till you get ½ cup total.
  • Whisk the egg in a medium bowl. Add mirin, soy sauce, salt, and ½ cup dashi. Mix well together.
  • Prepare a pot and lid that fits your chawanmushi cups. Add water that covers half of the chawanmush cups. Bring it to a boil and once boiling, reduce the heat to the LOWEST setting. Gently place the chawanmushi cups inside the hot water (it should not be boiling) and cover the pot with the lid. Cook for 25-30 minutes on the lowest heat. If you are not adding shrimp and/or chicken, the cooking time should only be 15-20 minutes. Insert a skewer in the center of the custard and see if the egg is done. If clear liquid comes out, it's done.

  • Whisk together eggs, broth, fish sauce, and salt in a bowl. Divide celery leaves and scallion evenly between 2 (12-ounce) bowls. Pour egg mixture through a fine wire-mesh strainer evenly into bowls. Wrap each bowl in plastic wrap (use rubber bands to secure plastic if it doesn’t adhere to sides).
  • Place bowls in a large steamer basket set over a large saucepan of simmering water. Cover and cook until custards are just set, 15 to 18 minutes.
  • Carefully remove bowls from steamer basket; remove and discard plastic wrap. Let custards stand 5 minutes.
  • Meanwhile, place shrimp in a single layer in steamer basket. Cover and cook until opaque and cooked through, about 1 minute.

  • Combine dashi powder, 1 tablespoon mirin, and 2 cups warm water in a medium bowl. Stir to dissolve powder. Transfer 1 tablespoon dashi mixture to a small bowl. Add soy sauce, oil, and remaining 2 teaspoons mirin; set dashi sauce aside. Set remaining dashi mixture aside for custard.
  • Set a large bamboo steamer over a large pot filled with 1-inch of simmering water. If using fresh peas, place in a small wide bowl and set bowl in steamer. Cover and cook until peas are tender, about 5 minutes (if using frozen peas, do not cook). Repeat with shrimp and mushrooms, placing each in separate small wide bowls, and cook in steamer until shrimp are just opaque and mushrooms are softened, about 2 minutes for each.
  • Gently mix eggs in a large bowl to blend (do not create bubbles); stir in dashi mixture reserved for custard. Pour custard through a fine-mesh sieve into a large bowl or a 4-cup measuring cup.
  • Toss peas, mushrooms, and scallions in a medium bowl and combine. Divide all but 2 tablespoons pea mixture among 6 small heatproof bowls or 8-ounce ramekins (set remaining pea mixture aside for serving); pour dashi custard over pea mixture, dividing evenly. Tightly cover each bowl with plastic wrap.
