Yield 4 servings

Number Of Ingredients 11

2 (1 1/2"-2" thick) boneless New York strip steaks
1 tsp. freshly ground black pepper
2 1/4 tsp. kosher salt, divided
2 bunches broccolini (about 1 lb. total), trimmed, halved lengthwise
1 Tbsp. extra-virgin olive oil
3 oz. coarsely grated Gruyère (about 1½ cups)
3 oz. cream cheese, cut into pieces
3/4 cup whole milk
1/4 tsp. freshly grated or ground nutmeg
Large pinch of cayenne pepper
Flaky sea salt

Steps:

  • Preheat oven to 450°F. Season steaks all over with pepper and 1 1/2 tsp. kosher salt. Let sit 10 minutes.
  • Meanwhile, toss broccolini, oil, and 1/2 tsp. kosher salt on a rimmed baking sheet to combine. Spread out in a single layer and set aside.
  • Using tongs if needed, hold both steaks together fat cap side down in a large ovenproof skillet, then set over high heat. Cook until pan is coated in fat, about 4 minutes. Lay steaks flat and continue to sear until deeply browned, about 3 minutes per side. Transfer skillet to oven and roast steaks until an instant-read thermometer inserted into the thickest part registers 120°F for medium-rare, 6-8 minutes. Transfer to a cutting board and let rest 10 minutes before slicing.
  • While steaks are resting, roast reserved broccolini until crisp-tender and lightly charred, about 10 minutes.
  • Heat cheese, cream cheese, milk, nutmeg, cayenne, and remaining 1/4 tsp. kosher salt in a medium saucepan over medium, whisking constantly, until a smooth sauce forms, about 5 minutes.
  • Divide sauce among plates. Top with broccolini and steaks; sprinkle with sea salt.

PHILLY CHEESESTEAK

Philly cheesesteak image

Pile steak, onion, peppers, cheese, ketchup and mustard into rolls to make these American-style Philly cheesesteaks. Just the food for a movie night in

Provided by Esther Clark

Categories     Dinner, Lunch, Snack, Supper, Treat

Time 55m

Number Of Ingredients 10

300g steaks
2tbsp sunflower oil
1 onion , sliced
1 red pepper , sliced
1 green pepper , sliced
2tbsp white wine vinegar
8 cheese slices
50g grated mozzarella
4 soft white sub rolls
American mustard and ketchup, to serve

Steps:

  • Trim away and discard the long piece of fat running down the side of the steaks. Cut each steak in half and put on a baking tray, then transfer to the freezer and freeze for 40 mins.
  • Heat the oil in a heavy-based pan or casserole dish set over a medium heat. Add the onion and peppers along with a good pinch of salt and fry for 20 mins, or until the onions are golden and sticky. Add the vinegar and cook for a further 5 mins. Season to taste.
  • Using a sharp knife, slice the steak as thinly as possible and pile the slices into four portions. Heat a skillet over a high heat until almost smoking. Put one portion of the steak slices in the pan in a pile that's roughly the length of your rolls. Fry for 3 mins over a high heat until some of the steak is cooked through, with pink bits remaining. Pile a quarter of the onion mixture on top, as well as a quarter each of the cheese slices and the mozzarella. Continue to cook undisturbed over a medium heat for 5-10 mins until the meat is brown and crisp around the edge and the cheeses have melted. Split one of the rolls open and carefully scoop the meat and cheese mixture into it. Repeat with the remaining meat, onions, cheese and rolls.

CHARRED BROCCOLI BEEF

Charred Broccoli Beef image

I saw a charred broccoli salad online somewhere recently, and for whatever reason I had the idea to try the same technique for a fairly classic version of broccoli beef. Serve over steamed rice.

Provided by Chef John

Categories     100+ Everyday Cooking Recipes

Time 44m

Yield 4

Number Of Ingredients 15

1 pound skirt steak, cut in half across the grain
kosher salt and freshly ground black pepper to taste
1 tablespoon cornstarch
2 tablespoons vegetable oil
¼ cup oyster sauce
3 tablespoons dry sherry
1 tablespoon soy sauce, or more to taste
2 teaspoons ketchup
½ cup chicken broth
1 ½ teaspoons cornstarch, or more to taste
1 pound bite-size broccoli florets
1 tablespoon vegetable oil
2 teaspoons vegetable oil
3 cloves minced garlic
1 pinch cayenne pepper

Steps:

  • Season steak generously with kosher salt and black pepper on both sides. Sprinkle 1 tablespoon cornstarch lightly over both sides.
  • Heat 2 tablespoons oil in a skillet over high heat. Sear steak halves until surface is browned and crusty, 3 to 4 minutes per side. Transfer steaks to a plate, reserving juices in the skillet. Let cool completely.
  • Mix oyster sauce, sherry, soy sauce, and ketchup together in a bowl. Whisk in chicken broth and 1 1/2 teaspoon cornstarch.
  • Place broccoli florets in a bowl. Drizzle 1 tablespoon oil and some of the reserved juices on top; toss to coat.
  • Preheat oven to 500 degrees F (260 degrees C). Line a rimmed baking sheet with foil; spread broccoli florets on top, stem-side down.
  • Roast broccoli florets in the preheated oven until charred, 10 to 12 minutes.
  • Cut steak halves into 2 or 3 pieces with the grain. Slice each piece against the grain into 1/8-inch slices.
  • Pour 2 teaspoons vegetable oil into the skillet used to brown the steak; heat over medium-high heat. Add 3 cloves minced garlic; let sizzle for just 30 seconds. Stir steak, broccoli, and oyster sauce mixture into the skillet. Cook and stir until steak is heated through, broccoli is barely tender, and sauce thickens slightly, 3 to 5 minutes.

  • Position racks in top third and center of oven; preheat to 425°. Toss carrots, bell peppers, onion, red pepper flakes, and 3 Tbsp. oil on a rimmed baking sheet. Roast on center rack, tossing occasionally, until vegetables are tender and well browned (it’s okay if some spots are beginning to look burned; this will give the romesco a deeper flavor), 25–30 minutes.
  • Meanwhile, separate broccolini florets from stalks; thinly slice stalks. Transfer florets and stalks to a clean rimmed baking sheet. Add garlic and ¼ cup oil, season with salt, and toss to combine. Roast on top rack, tossing halfway through, until florets are charred and stems are cooked through but still have some crunch, 16–18 minutes. Pour 2 tsp. vinegar over and toss to coat; season with salt.
  • Transfer carrot mixture to a food processor. Add 2 Tbsp. vinegar and pulse until smooth. With motor running, gradually drizzle in remaining ½ cup oil and process, scraping down sides as needed, until emulsified; season with salt.
  • Slice rolls in half lengthwise. Arrange cut side up on a rimmed baking sheet and toast until light golden brown, about 3 minutes.

  • Preheat the oven to 400 degrees F. Place the oven racks in the upper and lower thirds of the oven.
  • Trim the stems from the broccoli crowns. Slice crowns in half, then slice into stalks, leaving a flat, cut side when possible.
  • Divide the broccoli stalks between two sheet pans, drizzle with olive oil and sprinkle iwth salt. Using your hands, rub the olive oil into the stalks and florets and rub the oil all around the bottom of the pan. Spread out the broccoli on the sheet pan so there is space between them, with the flat, cut side down. (If they aren't spread out, they will steam, not char.) Place the sheet pans in the upper and lower thirds of the oven.
  • Check the broccoli after about 12-15 minutes, if it’s nice and charred on the bottom, flip the stalks over, and rotate the pan that was in the bottom of the oven to the top of the oven and vice versa. Continue to cook broccoli until stems are charred and florets are getting crispy, another 5-10 minutes. Total cooking time will be about 23-25 minutes.

  • 1. In a medium bowl, smash avocados with a fork until chunky. Season with salt and pepper, add sour cream and buttermilk, then use a whisk to beat into a thick, slightly coarse puree. Taste the sauce and adjust seasoning as desired. Squeeze lime juice into a small bowl, then thinly slice the serrano and add it to the juice. Season with salt and stir to combine. Set avocado sauce and chile-lime mixture aside separately.
  • 2. In a small skillet or saucepan, combine 2 tablespoons oil, sunflower seeds and coriander seeds over medium heat. Cook, swirling the pan often, until seeds are golden-brown, 1-2 minutes. Use a slotted spoon to transfer seeds to a plate; season them with salt and let cool. Save the coriander oil.
  • 3. Trim the woody end from broccoli stalks, then peel with a vegetable peeler until you get down to the light green, tender layer. Cut the stalks lengthwise through the crown into 1/2-inch wide spears with florets and stalks attached. Some florets will break off, which is no big deal. Everything ends up in the pan.
  • 4. Place a large cast-iron skillet over high heat and add reserved coriander oil plus remaining 3 tablespoons oil. Working in batches if needed to prevent crowding, add broccoli to pan, cut-sides down, and season with salt. Toss to coat, then cook in a single layer, undisturbed, until golden-brown on underside, 2 minutes. Turn and cook until second side is browned, 2 minutes more. You want to slightly soften the broccoli and get good color on it, which will mellow its raw flavor and assertive crunch without overcooking it. That's the goal — shoot for the very crisp end of the crisp-tender continuum.
