6 cups peeled, cored and grated Granny Smith apples
2 lemons, juiced
1 cup roughly chopped walnuts
1 cup golden raisins
1/2 cup honey
1 teaspoon cinnamon
1/4 cup kosher for Passover sweet red wine

Steps:

  • In a large bowl combine all of the ingredients. Serve.

Traditionally served at Passover seder, we had never tried charoset before and fell in love. The apples and honey are sweet with a slight hint of cinnamon. Sweet red wine is not overpowering, it almost adds a light tanginess to the fruit. Walnuts and raisins are the perfect complements to the apples. We tried this with matzo...

6 medium apples (peeled or unpeeled), chopped finely
1 c chopped walnuts, chopped finely
1/2 c raisins
1/3 c sweet red wine (or grape juice)
2-3 tsp honey
1/2 tsp cinnamon

Steps:

  • 1. In a large bowl, combine the apples, walnuts, and raisins.
  • 2. Sprinkle the cinnamon over the apples.
  • 3. Stir in wine (or juice).
  • 4. Stir in the honey.
  • 5. Mix well.
  • 6. Serve immediately or refrigerate until serving. This is great spread on matza or other cracker but can be eaten just as is.

3 medium Gala or Fuji apples, peeled and finely chopped
1/2 cup finely chopped walnuts, toasted
2 tablespoons sweet red wine or grape juice
2 tablespoons sugar
1 teaspoon ground cinnamon
Matzo crackers, optional

Steps:

  • In a large bowl, toss apples and walnuts with wine. Mix sugar and cinnamon; sprinkle over apple mixture and toss to combine., Refrigerate, covered, 1 hour before serving. If desired, serve with matzo crackers.

1 cup blanched sliced almonds
1/2 cup sugar
1/2 teaspoon cinnamon
5 -6 ounces Baby Spinach or 5 -6 ounces choice lettuce
3 Granny Smith apples, with peel, diced
8 dried dates, pitted and diced
1/2 cup cream, malaga or 1/2 cup sweet red wine
1/2 cup balsamic vinegar
3/4 cup oil
2 tablespoons sugar
1 teaspoon salt
1/4 teaspoon cinnamon
1 pinch cayenne pepper

Steps:

  • Candied Almonds:.
  • 1. Line a baking sheet with parchment paper; set aside.
  • 2. Heat a frying pan over medium heat. Add almonds, sugar, and cinnamon; cook for approximately five minutes, stirring frequently, until the sugar is dissolved - do not overcook or sugar will burn.
  • 3. Spread the nuts in a single layer on prepared baking pan; set aside to cool.
  • 4. Nuts can be stored in an airtight container at room temperature for about a week.
  • Dressing:.
  • 1. Combine all dressing ingredients in a container; cover tightly and shake to combine.
  • 2. Dressing can be prepared ahead and stored in the fridge for about a week.
  • Salad:.
  • 1. Add spinach, apples, dates, and candied almonds to a large bowl.
  • 2. Just before serving, drizzle with desired amount of dressing (you will have extra); toss to combine.

Try this simple recipe for ashkenazi charoset, a symbolic food eaten during Jewish Passover celebrations. Chop by hand or use a food processor for a smooth texture

160g walnut halves
3 apples, such as Pink Lady or Royal Gala
1½ ground cinnamon
1 tbsp lemon juice
2 tbsp honey or silan
1 tsp grated orange zest
50ml - 60ml sweet red wine, or grape juice

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Toast the walnuts until dark and fragrant, about 7-10 mins, taking care not to burn them. Allow to cool, then chop finely.
  • Peel, core and finely chop the apples. Mix with the cinnamon, lemon juice, silan (date syrup), orange zest, sweet wine or grape juice and salt. Add the cooled nuts and stir again to combine. Transfer it to a closed container and keep chilled.
