Melissa Clark popularized this recipe when she wrote about it in The Times in 2013. Ina Garten included an adaptation of the recipe in her latest book, Cook Like a Pro, and when I saw it in there, I had to make it immediately. It is as delicious as promised and endlessly adaptable. Here are a few changes I've made: Omitted the tomatoes, though I would certainly include them if it were summer. Used raw, peeled Chioggia (candy cane) beets in place of the radishes. Used scallions in place of parsley and mint, though the herbs would be lovely additions/substitutions. Added 1/4 cup Zante currants soaked in 2 tablespoons of white balsamic vinegar - the first time I made this, I found myself missing the sweetness of something like a currant or golden raisin. Totally optional. A few other notes: Farro: Pearled farro will cook in 25-30 minutes; if you are using un-pearled farro, the cooking time may be much, much longer. So, be sure to look at the package and adjust cooking time and liquid amounts as needed. If you don't have apple cider, you can simply cook the farro in water, but the cider does lend a subtle and nice sweetness to the cooked farro. If you are sensitive to salt, consider reducing the amounts suggested both when cooking the farro and making the dressing. I am a salt fiend and did not find this too salty, but a handful of commenters on The Times recipe noted that they found the salad too salty. 1 cup pearled farro, see notes above
1 cup apple cider
3 teaspoons kosher salt, divided
1 to 2 bay leaves
1/2 cup extra-virgin olive oil
1/4 cup fresh lemon juice
1/4 cup Zante currants, optional
2 tablespoons white balsamic vinegar, optional
1/2 cup chopped pistachio nuts
2 cups arugula leaves, plus more to taste
2 cups sliced scallions or a combination of herbs such as basil, parsley, and mint
⅓ cup thinly sliced radish or peeled beets
shaved parmesan cheese, to taste, optional
freshly cracked black pepper to taste
Maldon or other flaky sea salt, for finishing, optional

Steps:

  • In a medium saucepan, bring farro, apple cider, 1 to 2 teaspoons salt (see notes above), bay leaves and 2 cups water to a simmer. Simmer until farro is tender and liquid evaporates, about 30 minutes-simmer it gently and pay close attention after 20 minutes, because the water begins to evaporate quickly. If all the liquid evaporates before the farro is done, add more water as necessary. Drain farro, if necessary, or transfer to a large bowl if very little water remains in the pot. Discard bay leaves.
  • Meanwhile, whisk together the olive oil, lemon juice and another teaspoon salt (or half a teaspoon if you are sensitive, see notes above). In a small bowl, pour the vinegar over the currants, if using.
  • Pour the lemon dressing over the warm farro and let stand for at least 15 minutes to cool. Add pistachios, arugula, scallions or herbs, radishes or beets, and soaked currants, vinegar and all. Season with pepper to taste. Toss. Add flaky salt to taste, if necessary. Shave parmesan over top, if using.

There are two essential steps to a stellar farro salad. The first is cooking the farro with enough salt and aromatics so that it delicious before you combine it with the rest of the ingredients. The second is to use very good olive oil in the dressing. This farro salad, from the restaurant Charlie Bird in SoHo, hits both these marks. The chef Ryan Hardy cooks the farro in apple cider seasoned with bay leaves and plenty of salt, which renders it good enough to eat on its own. But it's even better after he adds loads of olive oil, plus pistachio nuts and Parmesan cheese to make it even richer. Then, before serving, he folds in fresh vegetables to brighten it up: juicy tomatoes, radishes, arugula and plenty of herbs. There are many farro salads of this ilk out there. This is one of the best.

70 grams Parmesan cheese, shaved with a vegetable peeler (1/2 cup)
70 grams chopped pistachio nuts (1/2 cup)
2 cups arugula leaves
1 cup parsley or basil leaves, torn
1 cup mint leaves
3/4 cup halved cherry or grape tomatoes
1/3 cup thinly sliced radish
Maldon or other flaky sea salt, for finishing

Steps:

  • In a medium saucepan, bring farro, apple cider, salt, bay leaves and 2 cups water to a simmer. Simmer until farro is tender and liquid evaporates, about 30 minutes. If all the liquid evaporates before the farro is done, add a little more water. Let farro cool, then discard bay leaves.
  • In a salad bowl, whisk together olive oil, lemon juice and a pinch of salt. Add farro, cheese and pistachio nuts and mix well. This salad base will keep for up to 4 hours at room temperature or overnight in the refrigerator (bring to room temperature before serving). Just before serving, fold in arugula, herbs, tomatoes, radish and flaky salt to taste.

Farro, Roasted Beet and Goat Cheese Salad image

8 ounces baby red beets with greens
4 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
10 sprigs thyme
2 cloves garlic, unpeeled
1/3 cup pistachios
2 tablespoons unsalted butter
1 cup Italian pearled farro, rinsed and drained
1/4 cup red wine vinegar
4 ounces goat cheese, crumbled.

Steps:

  • Preheat the oven to 425 degrees F.
  • Cut the greens off the beets and slice them into 1/2-inch pieces; reserve. Trim and discard the beet stems. Combine the beets, 2 tablespoons of the oil, 1 teaspoon salt, some pepper, 5 of the thyme sprigs and the garlic cloves on a baking sheet. Cover with foil and roast for 30 to 35 minutes, until easily pierced with a paring knife. Set aside to cool completely.
  • Meanwhile, toast the pistachios in the oven for 5 minutes. Let cool.
  • Melt the butter in a medium saucepan or lidded deep skillet over medium heat. Add the farro and toast for 2 minutes--the color will darken slightly and the farro will acquire a nutty fragrance. Add 2 cups water, 1 teaspoon salt and the remaining 5 thyme sprigs. Bring to a boil, then reduce to a simmer. Cover and cook for 25 minutes, or until al dente (cooked but still firm to the bite). Drain the farro well and pour into a serving bowl.
  • While the farro is still hot, add the beet greens, tossing to allow the heat to wilt the greens. Set aside to cool completely.
  • With a paper towel, remove the skins from the beets. Quarter the beets and add them to the bowl with the farro. Fold in the toasted pistachios.
  • Squeeze the roasted garlic into a small bowl. Mash with a fork and season with salt and pepper. Add the vinegar and then whisk in the remaining 2 tablespoons olive oil. Adjust the seasoning as desired.
  • Pour the dressing over the salad and toss gently to combine. Top with the crumbled goat cheese.

1 cup roughly chopped fresh mint leaves
1 cup cherry or grape tomatoes, halved through the stem
1/3 cup thinly sliced radishes (2 to 3 radishes)
2 cups baby arugula
1/2 cup shaved Italian Parmesan cheese
Flaked sea salt, such as Maldon

Steps:

  • Place the farro, apple cider, bay leaves, 2 teaspoons salt, and 2 cups water in a medium saucepan, bring to a boil, lower the heat, and simmer uncovered for about 30 minutes, until the farro is tender. (If all the liquid is absorbed before the farro is tender, add a little more water.) Drain the farro and transfer to a large serving bowl. Discard the bay leaves.
  • Meanwhile, in a small measuring cup, whisk together the olive oil, lemon juice, 1 teaspoon salt, and 1/2 teaspoon pepper. Stir the vinaigrette into the warm farro and set aside for at least 15 minutes to cool.
  • Before serving, stir in the pistachios, parsley, mint, tomatoes, and radishes. Add the arugula and lightly fold in the Parmesan so as not to break it up too much. Sprinkle with the sea salt and serve immediately.
