5 tablespoons olive oil
2 tablespoons minced garlic
1 lb assorted fresh mushrooms, cleaned and halved (or sliced 1/4-inch thick, if large)
1/4 cup dry white wine (or dry sherry)
1/4 cup fresh parsley (preferably the flat leaf Italian style)
salt and pepper

Steps:

  • Warm the oil in a large saute pan over medium heat. Add the garlic and saute about 2 minutes. Do not let it burn.
  • Increase the heat to high, and add the mushrooms. Saute until tender for about 5 minutes, stirring occasionally. The time may need to be adjusted according to the type of mushroom used.
  • Add the wine (or sherry) and continue to cook until the liquid is absorbed.
  • Add the parsley, salt and pepper, and stir to combine.
  • Serve while hot.

This is a classical Spanish tapa served all over Spain. Although my recipe is original, it is authentic as I have constantly revised it duplicating the flavors and consistency I have had in the best tapas bars. This can be made in any oven proof dish, I recommend a "cazuela" (terra cotta dish). Although difficult to find, it can be purchased online through "www.tienda.com".

1/3 cup olive oil
12 medium mushrooms, cleaned and quartered
6 cloves garlic, thinly sliced
1 lemon, juiced
salt
fresh ground pepper

Steps:

  • Place the mushrooms in the oven proof ceramic dish, approximately 6-8 inches in diameter and at least 1 inch high.
  • Add garlic slices and cover with oil.
  • Pour lemon juice over the mushrooms.
  • Season to taste with salt and freshly ground pepper.
  • If the dish can be used on the stove burner, heat on top of stove over medium high heat for about 6 minutes until the oil is bubbly and the mushrooms are cooked.
  • If dish can not be used directly on the burner, place under the broiler in the oven and broil until the oil is bubbly and the mushrooms are cooked (about 6 minutes after the oil starts to bubble) Serve with crispy french bread for dipping in the heated garlic oil.

One of my favorite tapas. My mom made something similar when I was growing up, but added chopped serrano chiles with the garlic. This made them spicy, but was a great complement to the richness of the mushrooms. Memories!!!

3 tablespoons butter
1 1/2 lbs mushrooms, cleaned
lemon juice
salt
fresh ground black pepper
2 teaspoons garlic, minced
1 tablespoon flat leaf parsley, minced

Steps:

  • Melt butter in a frying pan.
  • Add the mushrooms and sautee gently, covered, for 5 minutes. Shaking pan occasionally.
  • Add a few drops of lemon juice, the salt and pepper.
  • Increase heat and stir well.
  • Add the garlic and cook for 2 minutes, being careful not to let the garlic burn.
  • Add the parsley and cook 1 minute longer.
  • Remove from heat and serve immediately.

Tapas recipe from Penelope Casas' "Tapas: The Little Dishes of Spain". She recommends using wild mushrooms such as boletus or chantarelles, but she says you can use cultivated mushrooms too (either white or cremini). Leave the mushrooms whole if tiny; otherwise halve or quarter (depending on size). Times are estimated.

2 tablespoons extra virgin olive oil (a nice, fruity one)
1/2 lb wild mushroom, brushed clean (see note above)
salt, to taste
fresh ground pepper, to taste
1 garlic clove, minced
1 tablespoon minced flat leaf parsley

Steps:

  • Heat oil in a skillet until very, very hot, but not smoking. Add mushrooms and sautee over high heat for 4 minutes, sprinkling with salt and pepper as they cook. Do not overcook or allow mushrooms to begin to release liquid.
  • Toss with garlic and parsley and serve immediately.

A typical recipe found at any Tapas Bar. This is flavorful and goes perfectly with good crusty bread and a glass of wine. Be sure and have all your ingredients prepped and ready to go in the pan.

3 tablespoons extra virgin olive oil (Spanish preferred)
1/2 lb medium mushroom, stemmed, quartered
4 -6 garlic cloves, peeled and thinly sliced
2 -3 teaspoons fresh lemon juice
2 tablespoons dry sherry (DO NOT use cooking sherry!)
1/4 cup vegetable broth
1/2 teaspoon spanish paprika
1/4 teaspoon crushed red pepper flakes
salt, to taste
fresh ground black pepper, to taste
1 tablespoon fresh flat leaf parsley
2 lemon slices

Steps:

  • In a saute pan, heat the olive oil until hot but not smoking. Saute the mushrooms for about 1 minute, add the garlic and cook 1-2 minutes more being careful not to burn!
  • Add the remaining ingredients except for the parsley and lemon slices and simmer for 2 minutes.
  • Garnish with the fresh parsley. Serve with lemon slices. Scoop the mushrooms onto your bread and enjoy!
