1 cup roasted, salted peanuts
4 cups plain (not butter-flavored) prepared microwave popcorn, such as Newman's Own Natural
1 1/2 cups sugar
1 tablespoon light corn syrup
2 teaspoons pure vanilla extract
2 teaspoons kosher salt
1 teaspoon fleur de sel
Chocolate Sauce
2 pints Talenti Sea Salt Caramel Gelato
Sweetened whipped cream (See Cook's Notes)

Steps:

  • Preheat the oven to 350˚.
  • Spread the peanuts on a sheet pan and roast for 7 minutes, until they become fragrant. Pour into a medium bowl, add the popcorn and set aside. Line the sheet pan with parchment paper.
  • Place the sugar and 1/4 cup water in a medium (10-inch) sauté pan and mix with a fork until all the sugar is moistened. Cook over medium-high heat until the sugar dissolves -from this point on, don't stir the caramel, swirl the pan! (Don't worry if the mixture looks as though it's crystallizing.) Continue to cook for 5 to 10 minutes until it becomes a clear golden brown, swirling the pan constantly at the end. (Be careful, the caramel is very hot!) Off the heat, quickly add the corn syrup and vanilla (it will bubble up!) and swirl the pan to combine. Working quickly (the caramel will continue to cook in the pan), add the popcorn and nut mixture plus the kosher salt and toss with two large spoons until the popcorn and nuts are completely coated.
  • Pour the mixture plus any extra caramel in the pan onto the prepared sheet pan and spread the mixture out in one layer, pulling it apart with two forks. Sprinkle with the fleur de sel and set aside to cool. When it's completely cooled, carefully break into large clusters with your hands.
  • To serve, pour puddles of chocolate sauce into shallow bowls. For each serving, place 3 small scoops of gelato on the chocolate sauce, sprinkle with some of the caramelized popcorn and add a dollop of the sweetened whipped cream in the middle. Serve immediately.

1 cup heavy cream
2 bags chamomile tea
2 tablespoons confectioners' sugar
2 pints vanilla ice cream
Honey-Caramel Sauce
1 1/4 pounds assorted stone fruits, such as apricots, peaches, nectarines, and plums, pitted and cut into chunks (about 2 cups)
Crushed bee pollen (available at health-food stores), for serving (optional)
Unsprayed fresh chamomile flowers (available at farmers' markets), for serving (optional)

Steps:

  • Heat cream in a small pot over medium until just simmering. Remove from heat; add tea bags. Cover and let steep until fragrant, 20 minutes; remove and discard tea bags. Transfer chamomile cream to a medium bowl; let cool 15 minutes. Cover and refrigerate until cold, at least 1 hour and up to 2 days. Add sugar and whisk until stiff peaks form.
  • Divide ice cream among 4 bowls. Drizzle with caramel sauce and top with fruits. Top with whipped chamomile cream, sprinkle with bee pollen and flowers, and serve.

  • Pour the cream into the bowl of an electric mixer fitted with the whisk attachment. Add the sugar and vanilla and beat on high speed until the cream forms soft peaks.

2 tablespoons honey
1/2 cup sugar
1/2 cup heavy cream
2 tablespoons cold unsalted butter
1/4 teaspoon coarse salt
1/2 teaspoon pure vanilla extract

Steps:

  • Combine honey, 2 tablespoons water, and sugar in a medium saucepan. Heat over medium, swirling until sugar is dissolved. Bring to a boil; cook until mixture is deep golden brown, 5 to 6 minutes. Remove from heat and carefully whisk in cream, butter, salt, and vanilla (mixture will spatter); let cool completely. Sauce can be refrigerated in an airtight container up to 2 weeks; gently reheat before serving.

Any caramel sauce base can be enlivened by ripe or slightly overripe fruit, such as bananas, strawberries and stone fruit. This fruit caramel sauce is an excellent way to add a deeper sweetness and a hint of the season to your favorite desserts.

1 cup granulated sugar
4 ounces fresh or frozen fruit, peeled if necessary, such as bananas, peaches or berries, chopped into 1/4-inch pieces (3/4 cup)
1/2 teaspoon kosher salt (Diamond Crystal)
1/4 cup heavy cream

Steps:

  • Heat a large skillet over medium heat. Add the sugar and cook, stirring frequently, until it all melts into a light gold syrup, 5 to 6 minutes. Continue to cook to a golden brown color, about 1 minute more. Carefully add the fruit all at once and reduce the heat to medium-low. The hot syrup may bubble and become foamy.
  • Continue to cook, stirring constantly until any hard clumps of caramel dissolve and the fruit pieces soften and break down, about 4 minutes. Stir in the salt and heavy cream until there are no white streaks then remove from heat. Transfer to a bowl and use immediately, or cool and refrigerate in an airtight container for up to 1 week.
  • Serve warm as a topping for ice cream, pies or tarts, or use as a caramel filling for layered cake or trifles. If cold, reheat gently in a small saucepan over low heat.

  • Coarsely chop half of fruit and place in a blender along with any juices that have accumulated on cutting board. Chop remaining fruit into ½"–1" pieces (no need to chop if using cherries); set aside.
  • Add 2 Tbsp. vinegar to fruit in blender. Purée until mostly smooth. Taste and add up to 1 Tbsp. more vinegar to brighten if needed. You should have ½–¾ cup, depending on the juiciness of your fruit.
  • Pour sugar in an even layer in a medium heavy saucepan set over medium heat and cook, undisturbed, until most of the sugar is melted. Stir melted sugar gently into unmelted sugar until all of the sugar is melted. Continue to cook, without stirring, until caramel is amber in color, 7–10 minutes total. Remove from heat and immediately pour in fruit purée, stirring constantly with a heatproof rubber spatula. Don’t be alarmed if mixture seizes. Set back over medium heat; cook, stirring, until smooth, about 2 minutes.
  • Add reserved chopped fruit, increase heat to medium-high, and cook, stirring, until caramel is bubbling and thickened slightly and fruit is warmed through, 2–5 minutes, depending on fruit. Remove from heat and stir in butter, vanilla bean paste, almond extract (if using), and ¼ tsp. salt. Taste and season with more salt if needed. Let cool slightly before serving. Do ahead: Fruit caramel can be made 3 weeks ahead. Let cool. Transfer to an airtight container; cover and chill.
