BERRY CROSTINI WITH SWEET LEMON RICOTTA



Berry Crostini with Sweet Lemon Ricotta image

The best appetizers all check the same three boxes: easy, healthy, and delicious. Our Berry Crostini recipe definitely fits the bill.

2 baguettes
Extra virgin olive oil
6 oz. ricotta cheese
3-4 TBSP honey (divided)
zest and juice of 1 lemon
2 pints fresh California berries (such as: strawberries, raspberries, blackberries and blueberries)
2-3 sprigs basil
freshly ground black pepper (optional)

Steps:

  • Heat the oven to 350 degrees F.
  • Slice the baguettes in 1/4 inch rounds, brush lightly with olive oil, and place on a baking sheet. Toast the bread in the oven for 15-20 minutes, or until golden. Turn pan during baking or flip slices over if needed. Allow to cool.
  • Add ricotta, 1 TBSP honey and 2 teaspoons lemon juice to a small bowl and stir to combine.
  • Spread each crostini with some of the ricotta mixture, then top with berries and place on a serving platter. Repeat until all the crostini have cheese and berries, then scatter lemon zest and basil over the crostini, then drizzle with honey. Add a bit of freshly ground black pepper if desired.

  • Spread toast slices with cream cheese spread.
  • Top with remaining ingredients.

12 slices French bread, of your choice (1/2-inch thick, or 12 slices sweet bread, of your choice)
1/4 cup mascarpone cheese, at room temperature
2 cups fresh berries (such as raspberries or 2 cups blackberries)
1/4 cup honey, such as orange blossom, lavender, star thistle

Steps:

  • Preheat oven to 350 degrees. Place bread slices on a baking sheet and toast for 12 to 15 minutes, or until golden brown.
  • Arrange the toasts on a platter and spread about 1 teaspoon of marscarpone on each one.
  • Arrange berries on top and drizzle lightly with honey.
  • Serve immediately.
  • NOTE: An attractive alternative for a brunch or dinner party is to arrange a soft, creamy blue cheese, a strong Cheddar, and a triple-cream cheese in a basket. Place slices of toasted raisin-nut bread around the cheese. Place a pot of honey in the basket and let your guests make their own selection and combination.

Berries & Cream Crostini image

Perfect for a snack, an appetizer or even a better for you dessert!

Number Of Ingredients 8

1 french baguette, sliced in 3/4 inch slices
1/2 cup (1 stick) butter, melted
1 (7 oz) package Arla Original Cream Cheese Spread
1/2 cup powdered sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
2 cups diced fresh mixed berries
honey, for topping

Steps:

  • Heat broiler on oven. Arrange baguette slices on two large baking sheets inan even layer. Brush both sides with butter.
  • Place an oven rack about 4 inches away from the broiler.
  • Toast baguette slices until golden brown, about 2 minutes, depending on your oven. Flip crostini and toast the other side as well.
  • Let cool on baking sheets.
  • In a medium bowl, whip Arla Original Cream Cheese Spread, powdered sugar, cinnamon and vanilla extract until smooth.
  • Generously spread cream cheese mixture on top of crostinis. Top with berries and drizzle with honey. Serve immediately.
