this is a classic indian masala chai. i would venture to say half a billion people are drinking some version of this every morning. and for good reason -- it is super delicious!

Steps:
- put the water on the stove and add spices, bring to boil.
- cover and let simmer for few minutes.
- add sugar or sucanat (whole ground sugar cane--like jaggery) and milk, stir.
- bring back to just barely boiling (watch pot, milk will bubble over).
- add tea leaves, cover pot, remove from heat.
- steep for 5 minutes.
- pour through filter to remove spices and tea leaves.

- In a small saucepan, combine the first six ingredients. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. , Stir in milk. Return to a boil; boil for 1 minute, then strain. - Bring water and milk to a simmer with desired spices in a medium saucepan. Reduce heat to lowest setting and add tea. Steep until tea takes on a deep, pinky-tan colour, about 3 minutes, stirring occasionally. Strain into a cup and stir in sugar to taste.
CHAI SPICE
I hope to try this on smoked pork ribs. This spice blend offers delightful possibilities. Steep it in tea. Sprinkle it on toast or oatmeal. Fold it into softened butter and spread it on a muffin. - Gather the tea leaves, milk, water and spices, if using, to make the chai.
- Start by bringing the water to a boil over medium-high heat.
- Crush any spices that you are using for the chai.
- Reduce the heat to medium and add the tea leaves to boiling water. Let it boil for a minute.
- Add the organic whole milk and increase the heat to medium-heat. Keep a close watch on the saucepan at this time, as the milk may boil over.
- As the milk is about to boil, add the chai masala spice mix, if using. Mix it in well, with a spoon.
- Bring the tea to a boil, and reduce heat to medium-low or whichever heat point where the chai keeps dubbing and simmering but does not rise so it can overflow.
- Let it simmer for 2-3 minutes. You can let it simmer for just a minute or so, if you are in a hurry. The simmering is what concentrates all that flavor for the chai. You can simmer it for as long as even 5-10 mins. It may reduce the quantity of chai a little but it will keep it nice and hot as you wait for company.
- Turn off heat and strain the chai into tea cups. Add sugar to taste and mix well. Enjoy it hot.

- In a spice grinder or with a mortar and pestle, combine cardamom pods and peppercorns; grind until aromas are released., In a large saucepan, bring water to boil. Add cardamom mixture, honey, cinnamon sticks, cloves, star anise and ginger; simmer 5 minutes or according to taste. Remove from heat. Add tea bags; cover and steep 5 minutes., Meanwhile, in a small saucepan, heat milk. Strain tea, discarding spices and tea bags. Stir in hot milk and vanilla. Pour into mugs. - Add the whole spices to a mortar and crush them lightly into smaller pieces.
- In a small saucepan on high heat, pour in the water and add the spices. Bring the water to a boil and add the tea bags or leaves. Lower the heat to a medium to low setting and simmer for two minutes, or until the tea leaves and spices have released flavor and color. Then, pour in the milk.
- Method one - Double Boil:Bring the chai to a boil on high heat, so that it starts aerating and bubbling to the top. Remove the pot from heat until the bubbles come down. Replace the pot on the burner and bring the chai back up again to a boil and remove from heat a second time until the bubbles go back down.Method two - Pulling ChaiAlternatively, use a small cup with a handle or ladle to scoop some of the chai and "pull" it while it's simmering. Start by pouring in the chai at a low height and steadily move up higher while continuing to pour the chai back into the pot to create bubbles. Repeat a few times until the chai is bubbly.
- Continue to simmer the chai until desired consistency and color, about 5-7 minutes. Some of the liquid will have evaporated by now, so the chai will be smooth and creamy. Remove the saucepan from heat.
- Strain the chai with a sieve into glasses, mugs, or a tea pot. Mix in the sugar according to taste, and serve hot.
