CELERY ROOT, RED CABBAGE AND POTATO COLCANNON



Celery Root, Red Cabbage and Potato Colcannon image

Celery root, or celeriac, is an under-appreciated vegetable that always pleases. I love it shredded, in a creamy salad called celery remoulade, but I think cooking brings out the best in this vegetable. It develops some sweetness, as does the red cabbage, which also contributes texture to this comforting colcannon. The purée will take on a pinkish hue from the cabbage.

Number Of Ingredients 9

1 1/4 pounds potatoes, scrubbed
1 1/4 pounds celery root (celeriac) (1 large), peeled and cut into chunks
Salt to taste
1 tablespoon extra virgin olive oil
1/2 medium-size red cabbage, quartered, cored and shredded (about 4 cups shredded cabbage)
1/2 to 1 teaspoon caraway seeds, to taste
2 1/2 tablespoons unsalted butter
3/4 cup warm or hot milk
Freshly ground pepper

Steps:

  • Place potatoes and celeriac in a saucepan and cover by an inch with water. Bring to a boil, add salt to taste, reduce heat to medium-low and cover partially. Boil gently until tender, 25 to 30 minutes. Drain, return to the pot and cover pot tightly. Let steam in the dry pot for 5 minutes.
  • Meanwhile, heat olive oil over medium heat in a heavy skillet and add cabbage. Cook, stirring often, until it begins to wilt, about 5 minutes. Add caraway and salt to taste, and stir together. Cover and cook over medium-low heat, stirring often, until cabbage is very soft and fragrant, about 10 minutes. If cabbage begins to stick to the pan, add a little bit of water. Remove from heat. Taste and adjust seasoning.
  • Heat milk and butter together until butter melts. Mash potatoes and celeriac with a potato masher or in a standing mixer fitted with the paddle, or put through a food mill. Add milk and butter and mix until smooth. Stir in cabbage and caraway and mix until well blended. Season to taste with salt and pepper. Serve hot.

As does the apple cider vinaigrette, making this a great choice when watching the waist line. The longer the slaw sits, the more the flavors have time to deepen - it's really good when left in the fridge overnight, and makes great leftovers!

2 green onions, chopped

ground black pepper to taste

Steps:

  • Combine red cabbage, celery root, carrot, and green onions in a large bowl.
  • Place olive oil, apple cider vinegar, garlic, balsamic vinegar, celery seeds, salt, and black pepper in a jar. Seal and shake to mix well. Pour dressing over red cabbage mixture and toss to combine.

Smashed Red Potatoes With Cabbage image

I set out to make a traditional Irish colcannon here, a mixture of mashed potatoes with cabbage and scallions. But I decided to go with a lighter carbohydrate load, using red boiling potatoes rather than starchier Idaho potatoes. Instead of making a purée of them, after cooking the potatoes in their skins I quarter them and, skin and all, smash them in a hot pan with a potato masher or the back of a spoon.

Number Of Ingredients 8

2 pounds red potatoes, scrubbed
Salt
1 pound cabbage (1/2 medium cabbage), quartered, cored and cut in thin shreds across the grain
2 tablespoons unsalted butter or extra virgin olive oil
2 heaped tablespoons chopped scallions (about 3 scallions)
2/3 cup low-fat milk (more as needed)
Freshly ground pepper
2 tablespoons minced chives (optional)

Steps:

  • Cover the potatoes with water in a saucepan, add about 1/2 teaspoon of salt and bring to a boil. Reduce the heat to medium, cover partially and cook until tender all the way through when pierced with a knife, about 30 minutes. Do not drain the water, but using a skimmer or a slotted spoon, transfer the potatoes from the pot to a bowl. Cover tightly and allow to sit for five to 10 minutes. Then, using a towel to hold the potatoes steady (because they're still hot), cut them into quarters.
  • Meanwhile, bring the water back to a boil, add more salt if desired and add the cabbage. Cook uncovered until tender, five to six minutes. Drain.
  • Heat the butter or oil over medium heat in a large, heavy nonstick skillet, and add the scallions. Cook, stirring, until they soften, about three minutes. Add the potatoes. Smash the potatoes to a coarse mash in the pan with a potato masher or the back of your spoon. Stir in the hot milk, and mix together well until the potatoes have absorbed all the milk. Stir in the cabbage, and season generously with salt and pepper. Add the chives, stir together until heated through and serve.

This is not the traditional colcannon, a mashed potato and cabbage dish from Ireland. I have spiced it up and put my own spin on it, but it is WONDERFUL comfort food. Cheap and easy. I top it with cheese and serve as a main dish.

3 pounds potatoes, peeled and cut into chunks
¼ cup milk
2 tablespoons mayonnaise
¼ cup unsalted butter
4 slices bacon, chopped
1 onion, diced
1 clove garlic, minced
¼ teaspoon cayenne pepper
½ head cabbage, sliced into thin strips
½ cup water
salt and ground black pepper to taste
2 cups fully cooked ham, cut into bite-size pieces

Steps:

  • Place potatoes into a large pot and cover with salted water. Bring to a boil, set heat to medium-low, and simmer until tender, about 20 minutes. Drain potatoes and transfer to a large mixing bowl.
  • Stir milk, mayonnaise, and butter into potatoes. Mash with a potato masher until smooth.
  • Cook and stir bacon in a large skillet over medium heat until fat is rendered, 3 to 5 minutes.
  • Stir onion, garlic, and cayenne pepper into bacon and drippings and cook, stirring often, until onions are translucent, about 5 minutes.
  • Stir cabbage and water into onion mixture until cabbage is wilted, about 5 more minutes. Season with salt and black pepper.
  • Fold cabbage mixture into mashed potatoes.
  • Cook and stir ham pieces in the same skillet used for cabbage mixture until lightly browned, 3 to 5 minutes.
  • Stir cooked ham into mashed potato and cabbage mixture until combined.

1 lb cabbage or 1 lb kale
1 lb potato, peeled and diced (about 4 potatoes)
2 small onions or 6 green onions with tops, chopped
1/2 cup cream or 1/2 cup milk
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon mace

Steps:

  • Strip outer leaves from cabbage.
  • Shred cabbage (or kale), place in a saucepan with water to cover the bottom and bring to a boil.
  • Reduce heat and simmer until crisp-tender, about 5-10 minutes.
  • Drain well.
  • (opt.) Liquefy in blender.
  • Boil potatoes in a separate kettle, covered with water, until tender.
  • In a small saucepan cook leeks or onions and cream(or milk) about 10 minutes.
  • Mash potatoes then season with salt, pepper and mace.
  • Mix in the onions and milk.
  • Combine the potato mixture with cabbage or kale, beating it to a pale green fluff over low heat.
  • Pour into a deep warmed dish.
  • Dab with butter or margarine.
  • NOTE: Leftovers can be fried in oil until crisp and brown on both sides.
  • OPTION: Substitute ground nutmeg for mace.

This is a dish that my Scots/Irish grandmother would prepare. Easy on the budget, easy on the cook, stick to your ribs, family pleaser that uses only one very large skillet or dutch oven. It calls for whole all natural ingredients and is ridiculously off the politically correct eating charts! Not for those on a low fat, low carb, low cal, low anything diet. True comfort food! I purchase the sausages from Whole Foods. If you don't want to go to that expense, or you don't have a Whole Foods Market near you, substitute your favorite breakfast sausage. Great St Patrick's Day fare!!!

4 -6 irish banger sausages
1/2 cup butter
4 -6 yukon gold potatoes, cubed
1 large sweet onion, chopped
1 whole cabbage, shredded
1 tablespoon fresh parsley
3 -8 ounces of your favorite ale
heavy cream
salt
white pepper

Steps:

  • In large skillet or dutch oven, brown the sausages in the butter.
  • Remove sausages.
  • Add potatoes and onions to drippings in pan and stir to coat.
  • Add cabbage and parsley and mix well.
  • Place sausages on top of mixture.
  • Cover with tight fitting lid and simmer, stirring occasionally until potatoes and cabbage are soft.
  • Add ale as needed to keep colcannon moist. (yes, you can drink what you don't use for cooking!).
  • As soon as the potatoes and cabbage are soft, remove the sausages, take a deep breath and add the Heavy Cream to the mixture until it resembles mashed potatoes.
  • Add salt and white pepper to taste.
  • Replace the sausages and serve.
