CAVIAR DIP

Number Of Ingredients 9

8 ounces cream cheese, at room temperature
1/2 cup sour cream
2 teaspoons freshly squeezed lemon juice
2 tablespoons freshly minced dill, plus sprigs for garnish
1 scallion, minced (white and green parts)
1 tablespoon milk, half-and-half, or cream
1/4 teaspoon kosher salt
Freshly ground black pepper
100 grams good salmon roe

Steps:

  • In the bowl of an electric mixer fitted with a paddle attachment, cream the cream cheese until smooth. With the mixer on medium speed, add the sour cream, lemon juice, dill, scallion, milk, salt, and pepper. With a rubber spatula, fold in 3/4 of the salmon roe. Spoon the dip into a bowl and garnish with the remaining salmon roe and sprigs of fresh dill.
  • Serve with chips, toasts, or crackers.

1 (16 ounce) carton sour cream
1 1/2 teaspoons onion powder
1 teaspoon garlic powder
1/2 teaspoon salt

Steps:

  • Mix all ingredients together (You can mix it straight in the sour cream carton if you'd like).
  • Refrigerate for at least an hour (if possible) to allow time for the flavors to mix.
  • Serve with chips or crackers.

1/2 cup softened cream cheese
3/4 cup sour cream
3 ounces red caviar or 3 ounces black caviar
1 teaspoon lemon juice
1 teaspoon dried dill, crushed
2 teaspoons diced purple onions
1 large hard boiled egg
1 tablespoon chopped fresh dill

Steps:

  • Beat the cream cheese to a smooth consistency.
  • Blend in the sour cream and add the remaining ingredients, blending well.
  • Cover and chill for at least 2 hours.
  • Just before serving, garnish with the egg which has been finely chopped.
  • Suggested dippers: cocktail rye bread, toast triangles, cucumber slices, red bell pepper strips.

PURPLE CAULIFLOWER DIP

A cauliflower-based dip for crudites. Serve with carrot sticks, celery sticks, red capsicum sticks, broccoli florets, purple cauliflower florets, mushroom quarters, spring onion sticks, and/or any other firm vegetables that strike your fancy. This should work with white cauliflower if purple is unavailable (shh, don't tell the recipe source!). Adapted from: http://www.purplecauliflower.com.au. The original recipe did not call for oil, but rather suggested dry-sauteing.

1/2 lb purple cauliflower, cut into small pieces
1 teaspoon fresh rosemary
1 tablespoon extra virgin olive oil
1 garlic clove, chopped
1 teaspoon cumin
1 lemon, juice of
8 ounces cream cheese, softened and diced small
1/2 teaspoon salt, to taste
1/4 teaspoon pepper, to taste

Steps:

  • Place a medium skillet over medium high heat. When skillet is hot, add the oil.
  • Saute the purple cauliflower, garlic, rosemary and cumin until cauliflower begins to change colour. Stir frequently, to prevent sticking or burning.
  • Once the change in colour is achieved, add 50 mls (just under 1/4 c) of water. Cook further until cauliflower is cooked through and mixture is again dry. If mixture is too thick and gluggy, add 10 - 15 ml (2 - 3 tsp) of cream or milk to correct consistency.
  • Place cauliflower mixture into a food processor with the cream cheese and blend well. Add lemon juice while mixture is being blended.

1 cup sour cream
2 green onions, very thinly sliced
1 tablespoon fresh lemon juice
1 tablespoon plus 1 teaspoon chopped fresh chives
1/4 cup plus 3 tablespoons salmon caviar, drained, gently rinsed

Steps:

  • Mix sour cream, green onions, lemon juice and 1 tablespoon chives in medium bowl. Gently fold in 1/4 cup caviar. Transfer to serving bowl. (Cover and refrigerate at least 6 hours and up to 1 day.)
  • Sprinkle dip with remaining 1 teaspoon chives and 3 tablespoons caviar.

Here, the sour cream gets zipped up with scallions, chives and white pepper and the caviar - preferably bright orange beads of salmon roe - glow like jewels on top. One of the easiest hors d'oeuvres to put together, it's also one of the most festive.

1 1/2 lbs pork shoulder, bonless (cut into 1-inch cubes)
2 tablespoons brown sugar, packed
1 tablespoon tequila
1 tablespoon molasses
1/2 teaspoon salt
1/4 teaspoon pepper, to taste
2 garlic cloves, minced
1/3 cup water
1 green onion, sliced, both green and white parts

Steps:

  • Place pork cubes in single layer in 10-inch skillet.
  • Top with remaining ingredients except green onion.
  • Heat to boiling; reduce heat.
  • Simmer uncovered, stirring occasionally until the water has evaproated and the pork is slightly caramelized, about 35 minutes.
  • Sprinkle with green onion and serve with wooden picks.

2 cups oats (quick or rolled)
1 1/2 cups brown sugar
1 teaspoon baking soda

1 1/2 cups butter (melted)
12 ounces chocolate chips (semi-sweet, milk, or a mix of both)
1 (17 ounce) jar Mrs Richardson's caramel topping

Steps:

  • Mix flour, oats, brown sugar, baking soda, salt, and melted butter.
  • Press half the mixture into the bottom of a 9x13 glass pan (coated with nonstick cooking spray).
  • Bake for 17 minutes at 325 degrees.
  • Remove from the oven and cover equally with chocolate chips and caramel topping.
  • Crumble the rest of the oat mixture over the top and bake for another 17 minutes at 325 degrees.
  • Cool for at least 3 hours before cutting.
