1 large head cauliflower, broken into 1-inch florets (about 9 cups)
2 tablespoons olive oil
1 teaspoon smoked paprika
3/4 teaspoon salt
2 garlic cloves, minced
2 tablespoons minced fresh parsley

Steps:

  • Place cauliflower in a large bowl. Combine the oil, paprika and salt. Drizzle over cauliflower; toss to coat. Transfer to a 15x10x1-in. baking pan. Bake, uncovered, at 450° for 10 minutes., Stir in garlic. Bake 10-15 minutes longer or until cauliflower is tender and lightly browned, stirring occasionally. Sprinkle with parsley.

1 medium head cauliflower
1/2 teaspoon ground cumin
1/2 teaspoon paprika
Pinch of cayenne pepper
1 teaspoon olive oil
2 cloves garlic, minced
1 shallot, finely chopped
1/2 cup chopped scallions
1/2 cup finely chopped fresh cilantro
Sea salt and freshly ground black pepper
Juice of 1/2 lime

Steps:

  • Make sure the cauliflower is completely dry, then chop into large pieces; you can include the core, but discard the leaves.
  • Put the cauliflower pieces in a food processor with the cumin, paprika and cayenne; pulse everything together until it is the texture of rice. Work in batches if necessary and don't over process or it will get mushy.
  • In a large skillet, heat the oil over medium heat. Add the garlic and shallot and cook until softened, 2 to 3 minutes. Add the cauliflower mixture and cook until heated through, 3 to 5 minutes. Transfer to a serving dish and toss in the scallions and cilantro. Season with salt and pepper and add a squeeze of lime juice to help remove any bitterness from the cauliflower. Serve warm.

2 lb. (1 head) cauliflower florets
2 tbsp olive oil
1 tsp smoked (or sweet) paprika
¼ tsp ground turmeric
¼ tsp ground cumin
¼ tsp red pepper flakes
1 tbsp lemon juice
½ cup fresh cilantro
Salt and pepper, to taste

Steps:

  • Preheat the oven to 450 degrees F. Place the cauliflower florets on a baking sheet (lined with aluminum foil for easy clean-up).
  • Toss the cauliflower with the olive oil and spices (including salt and pepper) until the cauliflower is well coated.
  • Roast for 25-30 minutes, flipping the cauliflower halfway, until browned and tender.
  • After removing the cauliflower from the oven, top with lemon juice and cilantro. Season with additional salt and pepper if you like. Best served immediately.

2 tomatoes, finely chopped
½ red onion, finely chopped
1 lemon, juiced
1 tsp cider vinegar
2 tsp dried oregano
1 cauliflower, cut into florets, stalks cut into 5cm pieces
1 broccoli, cut into florets, stalks cut into 5cm pieces
3 tsp olive oil
1 tsp smoked paprika
450g halloumi, cut into 2.5cm cubes
cooked couscous, to serve (optional)

Steps:

  • Mix the tomatoes, onion, lemon juice, cider vinegar, half the dried oregano and ½ tsp black pepper together in a bowl.
  • Light the barbecue. Bring a pan of water to the boil and cook the cauliflower florets along with the stalk and broccoli stalk pieces for 3 mins. In the final minute, tip in the broccoli florets. Drain the veg, then toss with 2 tsp of the olive oil, the rest of the oregano and the paprika.
  • When the coals are ashen, arrange the veg pieces on the grill, cook for 2 mins, then move to a cooler part of the grill. Keep moving the veg around so it doesn't burn.
  • Put the halloumi on the grill and cook for 1 min, then turn. Repeat until all sides are brown.
  • Tip all the veg and the halloumi into a serving bowl, drizzle with the remaining olive oil, season and serve immediately with couscous.

2 lbs cauliflower, cut into florets
2 teaspoons lemon juice
1/3 cup olive oil
3 ounces bread (about 3 slices of coarse country bread without crusts)
1 tablespoon sweet paprika
2 cups water
salt
3 garlic cloves, coarsely chopped
2 tablespoons pine nuts, toasted
3 tablespoons Italian parsley, chopped
ground pepper

Steps:

  • Fill a bowl with water and add the cauliflower florets and lemon juice. Set aside.
  • Using a large frying pan over medium heat, warm the olive oil. Add the bread slices and fry, turning once, until golden brown on both sides. Remove from the pan, break into pieces, and place in a blender or food processor.
  • Add the paprika to the oil remaining in the pan. Over low heat, cook the paprika for 2 minutes to release the fragrance. Add the 2 cups of water and bring to a boil. Drain the cauliflower and add it to the pan. Season with salt and cook, uncovered, until the cauliflower is tender, 10 - 15 minutes.
  • Meanwhile, add the garlic, pine nuts, and parsley to the blender or food processor and pulse until well crushed. When the cauliflower is tender, add about 1/4 cup of the cauliflower cooking water, pulse once, and then transfer the mixture to the frying pan. Stir to mix and cook for 5 minutes over low heat to blend the flavors.
  • Season to taste and transfer to a serving bowl. Serve hot.

vegetable oil, to lightly coat
salt, to taste
pepper, to taste
2 tablespoons water
butter or olive oil, to taste

Steps:

  • Preheat the oven to 400*F.
  • Toss cauliflower, vegetable oil, salt and pepper together.
  • Spread in a single layer in a baking dish and add water.
  • Bake until the stems are tender when pierced with a knife and beginning to brown, about 25 minutes.
  • Remove baking dish and toss the cauliflower with butter, salt, paprika and parsley.

1 medium onion, finely chopped (about 1 cup)
1 red bell peppers or 1 green bell pepper, finely chopped (about 1 cup)
3 tablespoons olive oil
2 tablespoons paprika
1/2 cup dry sherry
1/2 cup water
5 cups mushrooms, sliced
1 pinch salt
1 large cauliflower, cut into florets
1 cup sour cream
salt and pepper, to taste

Steps:

  • In a large soup pan, saute the onions and peppers in oil for 3 minutes.
  • Stir in the paprika, sherry and water.
  • Cook on high for a minute.
  • Add the mushrooms and pinch of salt.
  • Lower the heat to medium, cover and cook for 5 minutes.
  • Mix in the florets and simmer until the cauliflower is tender but still firm- about 7 minutes.
  • Remove the pan from the heat and stir in the sour cream.
  • Add salt and pepper to taste.
  • Cover the paprikash and keep warm until ready to serve but do not allow it to simmer or it may curdle.
