1 large head cauliflower, broken into small florets
1 (10.75 ounce) can condensed cream of chicken soup
¾ cup mayonnaise
¼ cup milk
2 teaspoons curry powder
12 wheat crackers
¼ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place cauliflower in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm. Drain, and place in a greased casserole dish.
  • In a large bowl, mix together soup, mayonnaise, milk, and curry powder. Pour over cauliflower. Crush crackers, and mix with butter. Sprinkle over cauliflower.
  • Bake in preheated oven for 30 minutes.

1 head cauliflower
¼ cup light mayonnaise
¼ cup plain Greek yogurt
2 tablespoons curry powder, or more to taste

Steps:

  • Core cauliflower, leaving enough core that it remains whole.
  • Mix mayonnaise, Greek yogurt, and curry powder in a bowl.
  • Spread curry mixture over cauliflower head to cover; place in deep microwave-safe bowl and cover the bowl with a plate.
  • Cook on High in microwave until cauliflower is tender, 9 to 15 minutes; let stand covered for 2 minutes.
  • Cut in quarters and serve.

Try these veggie burgers at your next barbecue - they pack in two of your five a day and a kick of curry heat

1 small cauliflower
3 tbsp olive oil
2 tbsp medium curry powder
2 large tomatoes, finely chopped
1 red onion, finely chopped
½ bunch of coriander, finely chopped
2 tbsp mayonnaise
3 tbsp Greek yogurt
2 tbsp curry paste
4 burger buns
2 handfuls of bombay mix, (optional)

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Pull the leaves off the cauliflower and cut off the base, then slice into 2cm-thick steaks. Mix the oil with the curry powder. Lay the cauliflower steaks on a flat baking tray lined with foil. Brush each one generously with the curry oil on both sides, and sprinkle with salt before roasting for 25-30 mins until tender.
  • In a bowl, mix together the tomatoes, onion, coriander and a pinch of salt. In a second bowl mix together the mayonnaise, yogurt and curry paste.
  • Toast the buns cut-side down in a dry frying pan. Top each bun with a dollop of curried mayo, the cauliflower steak, some more curried mayo, the tomato and onion mix and some bombay mix, if you like.

1 large head cauliflower
10 1/2 ounces cream of chicken soup
1/3 cup mayonnaise
1 cup cheddar cheese, grated
1 teaspoon curry powder
1/4 cup dried breadcrumbs
2 tablespoons melted butter

Steps:

  • Break cauliflower into flowerets and cook 10-15 minutes in boiling water; drain.
  • Spray a 2-quart casserole with PAM. Transfer cauliflower to casserole.
  • Mix soup, cheese, mayonnaise and curry powder in a mixing bowl. Pour soup mixture over cauliflower. Toss bread crumbs in butter and sprinkle on top.
  • Bake at 350°F until hot and bubbly.

2 teaspoons olive oil
2 cups thinly sliced onions
2 tablespoons finely chopped peeled fresh ginger
2 tablespoons mild curry powder (stronger if you wish)
1 -2 clove garlic, smashed
10 cups cauliflower florets (about 2 medium heads)
1 cup chopped peeled seeded tomatoes
1 cup plain yogurt
1/2 cup finely chopped cilantro
1 teaspoon salt
8 lemon wedges (optional)
fresh cilantro stem (to garnish)

Steps:

  • Heat the oil in a Dutch oven over medium high heat.
  • Add onion and ginger, cover and cook 3 minutes, stirring frequently.
  • Reduce heat to medium.
  • Add curry powder and garlic, cook 30 seconds, stiring constantly.
  • Add cauliflower and next 4 ingredients (cauliflower through salt), stirring well to combine.
  • Bring to a boil, yogurt will curdle, cover reduce heat and simmer 20 minutes or until cauliflower is tender.
  • Serve with lemon wedges if desired.
