1 head cauliflower
1/4 cup butter
1 cup fresh breadcrumb
1/2 cup sour cream

Steps:

  • Remove the leaves from the cauliflower but leave the head whole.
  • Steam for about 20 minutes, until easily pierced by a wooden skewer.
  • Meanwhile, melt the butter in a pan.
  • Add the breadcrumbs and cook until golden brown. Be careful not to burn!
  • Place the cauliflower on a serving dish.
  • Spread the sour cream all over the cauliflower.
  • Sprinkle the bread crumbs evenly over the top.
  • Enjoy!

Nonstick cooking spray, for coating the parchment
1 small head cauliflower, chopped into florets (about 4 cups)
1 small clove garlic
1/2 teaspoon dried Italian seasoning
1/4 teaspoon crushed red pepper flakes, optional
2 large eggs, beaten
2 cups shredded Cheddar (about 8 ounces)
1 cup shredded Parmesan (about 5 ounces)
Kosher salt and freshly ground black pepper
Marinara sauce, for dipping

Steps:

  • Preheat the oven to 475 degrees F. Line a rimmed baking sheet with parchment and coat with cooking spray.
  • Add the cauliflower and garlic to a food processor and pulse until finely ground and the consistency of couscous. Transfer the cauliflower mixture to a large bowl. Add the Italian seasoning, red pepper flakes if using, eggs, 1 cup Cheddar, 1/2 cup Parmesan, 1/2 teaspoon salt and a few grinds of pepper and combine until the mixture holds together when squeezed.
  • Spread the cauliflower mixture into an 8-by-12-inch rectangle about a 1/4 inch thick on the prepared baking sheet. Use the straight edge of the parchment as your guide to keep the cauliflower mixture edges straight too. Bake until the crust turns golden brown all over, 18 to 20 minutes.
  • Remove the baking sheet from the oven and lay another piece of parchment on top of the crust. Fit a second rimmed baking sheet on top so the bottom of the baking sheet is touching the parchment. Using oven mitts, hold the 2 baking sheets together and flip them over so the crust is now on the parchment on the upside-down baking sheet. Remove the first parchment from the crust, cut the crust into 1 1/2-inch-thick strips (you should have 8 to 9 strips) and spread them apart a little. Sprinkle with the remaining 1 cup Cheddar and 1/2 cup Parmesan. Bake on the upside-down baking sheet until the cheese is melted and turning brown in spots and the visible crust is a deep golden brown, 8 to 10 minutes.
  • Let cool for 5 minutes, then transfer the sticks on the parchment to a serving plate and serve with the marinara sauce for dipping.

1 head cauliflower, stalk removed
1/2 cup shredded mozzarella
1/4 cup grated Parmesan
1/2 teaspoon dried oregano
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
2 eggs, lightly beaten

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Break the cauliflower into florets and pulse in a food processor until fine. Steam in a steamer basket and drain well. (I like to put it on a towel to get all the moisture out.) Let cool.
  • In a bowl, combine the cauliflower with the mozzarella, Parmesan, oregano, salt, garlic powder and eggs. Transfer to the center of the baking sheet and spread into a circle, resembling a pizza crust. Bake for 20 minutes.
  • Add desired toppings and bake an additional 10 minutes.

I absolutely love this dish. Even my father, who does not like garlic or cauliflower that much, was raving about this dish. It is essential to use fresh bread crumbs. I usually buy a baguette or country-style bread from the grocery store, and after cutting off the crust and tearing it into slices, put it in the food processor until it forms crumbs the size I want. This recipe is from the Williams Sonoma Vegetable Cookbook.

1 pinch sugar
1 large head cauliflower, about 3 lb cut into bite-sized florets
6 -8 tablespoons extra virgin olive oil
3 garlic cloves, chopped (or thinly sliced)
2 cups fresh breadcrumbs (see my note above)

Steps:

  • Bring a large saucepan 3/4 full of water to a boil. Add a pinch of salt, the sugar, and the cauliflower and boil until tender, about 5 minutes. Do not overcook.
  • Drain, rinse under running cold water, and leave to drain.
  • In a large frying pan over medium heat, warm 4-5 Tb of the oil. When the oil is hot, add the crumbs and toss them constantly until they are evenly toasted, browned, and crisp, about 5 minutes.
  • Add the garlic, turn the crumbs once or twice, and remove them from the pan. Do not allow the garlic to brown; it should be cooked only enough to flavor the crumbs.
  • Heat the remaining 2-3 Tb oil in the same pan over medium heat. Add the cauliflower and mash and break it up a bit as it lightly browns in the oil and become slightly tender, about 5 minutes. Do not allow the cauliflower to become crisp and dark.
  • Add the crispy garlic crumbs to the pan and toss them with the cauliflower over medium-low heat, mashing some of the cauliflower and allowing some of it to keep its shape, about 5 minutes.
  • Season to taste with salt and pepper and serve hot.

  • to prepare the cauliflower, take a fresh NOT FROZEN cauliflower head and cut the florets of and put them in a microwave safe bowl.
  • DO NOT ADD ANY WATER OR LIQUIDS! put in the microwave on high for 40 minutes, mixing them half the way.
  • with a potato masher, mash the cauliflower, if is still hard, cook a little longer in the microwave.
  • when completely cooked and finely mashed, measure a cup.
  • mix 1 cup of the mashed cauliflower, and the egg, for better blending, use a blender.
  • put on loaf pan with parchment paper making sure that it evenly distributed, sprinkle with oregano, and bake at 450F for 20 minutes or until golden brown.
  • if using for sandwiches, let cool down before using, if using for pizza as soon as out of the oven add your pizza toppings and bake until the cheese is melted.
  • enjoy.

I am always looking for ways to serve veggies that my family will eat or that can be made ahead of time for company. This serves both well. The recipe works for each head of cauliflower. For two heads, double the amounts of garlic, olive oil, butter, cheese, and bread crumbs. Can be made the day before and reheated.

1 head cauliflower, steamed and broken into florets
1 tablespoon olive oil
1 tablespoon butter
1 garlic clove, minced
1/4 cup breadcrumbs
1/4 cup parmesan cheese, plus
1 tablespoon parmesan cheese, divided

Steps:

  • Preheat oven to 350 degrees.
  • Arrange florets in a baking dish.
  • Heat skillet. Add oil and butter.
  • When butter is melted, add garlic and saute until garlic is tender.
  • Add bread crumbs and 1/4 cup cheese. Toss well.
  • Sprinkle bread crumb mixture over florets.
  • Top with 1 tablespoon grated cheese.
  • Cover and bake for 30 minutes.

Saw this recipe on FB and a lower carb version of garlic bread and in my search to attempt healthier eating and the struggle to get veggies into my husband decided to try it. It was pretty easy and a nice fast bread when you need to get something ready in a hurry. Certainly NOT up to your regular garlic bread it was nice and I believe healthier. However; the background flavor of cauliflower was still there and I'd cut it back to half of whats called for. If I make it again I would leave out the cauliflower completely and believer then it'd be a nice addition to dinner. but I've posted here exaclty as I found it so anyone can make the decision as the want.

3 cups riced cauliflower
6 eggs, separated
1 1/4 cups almond flour
1 tablespoon baking powder
1 teaspoon kosher salt
6 tablespoons butter, melted
5 garlic cloves, minced
1 tablespoon thyme, chopped
1 tablespoon parsley, chopped
1 tablespoon parmesan cheese, for serving

Steps:

  • Preheat oven to 350° and line a 9-x-5" loaf pan with parchment paper. In a medium bowl, microwave cauliflower for 3 to 4 minutes or until soft and tender. Let cool. When cool enough to handle, transfer cauliflower to a clean kitchen towel and squeeze to release as much moisture as possible.
  • In a medium bowl, beat egg whites until stiff peaks form. Set aside.
  • In a large bowl, whisk together almond flour, baking powder, salt, egg yolks, melted butter, garlic and about a quarter of the whipped egg whites. Beat until well combined, then stir in microwaved cauliflower. Fold in the remaining egg whites and mix until just incorporated. (Mixture should be fluffy.) Fold in the thyme and most of the parsley (save some for topping).
  • Transfer batter to the lined loaf pan and sprinkle with more herbs. Bake until the top is golden, about 45 to 50 minutes. Let cool completely before slicing.
  • Sprinkle slices with Parmesan and more parsley.
  • Cauliflower Garlic Bread.
  • TIP: be sure to prep riced cauliflower early and remove as much moisture as possible prior to mixing.

½ cup shredded Italian cheese blend
¼ cup chopped fresh parsley
1 egg
1 teaspoon chopped garlic
salt and ground black pepper to taste

Steps:

  • Place cauliflower pieces through the feeding tube of the food processor using the grating blade; pulse until all the cauliflower is shredded.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 15 minutes. Transfer cauliflower to a large bowl and refrigerate, stirring occasionally, until cooled, about 15 minutes.
  • Preheat an oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper or a silicon mat.
  • Stir Italian cheese blend, parsley, egg, garlic, salt, and pepper into cauliflower until evenly incorporated. Pour mixture onto the prepared baking sheet; press and shape into a pizza crust.

6 cups riced raw cauliflower
1 1/2 cups egg whites
1 1/2 cups nutritional yeast (health food store)
3 cups fat free mozzarella cheese
1 1/2 cups grated parmesan cheese
1 1/2 tablespoons garlic powder (or1 1/2 tablespoons basil and an Italian herb seasoning)

Steps:

  • To "rice" the califlower: I did this with my Cuisinart with a grating blade. I have read that you can use the "s" blade or hand grate with a cheese grater.
  • Preheat oven to 425 degrees. Mix all ingredients in large bowl. On parchment paper (not wax paper) lined 18" x 26" baking sheet (I recommend this instead of spraying the pan because I tried that and it stuck), press mixture flat as thin as you can get it without having holes. Sprinkle with herbs.
  • Bake for 20 minutes and carefully turn over and bake for another 10-15 minutes.
