- Use room temperature butter to grease an 8-inch souffle mold. Add the grated Parmesan and roll around the mold to cover the sides. Cover with plastic wrap and place into the freezer for 5 minutes.
- Preheat oven to 375 degrees F.
- In a small saucepan, heat the butter. Allow all of the water to cook out.
- In a separate bowl combine the flour, dry mustard, garlic powder, and kosher salt. Whisk this mixture into the melted butter. Cook for 2 minutes.
- Whisk in the hot milk and turn the heat to high. Once the mixture reaches a boil, remove from the heat.
- In a separate bowl, beat the egg yolks to a creamy consistency. Temper the yolks into the milk mixture, constantly whisking. Remove from the heat and add the cheese. Whisk until incorporated.
- In a separate bowl, using a hand mixer, whip the egg whites and cream of tartar until glossy and firm. Add 1/4 of the mixture to the base. Continue to add the whites by thirds, folding very gently.
- Pour the mixture into the souffle. Fill the souffle to 1/2-inch from the top. Place on an aluminum pie pan. Bake in the oven for 35 minutes.

- Adding the egg whites: Use a clean whisk to beat the egg whites until peaks form that just hold their shape (electric is best as it will make the job much quicker). Then take a metal spoon and gently stir the whipped whites into the white sauce in a figure of eight.
- Top-hatting: Spoon the mixture into the dish. Run a cutlery knife around the edge to create a 'top hat' effect; this ensures the soufflé rises above the rim and doesn't stick. Place on the baking sheet and bake for 25-30 mins until the top is golden and risen and has a slight wobble. Serve immediately.

- Preheat the oven to 400 degrees F (200 degrees C).
- Place the cauliflower florets in a saucepan with about 2 inches of water. Bring to a boil, and cook for about 8 minutes, or until tender. Drain, and set aside.
- Melt the butter in a small pan. Stir in the flour, and cook over low heat for 2 minutes. Gradually stir in the milk, and bring to a boil. Season with salt and pepper, and stir in most of the bread crumbs. Remove from the heat, and stir in the egg yolks, cheese, and finally cauliflower.

- Make Soufflé:
- Preheat oven to 400°F with rack in middle.
- Generously butter soufflé dish, then sprinkle with cheese, knocking out excess.
- Stir together cauliflower, parsley, 1/4 teaspoon salt, and white pepper to taste in a large bowl.
- Melt butter in a 2- to 3-quart heavy saucepan over medium heat. Whisk in flour, then cook, whisking, until pale golden, about 2 minutes. Add milk a little at a time, whisking constantly until very smooth. Bring sauce to a boil, whisking, then simmer, whisking, until quite thick, about 1 minute. Remove from heat and whisk in yolks, 1/4 teaspoon white pepper, and 1/2 teaspoon salt. Stir into cauliflower mixture.

- Cook butter in a small heavy saucepan over medium heat, stirring occasionally, until it turns golden with a nutlike fragrance and flecks on bottom of pan turn a rich caramel brown, about 6 minutes. Remove from heat.
- Serve soufflé immediately, drizzling with warm brown butter.

- Preheat the oven to 190C/170C Fan/Gas 5.
- Wash the cauliflower thoroughly and place in a large saucepan of salted water. Bring to the boil and cook for 3-5 minutes, until the cauliflower is almost tender, but still fairly firm. Tip into a colander and leave to drain.
- To make the sauce, melt the butter in a heavy-based saucepan and stir in the flour. Cook over a gentle heat for 1 minute. Remove the pan from the heat and gradually add the milk, a little at a time, stirring well between each addition. Return the pan to a medium heat and bring the mixture to the boil, stirring constantly. Simmer for 2 minutes, then remove from the heat. Stir in the mustard and two thirds of the cheese and set aside.
- Arrange the cauliflower in an ovenproof baking dish. Carefully pour over the sauce, ensuring the cauliflower is completely covered. Scatter over the remaining cheese and bake for 25-30 minutes, until the top is golden brown and bubbling.

- Cool slightly and chop fine; set aside.

RED LEICESTER CAULIFLOWER CHEESE
I don't think that Cauliflower Cheese exists as a comfort food staple outside of the UK, Australia and New Zealand, but it surely should, and why I gladly post this recipe here. I must tell you that this brilliant way of preparing the cauliflower so that it both retains bite and stops the sauce becoming watery or grainy is pinched from Nick Jones (of Soho House fame), as is his smell-reducing use of bay leaves. I most commonly make this with Red Leicester cheese, but Cheddar is more orthodox; feel free to use any combination of hard cheeses you favour. Also, if you want a truly scorched top - as I have a weakness for - do blitz the dish under the grill (broiler in the US) for a few minutes at the end. For US cup measures, use the toggle at the top of the ingredients list.

- Preheat your oven to 220ºC/200ºC Fan/gas mark 7/425ºF. Cut the cauliflower into small florets, put into a saucepan with the bay leaves and cover with cold water. Add a sprinkling of salt and bring to the boil, then drain and refresh with cold water. Let the cauliflower drain again in a colander, pluck out the bay leaves and discard. When the cauliflower is completely drained, put into an ovenproof dish in an even layer.
