HOW TO MAKE CAULIFLOWER WITH BéCHAMEL SAUCE
Cauliflower is a very healthy and tasty vegetable that doesn't take very long to cook. In this OneHowTo article, we'll explain how to make cauliflower with béchamel sauce, a dish also known as cauliflower gratin that looks and tastes delicious. A perfect recipe to make even the fussiest of small children eat their vegetables, it's also quick to prepare and serves as a delicious snack thanks to the perfect amount of good cheese.

- The first step to make cauliflower with béchamel sauce is to remove the green leaves from the cauliflower and separate the cauliflower into medium-sized florets. Wash and clean the florets and cook them in a pan of boiling water and a little salt until tender.Be careful not to overcook the florets so that they end up so soft that they crumble and dissolve in the water. Remove from the heat and drain.
- While the cauliflower is cooking, we can go prepare a rich béchamel, the most delicious part.Put a pan on the heat and add the butter, which should be at room temperature. Let the butter heat up enough to melt, but not burn.
- Gradually add the flour, and leave it to brown a little. To make sure that the flour for the béchamel doesn't burn either, the whole process should be done over low heat. Then, slowly add the hot milk, stirring constantly until everything is mixed in and there are no lumps. Add salt and pepper to taste.
- Let the béchamel cook, continuing to stir to prevent it from sticking to the bottom, until it reaches the desired consistency. In my case, I don't like it too thick. If yours becomes too thick, you can loosen the sauce by adding a little more milk. Add additional salt and pepper, if necessary, when you do this.
- Preheat the oven to 200°C (390°F). Once it is hot, place the cooked cauliflower florets in an ovenproof dish. Cover with the béchamel sauce and sprinkle over the grated cheese. BROCCOLI & CAULIFLOWER CHEESE
Cauliflower cheese gets more colourful with the addition of broccoli in this super Sunday lunch side dish

- Heat oven to 200C/180C fan/gas 6. In a very large saucepan, cook the cauliflower in boiling salted water for 5 mins. Then add the broccoli and cook for 3 mins more. Drain well and transfer to a large ovenproof dish.
- To make the cheese sauce, melt the butter in a small pan. When foaming, add flour and mustard powder, and cook for 1 min, stirring constantly. Take off the heat and add the milk, a little at a time, stirring constantly to get rid of any lumps. Once half the milk has been added, return to the heat and add the remaining milk. Keep stirring and bring to the boil, then turn down to a simmer and cook for 2 mins, until thickened and smooth. Add most of the cheese and some seasoning then take off the heat and add the chives.
- Pour the sauce over the vegetables and sprinkle with the remaining cheese. This can be done the day before and kept covered in the fridge. Cook in the oven for 35-40 mins until bubbling, allowing an extra 5-10 mins cooking time if from the fridge.

- Preheat oven to 425 degrees F (220 degrees C).
- In a medium saucepan with enough water to cover, boil cauliflower and broccoli until tender, about 10 minutes. Drain, and transfer to a medium baking dish.
- In a separate medium saucepan over low heat, melt butter, and stir in flour. Gradually whisk in milk, and increase heat to medium. As the mixture thickens, whisk in English mustard, cayenne pepper, salt and pepper. Continue whisking until a thick sauce has formed, being careful not to allow the mixture to boil. Sprinkle in 2/3 of the cheese, and stir until melted.
- Pour sauce over broccoli and cauliflower. Bake in the preheated oven 30 minutes, until bubbly and lightly brown. Sprinkle with remaining cheese during the final 10 minutes of cooking.

- Preheat oven to 350 degrees F (175 degrees C).
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower; cover and steam until tender, 5 to 7 minutes. Cool to room temperature.
- Blend cauliflower, mushrooms, and green onions in a blender under chopped, yet still chunky.
- Separate egg yolks and egg whites into 2 separate bowls. Beat egg whites in a bowl using an electric mixer until medium peaks form.
- Combine half-and-half, butter, and flour together in a saucepan over low heat; cook and stir until white sauce is thickened, about 5 minutes. Cool slightly.
- Stir white sauce, Parmesan cheese, cauliflower mixture, egg yolks, turmeric, salt, pepper, and curry powder together in a bowl; gently fold in egg whites using a spatula or wide knife. Pour egg mixture into a glass baking dish. Sprinkle paprika over egg mixture.
- Bake in the preheated oven until golden brown and set in the middle, 30 to 35 minutes.

- Cover the cauliflower in cold water, add the stock cube, then bring up to the boil. Add the broccoli and cook for 1 min, then drain (reserving some of the stock) and allow to steam-dry for 1-2 mins. (The veg shouldn't be tender.)
- Heat oven to 200C/180C fan/gas 6. Mix together the crème fraîche, mustard, wine (if using), nutmeg and some seasoning. Add the veg and mix well. Tip into an ovenproof dish, scatter with the breadcrumbs and bake for 30 mins until golden and crisp on the top.
