Creamy sauce with a mild cheese flavor baked in with ham and peas. This recipe is really easy and I have never had anyone not like it. Plus it's affordable.

4 cups peeled and sliced potatoes
2 cups diced ham
½ onion, chopped
2 cups milk
1 cup frozen peas
3 tablespoons all-purpose flour
2 tablespoons butter
½ teaspoon salt
½ teaspoon ground black pepper
⅛ teaspoon garlic powder
⅛ teaspoon onion powder
1 teaspoon dried parsley
¼ pound Cheddar cheese, diced
1 pinch paprika, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Layer half the potatoes, half the ham, and half the onion in an 2-quart baking dish; repeat the layers.
  • Heat milk, peas, flour, butter, salt, black pepper, garlic powder, and onion powder in a saucepan over medium heat, stirring constantly, until thickened, 7 to 10 minutes.
  • Stir Cheddar cheese into sauce until cheese is melted.
  • Pour sauce over potato and ham mixture; sprinkle with paprika.
  • Cover baking dish with aluminum foil.
  • Bake in the preheated oven until potatoes are tender, about 1 hour.
  • Remove foil and continue baking until lightly browned, about 15 minutes more.

I adapted this recipe from a Penzeys Spices recipe. The Penzeys recipe had the Cheese as an option but in my book the cheese is a must!

2 cups ham, cubed small
5 large potatoes, peeled and sliced (about 1/4 thick)
6 tablespoons butter
1 medium onion, chopped
1/2 cup flour
4 cups milk
1/2 teaspoon italian seasoning
1 1/2 teaspoons salt
1/4 teaspoon ground pepper
1 pinch nutmeg
1 cup cheddar cheese, grated

Steps:

  • Preheat oven to 350.
  • Cut ham into small cubes and set aside.
  • Peel and slice potatoes, put them in a bowl with enough water to cover them.
  • Heat the butter in a medium sized pan over medium heat.
  • Add the onions and cook until soft but not brown.
  • Add the flour and stir to make a roux.
  • Add the milk and stir constantly.
  • Once it comes to a gentle boil turn heat down and let the sauce cook for 2 minutes, stirring occasionaly.
  • Stir in the italian seasoning, salt, pepper, and nutmeg.
  • In a greased 2 quart baking dish put a layer of half the potatoes followed by half the ham.
  • Pour half the white sauce followed by half a cup of cheese.
  • Make another layer of potatoes and ham and pour the remaining sauce over the top.
  • Cover and bake at 350 for 50 minutes.
  • Remove from oven and top with remaining cheese and bake for another 20 minute or until the potatoes are tender.

Steps:

  • Preheat oven to 350 degrees. Butter a baking dish.
  • In a saucepan, melt 2 tablespoons butter over medium high heat. Stir in flour and cook for 1 minute. Remove saucepan from heat and whisk in milk. Return pan to heat and bring to a simmer while stirring. When sauce has thickened remove from heat, season with salt and pepper and set aside.
  • In a skillet, cook onions in melted butter until golden brown. Season with salt and pepper.
  • Spread 1/3 of the white sauce in bottom of baking dish and top with half of the potatoes. Spread out half of the onions, ham, cheese and another third of the sauce. Season with salt and pepper. 5 cups thinly sliced potatoes
2 cups thinly sliced cooked ham, cut into 3/4 to 1-inch pcs
1/2 cup diced onion, divided
1 (10 3/4 ounce) can cream of celery soup
1 (10 3/4 ounce) can Campbell's cheddar cheese soup
1 cup shredded sharp cheddar cheese, divided
1/2 cup milk (I used 2%)
1/4 teaspoon garlic powder
1/4 teaspoon white pepper

Steps:

  • In a bowl, add the canned soups, milk, garlic powder and pepper; stir to mix well.
  • In a greased 13x9-inch baking pan, add half the sliced potatoes.
  • Toss in half the onions, over the potatoes.
  • Pour half the soup mixture over the potatoes.
  • Sprinkle half of the cheese over the potatoes.
  • Place the sliced ham pieces evenly over the potatoes.
  • Add the remaining sliced potatoes, onions, soup mixture, and cheese.
  • Cover, and bake in a 375 degree oven for 1 hour.
  • After 1 hour, uncover the pan, and continue baking for 30 minutes more.
  • Note: Sometimes I'll use ham steaks that come in a 16-oz pkg., which I cut them into 3/4 to 1-inch pieces. (I used John Morrell Ham Steaks, and I used the entire pkg.). Also, I think one could add a bit more garlic powder & white pepper (possibly an 1/8 teaspoon more of each).

Here is another use for leftover ham and the other ingredients I always have on hand. I like this recipe because it has a hint of thyme in it. There are also directions here in the description if you wish to freeze it. If you want to bake it at 325 degrees instead of at 375 degrees notice my directions (you know how sometimes you want a certain oven temperature to orchestrate your menu-lol). If you want to freeze this start the recipe differently by cutting the potatoes in half and then parboiling them for 10 minutes. Drain, cover with cold water and allow potatoes to cool. Slice potatoes and assemble recipe as directed. Don't bake yet if freezing. Cover well with plastic wrap and foil. Label and freeze. Defrost in refrigerate, remove foil and plastic wrap, recover with the foil and then bake. Thank you Chef #128693 for helping me:)

¼ cup unsalted butter or coconut oil
1 yellow onion, diced
2 cups frozen broccoli florets (cut into small pieces, if the florets are large)
⅓ cup gluten-free flour blend or all-purpose flour*
3 cups dairy or unsweetened non-dairy milk
1 teaspoon fine salt
½ teaspoon dried thyme
½ teaspoon garlic powder
¼ teaspoon black pepper
6 cups (1 lb) frozen shredded potatoes (frozen hash browns)
2 cups cooked, diced ham
1½ cups shredded sharp cheddar cheese, divided
Sliced green onions, chives, or fresh parsley (for garnish)

Steps:

  • Preheat the oven to 400 degrees. Mist a 9×13-inch (or other 3-quart) baking dish with nonstick cooking spray.
  • In a Dutch oven, large pot, or extra-large skillet over medium-high heat, heat the coconut oil or butter until melted.
  • Add the onion and frozen broccoli florets and cook until the vegetables are softened and tender, 4-5 minutes.
  • Add the flour, tossing to coat the ingredients, and cook 1 minute more.
  • Reduce the heat to low and add the milk, ½ to 1 cup at a time, whisking after each addition. Be patient and whisk slowly as you continue adding the milk until all is added.   • Go ahead and prep by preheating the oven to 400 Degrees Fahrenheit & spray your glass casserole Dish with cooking Spray.
  • Dice your Onion into finely Chopped pieces and your ham into bite sized bits.
  • Using either a knife or Mandolin slice your potatoes into thin slices (I Leave the skin on, but you can peal it if you choose).
  • Mix the cream of Celery, Milk, and Seasoned salt together.
  • To start the layering process start by spreading a thin layer of the cream of celery milk mixture in the bottom of the dish, then a simple layer of Potatoes. Then add a layer of Onion, then Ham, then Cheese, and finish with a layer of cream of celery milk mixture.
  • Keep layering in that order till you are out of ingredients or the dish is full.
  • Then take your butter and chop into small bits and spread about the top of the dish and cover with Aluminum Foil.
  • Bake for an Hour and 20 minutes, then remove the foil and continue baking for the last 10 minutes, or longer depending on how much you would like it browned.
