These delectable bar cookies are made with a buttery baked crust spread with a fluffy chocolate topping laced with pecans and mini marshmallows.

Number Of Ingredients 7

1-1/4 cups (2-1/2 sticks) butter or margarine, divided
2-3/4 cups powdered sugar, divided
1-1/2 cups flour
2 pkg. (4 oz. each) BAKER'S GERMAN'S Sweet Chocolate, broken into pieces
1/2 cup cholesterol-free egg product
1 pkg. (10-1/2 oz.) JET-PUFFED Miniature Marshmallows
1 cup chopped pecans

Steps:

  • Preheat oven to 350°F. Place 3/4 cup of the butter and 3/4 cup of the sugar in small bowl of electric mixer. Beat on medium speed until light and fluffy. Add flour; mix well. Press firmly onto bottom of 13x9-inch baking pan. Bake 12 to 15 minutes or until golden brown; cool.
  • Place chocolate and remaining 1/2 cup butter in large saucepan; cook on low heat until chocolate is completely melted, stirring constantly. Remove from heat. Add egg product and remaining 2 cups powdered sugar; stir until well blended. Add marshmallows and pecans; mix well.
  • Spread over crust. Refrigerate several hours or until chilled. Cut into 36 bars to serve. Store in tightly covered container in refrigerator.

1/2-1 cup margarine
1 (12 ounce) package chocolate chips
1 (5 ounce) bag mini marshmallows
1/2 cup coconut
1 cup chopped walnuts

Steps:

  • Melt margarine and chocolate chips, combining well; cool slightly. Add nuts and marshmallows; mix well.
  • On a piece of waxed paper, place some of the coconut.
  • Shape 1/3 of chocolate mixture into log about 2-inches in diameter; roll in coconut to coat.
  • Wrap in waxed paper.
  • Repeat with remaining 2/3s for a total of 3 logs.
  • Chill overnight or place in ziploc bag and freeze.
  • When ready to use, slice about 1/2-inch thick.

1 (3 ounce) package black cherry Jell-O
1 (3 ounce) package lime Jell-O gelatin
2 (1/4 ounce) envelopes unflavored gelatin
1/2 cup cold water
2 cups milk
1 cup sugar
1 (16 ounce) container Greek yogurt or 1 (16 ounce) container sour cream

Steps:

  • Add half of the boiling apple juice to each of the Black Cherry and Lime gelatin mixes in separate bowls; stir 2 minute until completely dissolved. Pour each mixture into 9-inch square pans sprayed with cooking spray. Refrigerate 40 minute or until firm. Cut gelatin into 1/2-inch cubes. Refrigerate until ready to use.
  • Meanwhile, sprinkle unflavored gelatin over cold water; let stand 5 minute or until softened. While gelatin is softening, bring milk just to simmer in medium saucepan on medium heat. Add sugar and unflavored gelatin; cook and stir 2 minute or until sugar is dissolved. Cool 5 minute Whisk in yogurt until blended. Refrigerate 35 minute or until thickened but not set.
  • Gently fold Jello cubes into yogurt mixture and pour into a Bundt pan, which has been sprayed with cooking spray. Refrigerate 3 hours or until firm. Unmold dessert just before serving.
  • Substitute 1 container (16 oz.) Sour Cream for the yogurt. Prepare using your favorite combination of fruit juice and Jello, such as orange juice and Strawberry Jello.

2 eggs
2 cups all-purpose flour
½ teaspoon salt
8 (1 ounce) squares German sweet chocolate
½ cup butter
2 cups confectioners' sugar
2 eggs
1 (10.5 ounce) package rainbow colored miniature marshmallows
1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Mix 1 cup butter, 1 cup brown sugar and 2 eggs. Stir in 2 cups flour and 1/2 teaspoon salt. Press in ungreased 9 x 13 pan.
  • Bake for 25 minutes. Let cool.
  • Heat chocolate and 1/2 cup butter over low heat, stirring constantly until melted. Remove from heat.

4 egg yolks
1 cup butter
1 cup white sugar
1 egg
3 cups all-purpose flour
¼ teaspoon salt
¼ teaspoon orange zest
1 cup candied mixed fruit, chopped
1 cup candied cherries

Steps:

  • To hard cook the egg yolks, separate eggs, and slip the yolks into enough hot water to cover them. Cook just below the boiling point until firm, about 5 to 8 minutes.
  • In a medium bowl, cream butter and sugar until light and fluffy. Beat in the egg, mashed yolks and orange zest. Stir in the flour and salt until well blended, then stir in the candied fruit and cherries. Divide dough in half and shape into rolls 1 1/2 inches in diameter. Wrap in foil or plastic and chill for at least 2 hours.
  • Preheat oven to 300 degrees F (150 degrees C). Grease baking sheets.
  • Unwrap rolls of dough and slice into 1/4 inch slices. Place 1 inch apart on the prepared cookies sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Cookies should be set, but not browned. Remove from baking sheets to cool on wire racks.

These are super simple to make & the kids love them - I know I did when I was young. Its a lot like fudge, but you get bright colors from the mini marshmallows. Got this recipe from a coworker of my mom's. Haven't made it in years, but thought I'd share it so I don't lose it.

  • Remove from microwave & let cool a few minutes before adding marshmallows. Stir.
  • Divide onto 3 pieces of wax paper.
  • Roll up without touching the chocolate.
  • Twist ends and freeze.
  • When frozen cut into slices.
