Steps:
- Preheat oven to 350 degrees F.
- Dust a counter surface with a bit of flour. Roll pizza dough into a ball and cut ball into quarters. Roll each quarter into a 1-inch thick snake shape. Cut snakes into 5-inch pieces. Place on a cookie sheet, well spaced apart.
- Whisk together the garlic, oil and salt in a bowl. Brush the mixture onto the dough. Bake for 20 to 25 minutes or until slightly risen and golden brown.

- Make the dough: Place 1/4 cup warm water in the bowl of a mixer; sprinkle in the yeast and set aside until foamy, about 5 minutes. Add the flour, butter, sugar, fine salt and 1 1/4 cups plus 2 tablespoons warm water; mix with the paddle attachment until a slightly sticky dough forms, 5 minutes.
- Knead the dough by hand on a floured surface until very smooth and soft, 3 minutes. Roll into a 2-foot-long log; cut into 16 1 1/2-inch-long pieces. Knead each piece slightly and shape into a 7-inch-long breadstick; arrange 2 inches apart on a parchment-lined baking sheet. Cover with a cloth; let rise in a warm spot until almost doubled, about 45 minutes.
- Preheat the oven to 400 degrees. Make the topping: Brush the breadsticks with 1 1/2 tablespoons of the butter and sprinkle with 1/4 teaspoon kosher salt. Bake until lightly golden, about 15 minutes. Meanwhile, combine the remaining 1/4 teaspoon salt with the garlic powder and oregano. Brush the warm breadsticks with the remaining 1 1/2 tablespoons melted butter and sprinkle with the flavored salt.

- Pre-heat oven to 450°F.
- In small saucepan, combine tomato paste, salt, pepper, garlic powder, basil, marjoram, oregano,sage, & thyme over medium heat.
- Bring to boil, reduce heat, & simmer 30 minutes, stirring often.
- Remove from heat & let it cool.
- Unroll dough onto cutting board & cut into 8 strips.
- Place strips on lightly greased baking sheet & bake 6-8 minutes. Should start to lightly brown.
- Melt butter & mix with garlic salt.
- Remove strips from oven & brush with butter mixture. Sprinkle with parmesan & asiago cheese.

Steps:
- Combine first 3 ingredients.
- Cut dough into 24 pieces. Roll each piece into a 12-inch rope. Sprinkle evenly with Parmesan mixture.
- Place ropes, 1-inch apart, on lightly greased baking sheets. COver with plastic wrap and let rise at room temp for 20 minutes.
- Bake at 350°F for 15 minutes or until golden. Brush with melted butter, and sprinkle with kosher salt. Cool on wire rack 10 minutes.

PARMESAN AND GARLIC BREADSTICKS
These are really good and easy to prepare. They have a nice crisp crust and we loved the addition of the garlic salt on top. You can make these any size you want, from thin to larger. Just adjust the cook time. From TOH made my way. Cook time does not include the time it takes for the dough to rise. The amount of servings depends on how large you make the breadsticks.

- In a large mixing bowl, dissolve yeast in warm water and let it sit until bubbly, about 7-8 minutes.
- Add the milk, sugar, minced garlic, Italian seasoning, 3 tablespoons butter, salt, and 2 cups flour.
- Beat until smooth.
- Stir in 1/4 cup parmesan cheese and enough remaining flour to form a soft dough.
- Knead with bread hook for 7-8 minutes adding additional flour as needed.
- Turn onto a floured surface and knead about 10-15 times.
- Place in a greased bowl, turning once to grease top.
- Cover and let rise in a warm place until doubled, about 45 minutes.
- Punch the dough down and let it rest a couple of minutes.
- For thin bread sticks, divide into 36 pieces.
- (This is very versatile here. You can make them as small or as large as you want. I cut mine into 18 pieces for a larger breadstick).
- Shape each piece into a 6 inch rope.
- Place 2 inches apart on a greased baking sheet.
- Cover and let rise until doubled, about 25-35 minutes.
- Melt remaining butter and brush over the dough.
- Sprinkle with Parmesan cheese and garlic salt.
- Bake at 400 degrees for 8-10 minutes or until golden brown.
- Remove from pans to wire racks.
HOT-DIGGITY BREADSTICKS
These are so easy and they make the kitchen smell heavenly. Serve these with cocktails or dinner or as a snack. A friend gave me this recipe back in the 1970's and I still make them several times a year.

- Preheat oven to 200 degrees F.
- In a small saucepan melt butter, parsley, oregano, basil and garlic salt.
- Cover a 15x12 jelly roll pan with parchment paper or aluminum foil.
- Cut each hot dog bun in half lengthwise, than cut each half in half lengthwise, making 4 bread sticks from each bun. Lay bread sticks close together on jelly roll pan, cut side up.
- Brush all the butter mixture evenly over the bread sticks. Sprinkle with parmesan cheese.
- Bake for 2 to 2 1/2 hours or until the bread sticks are dried out and crispy. Cool.
- Store in tightly covered container.

- Preheat oven to 400°F with racks in upper and lower thirds. Lightly oil 2 large (17- by 13-inch) baking sheets.
- Stir together rosemary, thyme, 1/4 cup cheese, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a small bowl. Stir together oil, garlic, and 1/4 teaspoon each of salt and pepper in another bowl.
- Divide dough in half. Keeping half of dough covered with a kitchen towel (not terry cloth), gently roll out other half into a 15-by 10-inch rectangle on a lightly floured surface with a lightly floured rolling pin. (Use your hands to pull corners. If dough is very elastic, cover with towel and let rest about 3 minutes.)
