FISH TACOS AND AVOCADO CREMA



Fish Tacos and Avocado Crema image

These easy fish tacos cook in less then ten minutes in a quick homemade spice blend and have the most delicious avocado crema to put on top.

1 lb tilapia (or other white fish)
2 tbsp chili powder
1 tsp ground cumin
1 tsp garlic powder
1 tsp paprika
1/2 tsp black pepper
8 corn tortillas
1 cup shredded cabbage
1/2 lime, juice
1 avocado (Haas or other)
1/4 tsp cumin
1/4 tsp salt
1/2 cup plain nonfat greek yogurt

Steps:

  • Preheat your oven to 375 degrees.
  • In a small bowl mix together all of the spices to create your fish taco seasoning. Then sprinkle the fish with the seasoning. If you don't want spicy fish, use about half of the seasoning.
  • Place the fish in the oven and bake for about 10 minutes until the fish is flaky.
  • While the fish is cooking place the avocado, cumin, salt, lime juice, and yogurt in a food processor and blend until smooth and creamy.
  • Take your fish out of the oven and assemble your tacos. Start with a warm tortilla, layer on some cabbage, then the fish, and top with the avocado crema per taco.

1 cup whole buttermilk
2 tablespoons seafood seasoning, such as Old Bay
2 teaspoons chipotle powder
Kosher salt and freshly ground black pepper
1 pound skinless catfish fillets, cut into strips
1 cup fine yellow cornmeal
1 cup all-purpose flour
Canola oil, for frying
Eight 6-inch yellow corn or flour tortillas
Limes, quartered, for garnish
Fresh cilantro, for garnish
Sliced red onions, for garnish
1/4 cup mayonnaise
1/4 cup Mexican crema (or sour cream)
2 tablespoons fresh lime juice (from about 1 lime)
1/2 teaspoon paprika
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 dashes hot sauce
2 cups shredded red cabbage
2 cups shredded savoy or napa cabbage
2 tablespoons chopped fresh cilantro
4 rainbow carrots, grated
2 green onions, sliced

Steps:

  • For the catfish: Whisk together the buttermilk, 1 tablespoon of the seafood seasoning, 1 teaspoon of the chipotle and 1/2 teaspoon each salt and pepper in a medium bowl. Add the fish, cover and let soak, refrigerated, for 10 to 15 minutes.
  • For the fiesta slaw: While the fish is soaking, whisk together the mayonnaise, crema, lime juice, paprika, salt, pepper and hot sauce. Add the cabbages, cilantro, carrots and green onions and toss to coat.
  • Whisk together the cornmeal, flour and remaining 1 tablespoon seafood seasoning and 1 teaspoon chipotle in a shallow dish or paper bag. Drain the catfish, shaking off any remaining marinade (discard the remaining marinade). Place 3 to 4 pieces of fish in the cornmeal mixture and shake/flip until they are coated. Remove the fish to a clean plate or baking sheet. Repeat with the remaining fish.
  • Add about 1 inch of canola oil to a large cast-iron skillet over medium-high heat and heat to about 375 degrees F.
  • Add the fish to the skillet a few pieces at a time. Fry on each side until golden brown all over, 2 to 3 minutes. Remove to a baking sheet with a cooling rack. Repeat with the remaining fish.
  • Toast the tortillas in a cast-iron skillet or over an open flame. Add 2 pieces of fish to each tortilla and top with the fiesta slaw. Serve with lime wedges, cilantro and red onions.

Shrimp Tacos with Pickled Cabbage and Avocado Crema image

Tacos are the eighth wonder of the world-they even have their own day of the week. We love tacos al pastor and barbacoa, but most of all we love fish or shrimp tacos. They're light, balanced and endlessly customizable. Today we are making a spicy shrimp taco with avocado crema, inspired by one of our favorites from Trejo's Tacos in Los Angeles.

1/2 cup white vinegar
1/4 cup sugar
2 cups shredded green cabbage
1 jalapeno, seeds and membranes removed, diced
Kosher salt
3 tablespoons olive oil
3 chipotle peppers from a can of chipotles in adobo
3 cloves garlic
2 tablespoons tomato paste
1 tablespoon honey
Juice of 1 lime
1 pound medium shrimp, peeled and deveined (about 20 to 25 shrimp)
1/2 red onion, sliced
Kosher salt and freshly ground black pepper
2 ripe avocados, pitted and peeled
Zest and juice of 1 lime
2 tablespoons olive oil
1/4 cup cilantro leaves
4 ounces sour cream
Kosher salt and freshly ground black pepper
8 small corn tortillas
Cilantro leaves, for garnish

Steps:

  • For the pickled cabbage: Whisk together the white vinegar and sugar in a large bowl until the sugar is dissolved. Add the cabbage and jalapeno and mix to combine. Season with salt. Refrigerate until ready to serve.
  • For the shrimp: In a blender, puree 2 tablespoons of the olive oil, the adobo peppers, garlic, tomato paste, honey and lime juice until smooth. Pour into a large mixing bowl and add the shrimp, tossing to evenly coat. Preheat the broiler to high.
  • For the avocado crema: Put the avocado, lime zest and juice, olive oil, cilantro and sour cream in a blender or food processor. Season with salt and pepper and puree until smooth. Refrigerate until ready to serve.
  • Put the sliced red onion in a mixing bowl and toss with the remaining 1 tablespoon of olive oil. Season with salt and pepper.
  • Place the shrimp on a sheet pan in an even layer. Scatter the onion slices around the shrimp. Broil for 3 to 4 minutes. Remove from the oven.
  • Heat the corn tortillas on both sides on a griddle or over an open flame on your stovetop burner.
  • Assemble the tacos, layering each tortilla with the avocado crema, shrimp and pickled cabbage. Garnish with cilantro and enjoy!

1 cup chopped plum tomatoes
1/2 cup chopped peeled avocado
5 tablespoons fresh lime juice
3 tablespoons chopped green onion
3 tablespoons chopped fresh cilantro
3 teaspoons minced jalapeño chilies with seeds
1 pound catfish fillets
2 garlic cloves, minced
4 5- to 6-inch corn or flour tortillas
2 cups thinly sliced curly leaf lettuce
1/4 cup crumbled feta cheese

Steps:

  • Preheat oven to 350°F. Mix tomatoes, avocado, 2 tablespoons lime juice, onion, cilantro, and 2 teaspoons jalapeños in small bowl. Season with salt and pepper.
  • Place fish in single layer on small rimmed baking sheet. Mix garlic, 3 tablespoons lime juice, and 1 teaspoon jalapeños in another small bowl. Drizzle half of lime juice mixture over fish; reserve remainder. Sprinkle fish with salt and pepper; let stand 15 minutes.
  • Meanwhile, wrap tortillas in foil, enclosing completely. Place in oven until heated through, about 15 minutes.
  • Preheat broiler. Broil fish just until opaque in center, about 6 minutes. Cut fish into 1-inch pieces. Top each tortilla with 1/2 cup lettuce, then fish pieces. Drizzle with reserved lime juice mixture. Spoon salsa over; sprinkle with cheese.

Steps:

  • In a medium bowl, combine sour cream, mashed avocado and lime; season to taste with salt.
  • In a large skillet, heat olive oil and butter over medium high heat. Add garlic, salt, cayenne pepper and crawfish tails and cook for 2-3 minutes. Stir in cilantro and lime juice.
  • Spoon crawfish mixture evenly between warmed taco shells. Spoon Avocado Crema over top.
