BUTTERMILK PAN FRIED CATFISH

3-4 medium sized catfish filets
2 cups buttermilk
1 tsp salt
1/4 tsp black pepper
1 1/2 tsp Cajun seasoning
1 1/2 cups cornmeal
canola oil for frying

Steps:

  • Place the catfish in a glass dish or deep pan.
  • In a bowl whisk together the buttermilk, salt, pepper and Cajun seasoning.
  • Pour the buttermilk over the catfish. Cover and let rest in the fridge.
  • Place the cornmeal on a baking sheet.
  • In a large pan, add about 1 inch of canola oil and heat until the oil sizzles when you drop a sprinkle of cornmeal into it.
  • Lift out the fish filets one by one and let the excess buttermilk drip off.
  • Dredge each catfish filet in the cornmeal and then gently place it into the pan with the hot oil. You may have to do this more than once as you don't want to crowd the pan.
  • Pan fry the catfish on one side for about 3-4 minutes in the hot oil and then flip it over.
  • Cook for a further 2-3 minutes until the fish filets are firm and opaque when broken with a fork.

Steps:

  • In shallow dish, beat egg and hot pepper sauce until well mixed. In another shallow dish, stir cornmeal, paprika, pepper, salt, onion powder and seafood seasoning until blended.
  • Dip each piece of fish into egg mixture, then coat with cornmeal mixture.
  • In 12-inch nonstick skillet, heat oil over medium heat. Add fish; cook 4 to 8 minutes, turning once, until fish flakes easily with fork and is brown on both sides. Drain on paper towels. (To keep underside of fish crisp, immediately place fish on cooling rack until serving time.) Squeeze lemon juice over fish.

2 teaspoons paprika
1 teaspoon onion powder
⅓ cup extra virgin olive oil
4 (4 ounce) fillets catfish
1 cup milk
4 cloves garlic, minced

Steps:

  • In a mixing bowl, stir together cornmeal, cayenne pepper, paprika and onion powder. Mix well. Pour mixture onto a large sheet of waxed paper.
  • Heat oil in a large skillet over medium heat.
  • Pour milk into a medium bowl. Dip catfish filets into milk and hold up and let the milk drip off. Roll the milk-soaked filet in the cornmeal mixture until completely covered. Set aside.
  • Fry the garlic in the hot skillet, but do not burn. Add the coated catfish filets and cook for 5 to 7 minutes on each side, sprinkling salt on the fish after each turn. Cook until golden brown and fish flakes easily with a fork. Drain on paper towels.

1 lb catfish fillets
3 cup buttermilk
1 tbsp garlic, granulated
1 tbsp paprika
2 tsp Chili powder
2 tsp onion powder
2 tsp Salt
1 tsp Pepper
1.5 cups panko bread crumbs
2 tsp paprika
1 tsp Chili powder
1 tsp onion powder
1 tsp Salt
1 tsp Pepper
cooking oil

Steps:

  • Whisk spices for buttermilk mixture together with buttermilk.
  • Coat both sides of fillets with the buttermilk mixture. Let rest for at least 10 minutes. Can be soaked longer, just refrigerate and remove from refrigerator to counter for 10 minutes.
  • Mix spices into bread crumbs.
  • Drain one side of fillets on paper towel.
  • Coat the fillet with the panko and press down, if needed, to make panko adhere to fish.
  • Add enough oil to get a depth of approximately 1 inch deep, in heavy bottom pan. Bring oil to 350-365°F. Add fillets a few pieces at a time. Don't overcrowd the pan. Fry until golden brown (about 3-5 minutes, depending on thickness) on one side, flip and brown second side.
  • Drain on wire rack. Serve with sweet potato chips.

1 cup buttermilk
1 cup cornmeal, preferably yellow
1 cup all-purpose flour
2 teaspoons table salt
1 teaspoon ground paprika
1 teaspoon cayenne pepper

1 cup vegetable oil, for frying

Steps:

  • Gather the ingredients.
  • Preheat the oven to 200 F. Line a rimmed baking sheet with foil and place a rack in the pan.
  • Arrange the catfish in a wide, shallow bowl or pie plate. Pour the buttermilk over the fish.
  • Combine the cornmeal, flour, salt, paprika, cayenne, and garlic powder on a pie plate.
  • Take the fish out of the buttermilk and dredge the fish fillets in the flour mixture to coat thoroughly. Shake off excess flour mixture.
  • Heat up 1 inch of oil in a deep, heavy skillet or heavy Dutch oven over high heat.
  • The oil must be 350 F. Use a candy thermometer or drop a pinch of the flour mixture into the oil-if it bubbles and floats, the oil is ready. Just be mindful of maintaining the oil temperature while cooking the fish. Don't overcrowd the pan, as doing so will lower the oil temperature.
  • Carefully place 2 to 3 fillets in the pan.
  • Cook for about 5 to 6 minutes, or until golden brown. If the oil isn't deep enough to cover the fish, turn the fillets carefully after about 3 minutes.
  • Remove the fish to the rack in the baking pan and place in the oven while you cook another batch. Repeat until all of the fish fillets are cooked. Serve hot with your favorite sides.

4 (6 -6 1/2 ounce) catfish fillets
1 teaspoon salt
1/4 cup lemon juice
1 teaspoon garlic powder
1/2 teaspoon black pepper

2 tablespoons minced parsley
3/4 cup yellow cornmeal
1/4 cup all-purpose flour

Steps:

  • Place catfish into a shallow bowl or baking dish.
  • In another smaller bowl mix all of the seasonings. Season the filets with half of the seasonings. Add the lemon juice. Turn the catfish filets several times to coat evenly. Allow to stand at room temperature 15 minutes.
  • Combine the cornmeal, flour and the remaining seasoning mixture in a bowl.
  • Remove the catfish filets from the marinade and dredge in the cornmeal mixture, coating evenly.
  • Heat the oil in a large, deep skillet over medium-high heat. When the oil is hot, add the catfish and fry in batches until golden brown on both sides, turning once, 3 to 4 minutes per side.

1 tablespoon seasoned salt ((I use Lawry's brand))
¼ teaspoon pepper
¼ teaspoon garlic powder
1 cup milk
3 tablespoons vegetable oil
3 tablespoons butter
Optional garnish: lemon wedges and fresh parsley

Steps:

  • Combine cornmeal, seasoned salt, pepper, and garlic powder in a shallow dish.
  • Pour milk into a separate dish.
  • Heat oil and butter in a large skillet over medium heat.
  • Dip a catfish fillet in the milk, and shake off any excess.

3/4 cup flour

1 cup buttermilk
1 tsp salt
2 tsp Louisiana Hot Sauce
¼ tsp onion powder
¼ tsp garlic powder
1 cup all-purpose flour ((divided))
2 large eggs
½ cup cornmeal
½ cup panko breadcrumbs ((finely crushed))
2 tbsp Old Bay Seasoning
Canola, Vegetable, Grapeseed, or Sunflower oil

Steps:

  • In a large bowl, coat the catfish fillets with buttermilk, salt, onion powder, and garlic powder mixture. Cover the bowl and marinate for 15 - 30 minutes.
  • Fill a large bowl with ¾ cup of flour. Fill another large bowl with beaten eggs. Fill a large pie plate or large bowl with cornmeal, panko breadcrumbs, ¼ cup of flour, and old bay seasoning.

Crispy Pan-Fried Catfish with Hot Slaw image

Frying fish in peanut oil (like using lard for fried chicken) gives catfish the crispiest, least greasy coating imaginable.

4 catfish fillets (1 1/2 pounds total)
1 cup buttermilk
Kosher salt and freshly ground black pepper
1 cup all-purpose flour
1 cup fine white cornmeal
Pinch of cayenne, or to taste
Peanut oil, for frying
Lemon wedges
Hot Slaw (recipe follows)
1 medium head of red cabbage, cored and thinly sliced (about 16 cups)
Juice of 1 lemon
Juice of 1 lime
1 1/2 teaspoons raw cane sugar (white may be substituted)
2 teaspoons kosher salt, or more to taste
2 small serrano chile peppers, finely chopped (seeds removed if less heat is desired)
1 large red onion, cut in half and sliced lengthwise into 1/4-inch-wide slices
1 garlic clove, smashed and peeled
1 tablespoon expeller-pressed vegetable oil
4 tablespoons (1/2 stick) unsalted butter
2 bunches fresh cilantro, coarsely chopped (cup)
(serves 4 with leftovers)

Steps:

  • Cut the catfish fillets in half lengthwise, and then cut each half diagonally into 2 or 3 long pieces. Pour the buttermilk into a wide, shallow bowl and season it with 1/2 teaspoon salt and some black pepper. Marinate the catfish in the buttermilk at room temperature for 1 hour.
  • In another wide, shallow bowl, combine the flour, cornmeal, 1 teaspoon salt, the cayenne, and black pepper to taste.
  • Drain the catfish in a colander, and lay the pieces on a plate. Season them with 1/2 teaspoon salt. Pour about 1 inch of peanut oil into a deep cast-iron skillet and heat it to 350°F over medium heat. In batches, roll the catfish pieces in the flour mixture and gently lay them in the hot oil, being careful not to crowd the pan. Cook for about 4 minutes, until golden brown, and then gently flip; cook for 3 minutes or so. When the pieces are evenly crisp and golden brown, transfer them to a clean brown paper bag to drain. Repeat until all the catfish has been fried. Serve with lemon wedges and hot slaw.
  • In a medium bowl, combine the cabbage with the lemon and lime juices, sugar, salt, and serrano chile. Let marinate for at least 15 and up to 30 minutes.
  • In a large sauté pan over medium-high heat, sauté the onion and garlic in the oil for 2 to 3 minutes, until fragrant and just starting to color. Raise the heat to high, add the cabbage mixture, and toss until very hot but still crisp, 2 to 3 minutes. Remove the pan from the heat and add the butter and cilantro, tossing well to combine. Taste and season with salt if necessary. Serve hot.
