PAN SEARED TILAPIA
This Pan Seared Tilapia is a great way to cook tilapia fillets to taste really good! Trust me, you will want to double this recipe. I tested the recipe using 1 pound of fillets but my family of 2 adults and 3 kids finished 2 pounds at one go! The fish is out-of-this-world good!

Steps:
- Place fillets on a large plate then rub the salt, pepper, garlic powder, paprika, dried basil and olive oil all over them.
- In a skillet (preferably cast iron) heat 1 tablespoon of oil on high heat for about 3 minutes. Turn down the heat to medium then add two fillets to the pan. Let them cook on one side for about 4 minutes then flip to the other side and let them cook for another 3-4 minutes.
- Repeat the process with the remaining fillets and oil.
- Serve warm with some lime wedges on the side for squeezing over the fish as needed. I love to serve this fish with my Mango Avocado Salsa on the side! You could also break it up and use in tacos or serve with any side dish you like. Enjoy, friends!

5-INGREDIENT BLACKENED TILAPIA
Excellent balance of flavors and super easy. Great flavor without the smoke from high heat blackening. No need to heat a cast iron skillet to surface temps of the sun for this one. You can use your non stick pan on medium. Not a true blacken but exceptional flavor just the same. I recommend using Emerils Essence for the creole seasoning. Got this little treasure from a package insert of tilapia fillets.

Steps:
- Place fillets in milk and soak for 30 to 60 minutes in refrigerator.
- Meanwhile combine the 1/2 cup flour with the creole seasoning ( I recommend Emeril's Essence). Mix well.
- When ready, remove fish one at a time and coat with flour mixture, shaking off loose excess before cooking.
- Heat non stick pan on medium heat with 1 TBS of oil until rim of pan is hot to touch.
- Cook fillet(s) until the they flake easily, roughly about 3 minutes per side.
- Sprinkle with desired salt once on plate and enjoy.

- Preheat oven to 375 °F. Coat a large cast iron pan with a nonstick butter spray.
- Rinse fish and pat dry; place on the prepared baking sheet. Season each fillet with Silly Salt, cracked pepper, lime zest and lime juice. Add fish to the pan. Place a pat of butter on each fillet and cook in the oven for 8 to 12 minutes.
PAN-ROASTED FISH FILLETS WITH HERB BUTTER
A blast of heat in a cast-iron pan and a basting of golden butter does wonders for plain fish fillets. This life-changing method is adopted from a former chef and current fishmonger, Mark Usewicz of Mermaid's Garden in Brooklyn, who also teaches cooking classes in topics like "How to Cook Fish in a New York City Apartment." The cooking time is so short that the smell - which, if your fish is fresh and not funky, should not be overpowering - will dissipate quickly. And in the meantime, you have an easy dinner of tender fish with a toothsome crust, anointed with nutty, lemony brown butter and perfumed with herbs. You can use virtually any fish fillet, skin on or off, as long as it is not too thick. If the butter is browning too fast, reduce the heat and add a nut of cold butter to prevent scorching, or squeeze in the juice of half a lemon.

- Pat fillets dry with a paper towel. Season on both sides with salt and pepper.
- Heat a heavy 10-inch nonstick or cast-iron skillet over high heat. When the pan is hot, add the oil. Place the fillets in the pan, skin side down (if applicable), laying them down away from your body. If fillets have skin, press down gently with a spatula for about 20 seconds to prevent curling.
- Lower heat to medium and let sizzle until fish is golden and caramelized around edges, about 2 to 3 minutes. Carefully flip fillets and add butter and thyme to pan. Tilt pan slightly to let the melted butter pool at one end. Use a spoon to baste the fish with the pooled butter. Continue basting until golden all over and cooked through, 45 to 90 seconds more, depending on the thickness of your fish. Serve immediately with chopped parsley (if using) and lemon wedges.

- In a large cast-iron or other ovenproof skillet, brown fish in butter., In a small bowl, combine the egg, cheese, milk and cayenne; spoon over fish. Sprinkle with tomato, olives and pine nuts. - Wash the tilapia fillets. Soak the tilapia fillets in cold water with a splash of vinegar, wine or beer for 15 minutes. Pat dry and season with Old Bay. Coat the tilapia in olive oil. 2 Mix bread crumbs, Parmesan cheese, and parsley in a small shallow bowl. 3 Place cast iron skillet on medium-high heat. Add about 2 tbsps of olive oil, 1 tbsp of butter, and 1/8 tsp of curry powder. Heat until butter is melted and oil is hot. Make sure the mixture coats the bottom of the skillet. 4 Set oven to broil. Dip the oiled and seasoned tilapia in the bread crumb mixture. Place in heated skillet. Allow tilapia to cook for about 2 minutes or until golden brown. Use spatula or tongs to turn and allow to brown on the other side. 5 Place the skillet in the oven and broil for about 5 minutes. Watch the tilapia carefully as some ovens broil faster or slower than others.
PAN-SEARED TILAPIA
Steps:
- Rinse tilapia fillets in cold water and pat dry with paper towels. Season both sides of each fillet with salt and pepper. Place the flour in a shallow dish; gently press each fillet into the flour to coat and shake off the excess flour.
- Heat the olive oil in a skillet over medium-high heat; cook the tilapia in the hot oil until the fish flakes easily with a fork, about 4 minutes per side. Brush the melted butter onto the tilapia in the last minute before removing from the skillet. Serve immediately.
