BACON-JALAPENO-CHEDDAR CORNBREAD



Bacon-Jalapeno-Cheddar Cornbread image

Nonstick cooking spray or neutral oil, for greasing the muffin cups
6 slices bacon
1 cup all-purpose flour
1 cup yellow cornmeal
6 tablespoons sugar
2 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
1 cup buttermilk
6 tablespoons vegetable oil
1 large egg plus 1 egg yolk
1 cup grated Cheddar
1 jalapeno, seeded and very finely diced
1/2 cup bourbon
2 tablespoons honey

Steps:

  • For the cornbread: Preheat the oven to 400 degrees F. Liberally grease 12 muffin cups or mini cast-iron skillets with cooking spray or oil.
  • Put the bacon in a skillet over medium heat and cook until browned and crisp, about 7 minutes. Set the bacon aside to cool on a paper towel-lined plate, then chop finely. Reserve the grease in the skillet for the glaze.
  • In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, salt and baking soda. In a separate bowl, mix together the buttermilk, oil, whole egg and egg yolk. Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the cheese, jalapeno and reserved bacon until just incorporated.
  • Scoop the batter into the prepared muffin cups. Bake until the edges are crispy and the tops are golden brown, 12 to 15 minutes.
  • For the glaze: While the cornbread bakes, prepare the glaze. In the skillet that you cooked the bacon in, add the bourbon to the saved fat and bring to a boil (the bourbon may flame!). Add the honey and stir. Strain the glaze through a fine-mesh sieve and set aside.
  • When the cornbread is out of oven and still hot, brush the glaze on the tops of each muffin.

1 cup yellow cornmeal
1/2 cup all-purpose flour
1/2 cup cake flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt

1/2 sweet onion, diced
2 cloves garlic, minced
2 large eggs
1 1/2 cups buttermilk
6 tablespoons unsalted butter, melted and cooled slightly, plus more for the skillet if needed
1/4 cup honey
2 to 3 jalapeno peppers, seeded and diced

Steps:

  • Preheat the oven to 400 degrees F. Whisk the cornmeal, all-purpose flour, cake flour, baking powder, baking soda and salt in a large bowl; set aside.
  • Put the bacon in a 12-inch cast-iron skillet; set over medium heat and cook, stirring occasionally, until the bacon is browned and crisp, 7 to 8 minutes. Transfer to a paper towel-lined plate, leaving the fat in the skillet.
  • Add the diced onion to the hot skillet and cook, stirring, until translucent, about 4 minutes. Add the garlic and cook 1 more minute. Transfer the onion and garlic to a separate plate and set aside. Keep the skillet over low heat.
  • Whisk the eggs, buttermilk, melted butter, honey and jalapenos in another large bowl; add the onion and garlic and whisk to combine. Add the wet ingredients to the flour mixture and mix with a wooden spoon until combined (do not overmix).
  • Brush the bottom and side of the skillet with the fat left in it (add a pat or two of butter if there's not enough). Carefully add the batter (it should sizzle) and sprinkle the bacon evenly on top. Transfer the skillet to the oven and bake until the top is deep golden brown and a toothpick inserted into the center comes out clean, 20 to 25 minutes. Let cool 15 minutes before serving.

1/2 lb smoky bacon
1/2 cup diced jalapeno
1 1/2 cups shredded sharp cheddar cheese
1/4 cup vegetable oil
3 tablespoons honey
2 large eggs
1/2 cup plain Greek yogurt
1/2 cup milk
1 cup flour
3/4 cup yellow cornmeal
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda

Steps:

  • Preheat oven to 375 degrees.
  • Place a large cast iron skillet in the oven while preheating.
  • Chop/slice bacon, set aside.
  • Chop/dice jalapenos, set aside.
  • Shred cheese, set aside.
  • In a medium mixing bowl combine the vegetable oil, honey, eggs, yogurt and milk.
  • Whisk well.
  • In a large mixing bowl combine dry ingredients.
  • Whisk to combine.
  • In a medium skillet cook bacon-you want it cooked half way through, NOT crisp.
  • Using a slotted spoon remove bacon, reserve bacon fat.
  • You will want 3 tablespoons of fat. If you need to, add butter and melt it with the fat.
  • To the dry ingredients add the bacon and jalapenos.
  • Stir well to coat.
  • Add the cheese to the dry ingredients.
  • Stir well to coat.
  • Add Wet ingredients to the dry ingredients.
  • Using a large spoon or spatula and stir to just combine.
  • Remove hot skillet from oven.
  • Pour in the fat and give it a good swirl to coat the bottom of pan.
  • Scrape your cornbread mixture into hot, coated pan.
  • Return to oven and cook for 40 minutes.
  • Depending on your oven, you may want to give your cornbread the "toothpick" test at 35 minutes.
  • Do test at 40 minutes. If the center is not cooked through cook an additional 5 to 10 minutes or until done.

After some trial and error, this is by far my favorite cornbread recipe. It's spicy, moist, and the cast iron skillet gives it a lovely crispy brown crust, plus bacon! Also I love that it doesn't use buttermilk because I hate buying it just for cornbread. And it's gluten-free.

4 slices bacon
3 jalapeno peppers, minced
1 cup yellow cornmeal
1 cup skim milk
¾ cup gluten-free flour
2 tablespoons white sugar
1 tablespoon baking powder

¼ cup butter, melted
1 cup shredded pepperjack cheese, divided
5 green onions, chopped

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place bacon in a cast iron skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels, reserving bacon grease in the skillet. Spread the grease up the sides of the skillet using a paper towel.
  • Cook jalapeno peppers in the bacon grease over medium heat until lightly browned, about 5 minutes.
  • Combine cornmeal and skim milk together in a bowl; let sit until some of the liquid is absorbed, 5 to 10 minutes.
  • Whisk flour, sugar, baking powder, and salt together in a separate bowl. Mix eggs and butter into cornmeal mixture; stir into flour mixture just until batter is moist. Fold jalapeno peppers, 1/2 cup pepperjack cheese, and green onions into batter. Pour batter into the cast iron skillet; crumble bacon over top and sprinkle remaining cheese over bacon.

Steps:

  • Preheat oven to 350°F.
  • Butter 8 mini loaf pans, or large muffin tins.
  • Combine flour, cornmeal, sugar, paprika, onion powder, baking powder, baking soda, and salt in a medium bowl. Set aside.
  • In a large bowl, use a wire whisk to combine buttermilk, egg and melted butter.
  • Stir in the flour mixture until just combined.
  • Fold in the bacon. and 1/2 cup cheese. and the (OPTIONAL) minced pickled jalapenos.
  • Pour about 1/2 cup batter into each of the buttered loaf tins.
  • Bake for 8 minutes.
  • Sprinkle the rest of the cheese evenly over the tops of the loaves. Bake just until a toothpick inserted in the center of the loaves comes out clean (about 8-10 minutes more.).
  • Cool for 10 minutes. Loosen edges and turn out onto a wire rack. Serve warm, or at room temperature.
  • NOTE: My little loaf pan has eight openings (3.7" x 2.4" each).

1 (8 ounce) package shredded sharp Cheddar cheese

Steps:

  • Fry bacon in a large cast-iron skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon to a paper towel-lined plate; reserve remaining bacon grease in skillet. Crumble bacon.
  • Preheat oven to 350 degrees F (175 degrees C). Place skillet with bacon grease in oven.
  • Combine flour, cornmeal, sugar, baking powder, and salt in a large bowl. Whisk milk, buttermilk, butter, and eggs in another bowl; stir milk mixture into flour mixture until just combined. Batter will be slightly lumpy. Fold in Cheddar cheese and jalapeno peppers. Allow batter to rest at room temperature for 10 minutes.
  • Pour batter into hot skillet and sprinkle with crumbled bacon, gently pressing bacon into batter.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Cool in the pan for 10 minutes before slicing.

1 cup mayonnaise
1 (4 ounce) can diced green chilies (drained)
1 (4 ounce) can diced jalapeno peppers (drained)
1 cup grated parmesan cheese

Steps:

  • Stir together cream cheese and mayonnaise in a large bowl until smooth. Stir in green chiles and 1/2 of the jalapeno pepper can, 2 ounces.
  • Pour mixture into an oven safe serving dish.
  • Sprinkle with Parmesan cheese.
  • Bake at 350 degrees for about 30 minutes or until thoroughly heated.

I've always loved those bacon wrapped jalapenos that people make at BBQ's but I could never eat them without either burning my mouth from the molten cream cheese filling or squirting it out all over myself. Not to mention how difficult it is to try and figure out how to roast a whole jalapeno on the BBQ without the filling leaking out. So, I came up with this variation and it has been the first thing gone at every party since!!

12 jalapenos
1 (8 ounce) package softened cream cheese
1 lb thick cut bacon
1 large shallot, diced (you can substitute the white parts of green onions or regular onion as well)
4 ounces shredded cheese (I use jack, colby jack, or the mexican blend)

Steps:

  • Preheat the oven to 350 degrees.
  • Cut off the fattiest parts of the bacon and discard. (This is why you need a whole pound. You can leave the fat in but I find it's far more yummy if you just put in the meaty parts.) Dice up the meaty part of the bacon and cook just until chewy, removing the bacon and setting on a paper towel to drain.
  • Remove all but about a tablespoon of the bacon fat from the pan and add in diced shallot, cooking until tender.
  • Put softened cream cheese, shallot, shredded cheese and bacon into a bowl and combine. You may not need to use all of the bacon but I like mine with LOTS : ).
  • Cut the 12 jalapenos in half long ways and use a metal teaspoon to scrape out and discard the membrane and seeds. (If you really like heat you can leave some of the membrane but the seeds get tough and chewy so they need to come out.).
  • Fill each of the jalapeno halves with the cream cheese mixture and arrange them on a large foil lined baking tray (something with sides.).
  • Place tray in the oven and cook for 15-30mins. Cooking time varies depending on the size of the jalapenos and your oven. If you are within nose-shot of the oven you'll know when they're done. Just keep checking. You want the jalapenos to be cooked but firm.
