Steps:

  • Heat oven to 400°F.
  • Brown meat in skillet; drain.
  • Combine potatoes and 1/2 cup cheese; spoon into 13x9-inch baking dish sprayed with cooking spray.
  • Top with layers of meat, vegetables and salsa; cover.

1 lb. lean ground beef
3 cups frozen broccoli florets, thawed, drained
2 tomatoes, chopped
3 cups french-fried onions, divided
1 can (10-3/4 oz.) condensed cream of celery soup
1/3 cup milk
1/2 tsp. garlic powder
1-1/2 cups KRAFT Shredded Sharp Cheddar Cheese, divided

Steps:

  • Heat oven to 400ºF.
  • Arrange TATER TOTS in single layer in 13x9-inch baking dish sprayed with cooking spray. Bake 10 min.
  • Meanwhile, brown meat in large skilled sprayed with cooking spray; drain. Return meat to skillet. Remove from heat. Add broccoli, tomatoes and 1-1/2 cups onions; mix well.
  • Whisk soup, milk and garlic powder in medium bowl until blended. Stir in 1 cup cheese. Add to meat mixture; mix well. Cook 1 to 2 min. or until cheese is melted, stirring constantly. Spoon over TATER TOTS. Sprinkle with remaining cheese and onions.
  • Bake 20 min. or until heated through.

1 tablespoon extra-virgin olive oil, plus more for the baking dish
Kosher salt
3 cups wide egg noodles (about 5 ounces)
1 1/2 cups sour cream
1/2 cup freshly grated Parmesan
12 ounces ground beef
1 red bell pepper, seeded and chopped
1 bunch scallions (white and green parts), finely chopped
1 tablespoon tomato paste
1 teaspoon Italian seasoning
One 14 1/2-ounce can petite diced tomatoes
2 cups grated Cheddar

Steps:

  • Preheat the oven to 425 degrees F. Oil a 2-quart baking dish.
  • Bring a large pot of salted water to a boil. Add the noodles and cook to al dente according to the package directions. Drain and put in the prepared baking dish. Toss with the sour cream, Parmesan and 1/4 teaspoon salt.
  • Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, stirring, until no longer pink, about 4 minutes. Add the bell peppers and scallions and cook until crisp-tender, about 3 minutes. Make a space in the pan, add the tomato paste and toast for a minute. Sprinkle with the Italian seasoning and 1/4 teaspoon salt. Add the diced tomatoes, stir and bring to a simmer. Cook until slightly thickened, about 2 minutes.
  • Pour the beef mixture over the noodles and sprinkle with the grated Cheddar. Bake on the middle rack until the cheese is melted and the edges are bubbling, 15 to 20 minutes. Let stand for 10 minutes before serving.

A spicy Tex-Mex casserole mimicking the flavor of chili rellenos, but requiring a lot less time and trouble.

1 pound ground beef
2 teaspoons taco seasoning
4 poblano chilies (broiled with charred skin peeled off and seeded or 8 ounces whole or chopped green chilies)
1 cup heavy cream
6 ounce tomato paste
1 packet cilantro-tomato seasoning SAZON (optional)
6 eggs (large)
2 cups pepper jack cheese (shredded)
1 cup Cheddar cheese or Monterrey Jack (shredded)

Steps:

  • Brown ground beef sprinkled with a pinch of salt and pepper, and drain off any excess fat. Stir in taco seasoning.
  • Broil fresh poblano chilies just until skin is charred. Place in a paper bag or covered bowl to steam for about 10 minutes. Carefully peel away blackened skin. Split open and remove seeds. OR, use canned whole green chilies and split lengthwise so you can open them up flat. You can also use chopped green chilies.
  • Whisk together heavy cream, tomato paste, Sazon seasoning, and eggs in a medium bowl.
  • In a 9-inch square dish or pan, layer half the ground beef, then half the green chilis, then 1 cup of pepper jack cheese.
  • Make a second layer using the remaining beef, chilies, and 1 cup of pepper jack cheese.
  • Pour cream mixture over the layers. Sprinkle Cheddar cheese on top.
  • Bake at 350 degrees F for 35-40 minutes or until pie is set and a knife comes out clean.
  • Allow to set for at least 5 minutes before serving.

This is a fun little casserole. It is easy/peasy to assemble, and you probably have all the elements you need in your pantry, and fridge/freezer. So, you ready... Let's get into the kitchen.

PLAN/PURCHASE
1 Tbsp grapeseed oil
1 Tbsp sweet butter, unsalted
1/2 large yellow onion, chopped
2 clove garlic, minced
1 lb chuck roast, medium grind
2 Tbsp ketchup
1 Tbsp sour cream
2 Tbsp yellow mustard
1 tsp salt, kosher variety
1/2 tsp ground cumin
1/2 tsp white pepper, freshly ground
3/4 c cheddar cheese, freshly grated
4 slice provolone cheese
1 1/2 c dried bread cubes

Steps:

  • 1. PREP/PREPARE
  • 2. I ground my roast to what is called a "chili" grind. Most packages of ground beef are of a finer grind, but I like mine a bit coarser. The actual type of grind you choose does not impact this recipe. So, if you want, just go out and pick up a pound of ground chuck.
  • 3. For my bread cubes, I just cut up some fresh bread, and dried them in a warm oven for about an hour.
  • 4. For this recipe I used an 8-inch (20cm) square baking dish.
  • 5. Gather your ingredients (mise en place).
  • 6. Place a rack in the bottom position, and preheat the oven to 400f (205c).
  • 7. Add the butter and oil to a skillet over medium heat.
  • 8. When the foaming subsides, add the onions, and cook until they begin to soften, about 2 - 3 minutes.
  • 9. Add the garlic, and cook for about 60 seconds.
  • 10. Add the ground beef, salt, pepper, cumin, sour cream, yellow mustard, and ketchup.
  • 11. Stir and cook until the meat is just brown, about 5 - 7 minutes.
  • 12. Take off heat, and allow to cool for about 10 - 15 minutes.
  • 13. Add the bread cubes to a baking dish.
  • 14. Stir in the cheddar cheese to the beef mixture, and place on top of the bread cubes.
  • 15. Add the provolone on the top.
  • 16. Place into the preheated oven, and bake until the casserole is heated through, and the cheese is nice and melty, about 20 - 22 minutes.
  • 17. PLATE/PRESENT
  • 18. Serve while nice and warm with a small salad. Enjoy.
  • 19. Keep the faith, and keep cooking.

1 teaspoon olive oil
1 medium onion, chopped
1 large zucchini, chopped
2 garlic cloves, minced
1/4 teaspoon red pepper flakes
3/4 pound lean ground beef (7% fat or less)
4 cups cooked whole wheat penne (about 2 1/4 cups dry)
2 cups low fat marinara sauce (2g fat or less)
1 cup shredded part-skim mozzarella cheese, divided
2 tablespoons chopped fresh basil

Steps:

  • Preheat the oven to 375 degrees F. Spray a 2-quart casserole dish with nonstick spray. In a large skillet, heat the oil over medium heat. Add the onion, zucchini, garlic and red pepper flakes-- cook, stirring, until the vegetables are softened-- about 5 minutes. Remove the vegetables to a bowl and set aside. Add the beef to the pan and cook, breaking it apart with a spatula, until browned- 8 to 10 minutes. Drain off any accumulated oil and discard. Add the cooked vegetables, penne and sauce to the pan and mix to combine. Spoon the pasta mixture into the prepared casserole dish. Sprinkle with cheese. Bake until the cheese is melted and the filling is hot and bubbly- 20 to 25 minutes. Sprinkle fresh basil on top and serve.

1 1/2 cups milk

Steps:

  • Heat oven to 375°F. Spray rectangular baking dish, 13x9x2 inches, with cooking spray. Cook beef in 10-inch skillet over medium-high heat 5 to 7 minutes, stirring occasionally, until brown; drain. Stir in pasta sauce.
  • Mix cream cheese, sour cream, 1/2 cup of the Parmesan cheese and 1/4 teaspoon of the Italian seasoning in small bowl until smooth and creamy.
  • Spoon half of the beef mixture (about 2 cups) into baking dish. Drop spoonfuls of cream cheese mixture evenly onto beef mixture. Spoon remaining beef mixture over cream cheese mixture.
  • Stir 1 cup of the Parmesan cheese, the Bisquick mix and milk in medium bowl until blended. Pour over beef mixture.

16 ounces penne pasta, cooked according to package directions and drained
2 tablespoons olive oil, optional
1 pound lean ground beef (I used 93% lean)
1 medium sweet Vidalia onion, diced small
1 medium/large red bell pepper, diced small
3 to 5 cloves garlic, finely minced or pressed
1 teaspoon ground oregano
1 teaspoon salt
1 teaspoon freshly ground black pepper
one 26-ounce jar marinara or pasta sauce
3 cups shredded mozzarella cheese, divided
fresh basil or parsley, optional for garnishing

Steps:

  • Preheat oven to 375F and spray a 9×13-inch casserole dish with cooking spray; set aside.
  • Cook pasta according to package directions and drain.
  • While the pasta is cooking, to a large Dutch oven, optionally add the olive oil (my beef was very lean and the oil was necessary), beef, onion, red pepper, and cook over medium-high heat until beef is cooked through and vegetables have softened; stir frequently and crumble the beef while it cooks; do not drain.
  • Add the garlic, oregano, salt, pepper, and stir to combine. Cook for about 1 minute, or until garlic is fragrant.
  • Add the cooked pasta to the beef mixture, add the marinara, and stir to combine and coat evenly.
  • Add 1 1/2 cups cheese and stir to combine until the cheese has melted.
  • Turn mixture out into the prepared baking dish and evenly sprinkle the remaining 1 1/2 cups cheese over the top.

This Ground Beef Casserole Recipe is super easy to make with pasta noodles smothered in a rich and creamy tomato sauce and topped with cheese. The ingredients are simple but the flavor is big!

1 ½ lb. ground beef (85% lean)
1 small yellow onion (diced)
3 cloves garlic (minced)
1 teaspoon kosher salt
2 teaspoons Italian seasoning
1 Tablespoon Worcestershire Sauce
3 Tablespoons flour (optional-helps thicken the sauce)
1 cup chicken broth
16 oz. tomato sauce
1 (14.5) oz can Diced tomatoes (undrained)
½ cup sour cream
2 ½ cups shredded cheddar cheese---1 cup in sauce (1.5 for top)
½ pound Ziti Rigati (see notes)

Steps:

  • Note: A deep, a 12 to 14-inch pot is the perfect size for this recipe, preferably oven-safe.
  • Pre-work: Preheat oven to 400 degrees. Shred the cheese and set it aside along with the sour cream. We don't want those to be cold when we add them to the sauce.
  • Cook and crumble the ground beef over medium heat. Add the onions halfway through and cook until softened.
  • Drain grease. Add the garlic and cook for 1 minute.
  • Add salt, Italian seasoning, Worcestershire sauce, and flour. Stir to combine and cook for 2-3 minutes to remove raw flour taste.
  • Add the chicken broth and use a silicone spatula to "clean" the bottom of the pot.
  • Add the tomato sauce and undrained diced tomatoes.
  • Bring to a boil, then reduce to a simmer. Let it bubble gently to thicken and reduce while you start to boil the water for the pasta.
  • Cook the pasta until al dente (refer to package instructions), and drain. Don't overcook.
  • Remove the sauce from the heat and let the base cool down a bit. Swirl in the sour cream and 1 cup (not all) of the shredded cheese, stir to combine. Stir in the pasta.
  • If your dish is not oven-safe, transfer to a lightly greased 9 x 13 inch casserole dish and top with remaining 1 ½ cups of cheese.
  • Bake uncovered for 10 minutes, until the cheese is melted. Let it sit for 5 minutes and serve with a side of cheesy garlic bread.

1 (15 ounce) can tomato sauce

1 cup low fat cottage cheese
6 green onions, including some of the green part, sliced

My family really liked this recipe. I thought this was so easy to make. When I made this recipe I only used 15oz of tomato sauce. I also used 3/4 of a regular onion. I also used 1 1/2 cup egg noodles but I think 2 2/2 cups would be better. I got the recipe from Parish Pickens from Lakeshore United Methodist.

8 ounces egg noodles
1 lb ground beef
salt
pepper
16 ounces tomato sauce (2 small cans)
1 garlic clove, crushed
1 tablespoon sugar
8 ounces sour cream
8 ounces Philadelphia Cream Cheese
6 green onions, chopped (all the way to the end)
1 cup cheddar cheese, grated

Steps:

  • Brown ground beef. Add salt, pepper, tomato sauce, garlic, sugar and mix.
  • Simmer 3 minutes.
  • Cook noodles.
  • In a bowl, put sour cream, cream cheese & green onions and mix.
  • In a large casserole put a layer of noodles, half the cream mixture & half the meat sauce.
  • Repeat.
  • Sprinkle cheese over top.
  • Bake at 350 for 30 minutes.

Ground beef and pasta casserole with a mellow flavor from a combination of tomato and mushroom soup.

4 cups large pasta
2 tablespoons olive oil
3 - 4 cloves garlic (crushed)
1 1/2 cups chopped onion
1 cup chopped celery
1 cup sliced mushrooms
1/2 cup chopped green pepper
1 1/2 pounds ground beef
1 can (10 oz. tomato soup)
1 can (10 oz. cream of mushroom soup)
1 can (7 1/2 oz. tomato sauce)
Salt and pepper
2 1/2 cups grated cheddar cheese

Steps:

  • Cook pasta according to package directions. Drain and put in a large casserole dish.
  • Heat oil in a large frying pan. Add garlic, onion, celery, mushrooms, and green pepper. Cook and stir until vegetables are soft. Remove from heat and add to casserole dish.
  • Add ground beef to the frying pan and cook and stir until browned. (If you have a large enough frying pan you can cook the vegetables and ground beef together.) Drain fat and add ground beef to the casserole dish.
  • Add soups and tomato sauce to the casserole dish. Season with salt and pepper.
  • Add 1 1/2 cups of the cheese to the casserole. Mix all together to blend.
  • Top with the remaining 1 cup of cheese. Cover and bake at 350 degrees F. for 30 to 40 minutes. Remove cover for the last few minutes to melt the cheese if necessary. Makes 8 servings.

2 medium (2-1/2" dia)s onions, chopped
1 (28 ounce) can diced tomatoes with herbs, undrained
2 cups elbow macaroni
1 cup frozen corn
1 green bell pepper, chopped
2 tablespoons minced garlic
1 tablespoon soy sauce
1 tablespoon chili powder
1 teaspoon Italian seasoning
1 pinch ground black pepper to taste
2 cups shredded Mexican cheese blend

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Generously grease an 8-cup baking dish. Place baking dish on a cookie sheet.
  • Heat a large saucepan over medium-high heat. Cook and stir beef and onions until beef is browned and crumbly, 5 to 7 minutes. Drain off fat.
  • Drain liquid from canned tomatoes into a 4-cup measuring cup, adding water if needed, to make 2 1/2 cups of liquid. Add juice, tomatoes, macaroni, corn, bell pepper, garlic, soy sauce, chili powder, Italian seasoning, and pepper to the beef mixture; bring to a boil.
  • Pour 1/2 of the beef mixture into the prepared baking dish. Sprinkle with 1 cup of Mexican cheese, add remainder of beef mixture, and sprinkle with remaining cheese.
  • Bake, covered, in the preheated oven for 30 minutes. Remove cover and bake for another 15 minutes. Remove from the oven and let sit for 10 minutes before serving.
