Number Of Ingredients 10

Nonstick cooking spray
1 cup chopped roasted unsalted cashews
1 1/2 cups crispy brown-rice cereal
3/4 cup old-fashioned rolled oats
2/3 cup chopped pitted dates
2/3 cup sweetened flaked coconut

  • Then, add the pitted medjool dates to the food processor and blend for 3 to 4 minutes on high until the dates become pureed and your dough is formed. You may need to stop the food processor a couple of times to scrape down the sides of the food processor with a spatula.

  • Once the dates and cashews are combined, add cocoa powder and salt and blend until combined. If your dates aren’t soft enough, you may need to add a teaspoon or two of water in order to get a sticky dough.
  • Finally, add in shredded coconut and blend one more time. You can either leave your coconut more whole or fully pulverize into the rest of the bars.

  • Place the pitted dates in the bowl of a large food processor. Note: If your whole dates are hard or on the drier side, place them in a bowl, pour hot boiling water on top of them, and allow sit for 10 minutes before draining and using. Pulse in food processor until a thick paste forms.
  • Add ½ cup whole cashews, ⅓ cup shredded unsweetened coconut, ¼ cup raisins, orange zest, and salt. Pulse mixture continuously until it forms large clumps and just starts to come together, this will take about 30 seconds or so. Transfer mixture to a medium mixing bowl. It will be thick and sticky.
  • Add the remaining ⅓ chopped cashews, ¼ cup unsweetened shredded coconut, sesame seeds, and chia seeds. Mix and press together with clean hands until all of the ingredients are incorporated evenly. The 'dough' will still be slightly tacky, but it will firm and dry slightly as it chills in the fridge.
  • Transfer dough to a parchment lined loaf pan (9 x 5 inches wide) and press into an even layer until it reaches all sides. Use the bottom of a measuring cup (or flat glass) to press and flatten the surface evenly.

  • Preheat oven to 300°F (149°C). Line an 8 or 9-inch square baking pan with parchment paper with enough overhang on the sides to easily remove the bars from the pan. Set aside.
  • Using a rubber spatula or wooden spoon, mix the honey, almond meal, salt, and almond butter together until combined. Fold in the cashews, chopped dates, coconut, and chia seeds until combined.
  • Transfer mixture to prepared baking pan and press very firmly into an even layer. You really want it packed in tight- as tight as possible. Bake for 20 minutes. Remove from the oven and allow to cool completely in the pan set on a wire rack for 1 hour, then transfer to the refrigerator to chill for 1 more hour. This helps firm up the bars which makes them stay compact. Remove bars from the pan using the overhang on the sides and cut into bars. Individually wrap each bar in plastic wrap or parchment. Store at room temperature for 1 week or in the refrigerator for up to 2 weeks. I find they get a little sticky at room temperature over a few days, so I prefer the refrigerator.
