1 (15 ounce) can black beans, drained and rinsed
salt and pepper to taste
½ head cabbage, chopped
1 (10 ounce) package romaine lettuce, torn
½ green bell pepper, chopped
1 (8.75 ounce) can corn, drained
¼ cup shredded Cheddar cheese
2 cooked skinless, boneless chicken breast halves, cut into strips
1 cup finely crushed blue tortilla chips
½ cup prepared Ranch salad dressing

Steps:

  • In a small saucepan over medium heat, cook the black beans until heated through. Season with salt and pepper.
  • In a large bowl, toss together the cabbage, romaine lettuce, green bell pepper, corn, and Cheddar cheese.
  • Transfer the tossed salad to serving bowls, and top with the warmed black beans, chicken, tortilla chips, and Ranch dressing.

3 boneless skinless chicken breasts
1 tablespoon olive oil
1 tablespoon fajita seasoning mix or 1 tablespoon taco seasoning
4 1/2 cups lettuce, assorted, torn
2 tomatoes, cut in wedges
1/2 cucumber, peeled and slices
4 green onions, chopped
1 avocado, diced
1 cup corn, thawed
1 cup black beans
1/4 cup cilantro, chopped
cilantro salad dressing (purchased or use recipe 30146 "Cilantro Dressing for Salads" by Bergy)

Steps:

  • Rub chicken with olive oil and fajita seasoning. Grill over lot heat until done. Set aside and keep warm.
  • While the chicken is grilling, prepare and combine the remaining salad ingredients, except the dressing.
  • Slice chicken 1/4" thick, against the grain, and add to salad. Toss with dressing to taste.
  • Serve immediately.

2 large chicken breasts
1/2 medium onion, diced
2 cloves garlic, cracked
1/3 cup olive oil
1/2 teaspoon dried oregano
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
1 juice of 1 lime (about 2 Tablespoons)
1 Chipotle pepper in Adobo, diced
1/2 teaspoon Adobo sauce (or more to taste)
1/2 cup fresh cilantro, loosely packed
2 heads romaine lettuce, chopped
1 cup black beans, rinsed and drained
3 ears fresh corn on the cob, grilled and kernels removed
2 fresh jalapenos, grilled ((seeded, deveined and sliced))
1 large tomato, diced
1 avocado, sliced
1/2 cup fresh cilantro for topping

Steps:

  • In a food processor or blender add the onion, garlic, oregano, cumin, chipotle pepper, adobo sauce, smoked paprika, lime juice, fresh cilantro, salt, and pepper. Pulse a few times to liquefy. Pound chicken breasts to an even thickness. Place the chicken in a large zip-top plastic bag, pour the marinade over the chicken and massage a few times to distribute the marinade evenly over the chicken. Refrigerate for at least 8 hours to overnight.
  • Remove the chicken from the refrigerator and allow to sit at room temperature for 15-30 minutes before grilling. Preheat the grill to 400ºF.Grill the chicken without turning for 5-7 minutes per side (this will depend on the thickness of your chicken breasts), or until a thermometer reads 165ºF degrees in the thickest part. Remove from the grill and let rest for at least 10 minutes before slicing.Grill the corn and jalapenos for 15-20 minutes, turning frequently, until lightly charred.
  • Place the chopped lettuce on the bottom of a large platter or salad bowl. Top with the black beans, grilled corn, grilled jalapenos, tomatoes, avocado, cilantro, and sliced grilled chicken.

My obsession started because I added a chopped avocado to my McDonalds purchased salad and it was heaven. I got this from recipelink.com, the avocado is optional since it's not in MD's salad but sooo recomended. The dressing that the salad comes with is Paul Newman's Natural Southwest dressing, so sub that if you find it at the store if you don't want to make it from scratch.

6 - 8 chicken tenderloins
2 ripe avocados
1 medium ripe tomato (diced)
2 tsp garlic powder
4 tsp salt (divided)
4 tbsp sour cream
2 tbsp lime juice
2 bell peppers (red, orange, or yellow)
1/3 cup mayonnaise
3 tsp fajita seasoning (divided)
1 tsp apple cider vinegar
1 tsp light oil
4 tbsp salsa
¾ cup shredded colby jack cheese
6 cups chopped lettuce

Steps:

  • Chop lettuce, set aside. Slice (or dice) peppers, set aside. Grate cheese, set aside.
  • Skin and slice ripe avocado; dice tomato. Add avocado, garlic powder, diced tomato, sour cream, lime juice, and 2 tsp salt to a food processor and blend until smooth (or add to a large mixing bowl and stir with a fork). Set aside. You've got guacamole!
  • Mix mayonnaise, apple cider vinegar, and 1.5 tsp fajita seasoning in a bowl. Mix until blended together and set aside. You've got salad dressing!
  • Slice chicken into 1 inch cubes.
  • Add light oil to large pan and heat on medium-high heat. Add chicken and remaining 1.5 tsp fajita seasoning. Toss to coat.
  • Cook until chicken is slightly browned and remove from heat. Set aside.
  • If desired, add peppers to the same pan (without cleaning the remaining oil/seasoning mixture left over) and cook lightly. Diced peppers work best for this method. You can definitely leave them raw, though, and the dish tastes just as great!
  • Combine lettuce, peppers, cheese, and chicken. Serve and garnish with guacamole, salsa, and salad dressing.

Add black beans, cumin, oregano, and cook for another 1-2 minutes, until fragrant. Season with salt and pepper, to taste, and set aside. Wipe the skillet clean.
  • Add an additional ½ tablespoon olive oil to the now clean skillet. Heat over medium heat. Add the chicken and cook for 4-5 minutes per side, until cooked through. Remove to a plate, cover with foil and let rest 5 minutes.
  • Whisk together the lime juice, 2 tablespoons olive oil and half the cilantro. Season with salt and pepper, to taste.
