An old beef stew recipe adapted from my grandmother. It has a rich flavor and is a good change from all the turkey and ham leftover from Christmas.

1 1/2 lb beef stew meat
1/4 c butter
1 (10 1/2 ounce) can tomato soup
1 (10 1/2 ounce) can water
4 carrots, peeled and cut in large chunks
4 large potatoes , cut into chunks
2 stalks celery , cut into chunks
4 onions , cut into chunks
2 tsp salt
1 tsp black pepper
1/4 c chopped fresh parsley
1/4 c good cooking sherry (grandma used apple juice)
2 bay leaves

Steps:

  • 1. In a heavy skillet brown the beef in the butter over medium high heat. Transfer beef to crockpot. Add the soup and water and stir well. Add the rest of the ingredients and cook for about 5 minutes, stirring once.
  • 2. Then cook, covered for 5 hours (or according to your crockpot directions), until meat and vegetables are done, stirring occasionally. Remove bay leaves and serve with bread and butter.

1 tablespoon olive oil, or to taste
2 pounds beef chuck roast, cubed
3 russet potatoes, diced
1 pound baby carrots
1 large onion, chopped
4 cloves garlic, minced
1 (16 ounce) bottle stout beer, divided
1 (6 ounce) can tomato paste
1 cup beef broth
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon smoked paprika
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a skillet over medium heat. Add beef; cook until evenly browned, 3 to 5 minutes per side.
  • Place potatoes, carrots, onion, and garlic in a slow cooker; top with browned beef.
  • Pour 1/4 cup beer into the same skillet and bring to a boil while scraping the browned bits of beef off of the bottom of the skillet with a wooden spoon. Stir in tomato paste; cook until thickened, about 5 minutes. Pour beer mixture into slow cooker.
  • Pour beef broth, remaining beer, garlic powder, onion powder, paprika, salt, and pepper into slow cooker.
  • Cook on Low for 8 hours.

Celebrate St Patrick's Day with Richard Corrigan's Irish stew - it's big on flavour, even bigger if you make it ahead and quite literally, let it stew...

3 middle necks of lamb (about 1.8kg/4lb), filleted and boned - you need to end up with about 950g/2lb 2oz pure meat
650g floury potatoes, such as King Edward
650g waxy potato, such as Desirée or Pentland Javelin
1kg carrots
2 onions
½ tsp fresh thyme leaves
chopped fresh chives and parsley, to garnish
bones from the lamb
1 large carrot, quartered
1 onion, quartered
½ celery stick, quartered
1 bay leaf
2 large sprigs of thyme
a generous sprig of parsley
6 black peppercorns, lightly crushed

Steps:

  • Make the stock. Put the lamb bones in a large heavy-based saucepan with the carrot, onion, celery, herbs, peppercorns and 1 tsp salt. Pour in 3 litres/5 ¼ pints water. Bring to the boil and simmer uncovered for 2 hours.
  • Strain the stock through a fine sieve to remove bones and vegetables, then return to the pan. Boil until reduced to about 1.3 litres/2 ¼ pints. (You can make the stock the day before - keep it in a covered container in the fridge, or freeze it for up to 3 months.)
  • Make the stew. Cut the lamb into large chunks. Peel the potatoes (keeping both types separate) and cut into pieces of similar size to the meat. Put the two different types in separate bowls of water to keep them white. Peel the carrots and cut into slightly smaller pieces. Slice the onions into thick rings.
  • Put the lamb in a large, clean saucepan. Pour in the stock and bring to the boil, skimming off all the impurities from the surface. Reduce the heat, cover and simmer gently for 10 minutes.
  • Add the floury potatoes, carrots and onions. Season generously and simmer for a further 10 minutes, stirring occasionally.
  • Add the waxy potatoes and thyme. Simmer until the lamb is tender (15-20 minutes). Take off the heat, cover (don't stir) and leave for 15 minutes. (You can make this up to 2 days ahead and keep in the fridge). Garnish and serve.

2-1/2 pounds boneless beef chuck, cut into 1 inch pieces and seasoned with garlic salt and pepper
6 pieces of bacon, chopped
4 Tablespoons minced garlic
2 yellow onions, chopped in 1 inch pieces
1/4 cup flour
11.2 oz bottle Guinness Stout
5 Tablespoons tomato paste
4 cups beef stock
4 large carrots peeled and cut into 1 inch pieces on a diagonal
3 celery stalks, cut into 1/2 inch pieces
2 bay leaves
1/2 teaspoon fresh or dried thyme
2 Tablespoons balsamic vinegar
1 teaspoon sugar
1 pound baby white potatoes halved or quartered if large.
Fresh parsley and thyme to garnish (optional)

Steps:

  • In a large stock pot heat oil on medium high heat and brown seasoned meat in batches in a single layer until browned on all sides. Remove from pot and set aside.In same stock pot over medium high heat add bacon and brown, stirring frequently. Add in onions, garlic, and flour, stir to combine and cook for one minute.Add in Guinness, beef stock, tomato paste, carrots, celery, bay leaves, thyme, balsamic vinegar, sugar, and beef. Bring to a boil, then turn down to simmer COVERED for 2 hours.Remove lid and add potatoes, let cook 40 more minutes UNCOVERED and simmering.Remove bay leaves and garnish with fresh parsley and thyme. Season with garlic salt and pepper if desired. Serve warm.

1/4 cup butter
1 (10 1/2 ounce) can tomato soup
1 (10 1/2 ounce) can water
4 carrots, cut into chunks
4 large potatoes, cut into chunks (I don't peel carrots or spuds but you can if you like)
2 stalks celery, cut into chunks
4 onions, cut into chunks
2 teaspoons salt
1 teaspoon black pepper
1/4 cup fresh parsley, chopped fine
1/4 cup good quality cooking sherry
2 bay leaves

Steps:

  • Preheat oven to 300F degrees.
  • In a heavy skillet brown the beef in the butter over medium high heat.
  • Add the soup and water and stir well.
  • Add the rest of the ingredients and cook for about 5 minutes, stirring once.
  • Transfer to a cast iron dutch oven or oven proof pot and cook in the oven, covered for 5 hours, stirring occasionally.
  • Remove from oven, remove bay leaves and serve with Irish Soda Bread and butter.

6 ounces bacon (,diced)
2 pounds beef chuck
3 tablespoons all-purpose flour
2 medium-large yellow onions (,chopped)
3 cloves garlic (,minced)
4 medium firm (,waxy potatoes (e.g., Yukon Gold), cut in 1-inch pieces)
2 large carrots (,chopped in 1/2 inch pieces)
2 ribs celery (,chopped in 1/2 inch pieces)
1 large parsnip (,chopped into 1/2 inch pieces)
1 bottle ((1 pint or 16 ounces) Guinness Extra Stout)
1 cup strong beef broth
2 tablespoons Worcestershire sauce
1/4 cup tomato paste
1 tablespoons dried and ground porcini mushrooms ((optional and not remotely traditional, but oh so amazing))
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 1/2 teaspoons salt
1/4 teaspoon freshly ground black pepper
2 bay leaves
Salt and pepper to taste

Steps:

  • Cut the beef across the grain into into 1-inch pieces. Sprinkle with some salt, pepper and the flour and toss to coat the pieces. Set aside.
  • Fry the bacon in a Dutch oven or heavy pot until done then remove it with a slotted spoon, leaving the bacon drippings in the pan.
  • Working in batches and being careful not to overcrowd the pieces, generously brown the beef on all sides. Transfer the beef to a plate and repeat until all the beef is browned.
  • Add the onions and fry them, adding more oil if necessary, until lightly browned, about 10 minutes. Add the garlic and cook for another minute. Add the vegetables and cook for another 5 minutes. Add the Guinness and bring it to a rapid boil, deglazing the bottom of the pot (scraping up the browned bits on the bottom). Boil for 2 minutes. Return the beef and bacon to the pot along with the remaining ingredients and stir to combine. (**At this point you can transfer everything to a slow cooker if you prefer. Follow the remaining steps and then cook on LOW for 6-8 hours or on HIGH for 3-4 hours.)Bring it to a boil. Reduce the heat to low, cover and simmer for 2 hours. Add salt and pepper to taste.
  • Serve with some crusty country bread or Irish soda bread. This soup is even better the next day.

1/2 teaspoon freshly ground black pepper
1/4 cup vegetable oil
24 pearl onions, peeled, root end trimmed
2 medium carrots, cut into 1 1/2-inch pieces
1/2 cup dried pearl barley
3 cups chicken stock or water
2 cups stout
1 bay leaf
1 tablespoon chopped fresh thyme leaves
12 new potatoes, cut in half
1/4 cup finely chopped fresh parsley leaves, for garnish
1 tablespoon finely chopped fresh chives, for garnish
Irish Soda Bread, recipe follows
2 cups whole wheat bread flour
1 1/2 cups all-purpose flour, plus more for dusting
1/2 cup old-fashioned rolled oats
2 tablespoons brown sugar
2 teaspoons salt
1 teaspoon baking soda
1 teaspoon baking powder
3 tablespoons unsalted butter, cold
1 1/2 cups buttermilk
1 egg

Steps:

  • Preheat oven to 350 degrees F.
  • Season the meat with salt and pepper.
  • Heat pot over medium high heat and add the vegetable oil. Working in small batches, saute the lamb until golden brown in color. Set aside. Add the onion, carrots, and barley to the pot. Stir to coat, about 1 minute. Add the chicken stock, stout, bay leaf, and thyme to the pot. Return the lamb to the pot, place the potatoes on top and bring to a simmer. Cover and cook for 1 1/2 to 2 hours or until the lamb is fork tender.
  • Season with salt and pepper, to taste. Garnish with the parsley and chives. Serve with Irish Soda Bread.
  • Preheat oven to 350 degrees F.
  • In a large bowl, combine the flours, oats, brown sugar, salt, baking soda, and baking powder. Grate the cold butter into the dry ingredients and blend by hand until the mixture resembles cornmeal.
  • In a small bowl, whisk together the buttermilk and the egg. Using your hands, mix the wet and dry mixtures together until the dough can be formed into a ball.
  • Turn the dough out on to a lightly floured surface and knead for 5 minutes until soft and elastic. Shape the dough into a round loaf, about 6 inches in diameter. Place on a parchment-lined baking sheet.
  • Dust the top of the loaf with flour. Use a sharp knife to cut an "X" into the dough, about half the depth of the loaf and to within 1-inch of the edge. Bake for 45 to 50 minutes (see Cook's Note*).

4 cups hot cooked noodles

Steps:

  • Coat meat with flour. Heat oil in Dutch oven or large deep skillet on medium-high heat. Add meat and onions; cook and stir 5 to 8 min. or until meat is evenly browned. Stir in broth, tomatoes and dressing mix. Bring to boil, stirring occasionally; cover. Simmer on low heat 15 min., stirring occasionally.
  • Add potatoes and carrots; simmer, covered, 45 min. or until meat is tender and sauce is thickened, uncovering after 30 min. and stirring occasionally.
  • Serve over noodles.
