1 lb baby carrots
3 tablespoons butter
1/4 cup brown sugar
1/4 cup Grand Marnier
1 teaspoon ground rosemary
1/4 teaspoon cayenne pepper (or to taste)
1/8 teaspoon sea salt
1/2 tablespoon parsley, chopped (for garnish)

Steps:

  • Place baby carrots in a steam basket and cook on high heat until tender, about 6 minutes. Remove and set aside.
  • In a large saucepan over medium heat, add butter. When it starts foaming, add steamed carrots, brown sugar and Grand Marnier. Cook carrot mixture for 3 minutes. Season carrot mixture with rosemary, cayenne pepper and sea salt; stir and cook for 7 minutes or until glaze thickens.
  • Transfer to a serving dish, sprinkle with parsley and serve immediately. Makes 4 servings.

"BIRTHDAY" CARROT CAKE WITH CREAM CHEESE FROSTING AND COINTREAU CARROTS

1 1/2 cups finely minced carrots
1/2 cup crushed pineapple, drained
3/4 cup finely chopped walnuts
2 1/2 cups, all-purpose flour, plus extra for pan
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly ground nutmeg
A pinch of kosher salt
1 cup buttermilk
1/4 cup molasses
4 large eggs
3/4 cup vegetable oil
1 1/2 cups dark brown sugar
2 lbs cream cheese, room temperature
2 sticks of unsalted butter, room temperature
1 teaspoon vanilla extract
1 teaspoon lemon zest
2 cups powdered sugar
1 medium carrot
1/2 stick unsalted butter
2 tablespoons sugar
1/4 cup Cointreau
pinch of salt

Steps:

  • Preheat oven to 375 degrees F. Butter a jelly roll pan and line with parchment. Set aside.
  • Take the carrots and chop into large pieces, then mince in a food processor until you have a fine texture. Drain pineapple and finely chop walnuts. Set aside. In a large mixing bowl add flour, baking soda, baking powder and spices together. In a separate bowl mix buttermilk, molasses, eggs, vegetable oil and dark brown sugar together.
  • Now combine wet and dry ingredients together to make a batter then fold in the carrots, pineapple and walnuts. Pour into the prepared pan and bake in the oven for 25-30 minutes until cake is set and springs back when gently pressed in the middle. Remove the pan from the oven and allow cake to cool on a rack while you prepare the frosting and cointreau carrots (recipes below). Once the cake has cooled, cut into three rectangles by cutting the cake lengthwise twice. Stack the cake up into three tiers with cream cheese frosting in between each layer. Frost the outside of the entire finished cake - smoothing off the edges and corners (an offset spatula works well). Top with Cointreau carrot rounds and drizzle a little of the syrup on top as well.
  • Using a kitchen mixer, combine cream cheese and butter until blended and you have a smooth, light texture. Add the vanilla, lemon zest and powdered sugar and beat until combined. Continue to beat until smooth and glossy - about 7 minutes.
  • Slice carrot up into rounds. Add carrot, butter, sugar, cointreau and salt to a small saucepan over medium heat. Bring to a simmer and reduce until syrupy - about 5 minutes.

30 fresh baby carrots
2 tablespoons Cointreau liqueur or 2 tablespoons any other orange-flavored liqueur
1/4 cup brandy
1/4 cup honey
1 1/2 tablespoons fresh lemon juice
2 tablespoons parsley, chopped

Steps:

  • Parboil peeled baby carrots in boiling salted water for 5 minutes. Drain. Place carrots into buttered 1 1/2 quart baking dish.
  • In a small bowl, combine cointreau, brandy, honey and lemon juice. Pour mixture over the carrots. Toss to coat carrots.
  • Bake at 350 degrees for 15 minutes. Stir, sprinkle with parsley and serve.

This is a refreshing summer dessert our friend Margaret makes each Boxing Day. It is not exactly as Margaret makes it because I made this from memory, it was never written down, but it does taste the same. The first couple of times I made this I used custard powder as I didn't have arrowroot, it worked fine. Make whatever quantity you need and use fresh or frozen berries, it is flexible. The berries look lovely served in martini glasses with bowl on the table for guests to have seconds.

300 g fresh strawberries, & washed
1 (300 g) packet frozen blueberries
1 (300 g) packet frozen mixed berries
1 (300 g) packet frozen raspberries
Cointreau liqueur, to taste
2 tablespoons arrowroot
2 tablespoons honey (or icing sugar)

Steps:

  • Hull and halve most of the strawberries, leaving some whole for decoration.
  • Using a clear glass bowl for display add frozen berries and fresh strawberries and mix together, leaving the whole strawberries for later.
  • Put Cointreau, arrowroot and honey into a small saucepan and heat until it starts to thicken, then add about 1/4 of the berries from the glass dish and puree or blend with a stick blender.
  • Pour pureed berries over the mixed berries in the glass bowl and mix well, keeping the whole strawberries on top for decoration.
  • Taste now before chilling and adjust flavours, by adding more Cointreau and sweetener if necessary - I usually just add icing sugar instead of more honey.
  • Cover with cling wrap and chill then serve with ice-cream or whipped cream.
