Steps:

  • Cut out a parchment paper circle (a cartouche) to have the same diameter as a medium saucepan. Put the butter, carrots, turnips, water, and salt in the saucepan and set over medium heat. When the butter has melted, cover the saucepan with the parchment paper cartouche. Cook the vegetables until tender and then smash to a puree.

I use the food mill instead of a blender - immersion or regular - because I love the texture of the soup when it's put through the mill's coarse blade, resulting in a flavorful, colorful mixture that you can almost chew on. But you can use a blender to purée the soup. The texture will be coarsest - which is what you want - if you use an immersion blender.

3 large leeks (1 to 1 1/2 pounds), white parts only, cleaned and sliced 1/2 inch thick
2 garlic cloves, minced
3 large carrots (10 ounces), diced
1 celery stalk, diced
1 large or 2 medium turnips (10 ounces), peeled and diced
1 pound russet potatoes, peeled and diced
A bouquet garni made with a bay leaf and a few sprigs each thyme and parsley
Salt and black pepper
1/4 cup crème fraîche, more to taste
Chopped fresh parsley or tarragon, for garnish

Steps:

  • In a large soup pot or Dutch oven, combine the leeks, garlic, carrots, celery, turnips, potatoes, bouquet garni, 1 1/2 quarts water, 2 to 3 teaspoons salt, and pepper to taste. Bring to a boil, reduce heat, cover and simmer 40 to 45 minutes, until the vegetables are very soft.
  • Pass the soup through the coarse blade of a food mill (or purée using a blender or an immersion blender).
  • Return soup to the pot and whisk in 1/4 cup crème fraîche (or more, to taste). Heat through, taste and adjust seasonings (be generous with salt and pepper). To serve, garnish each bowl with a spoonful of crème fraîche and a sprinkle of parsley or tarragon.

1/4 teaspoon Italian seasoning
3/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 package (10 ounces) frozen petite or tiny peas
1 tablespoon unsalted butter

Steps:

  • Heat the oil over high heat until hot, but not smoking, in a sturdy saucepan. Add the onions, and cook until they are lightly browned, about 2 minutes.

2 lbs turnips or 2 lbs rutabagas

Steps:

  • Boil carrots and turnip/rutabaga SEPARATELY.
  • When done, mash each SEPARATELY using as much cream, butter, and seasonings to your taste.
  • Just before serving, drain any liquid formed at the bottom of the bowls and GENTLY combine them both.
  • You should be able to see both carrot and turnip/rutabaga pieces in the combined dish.
  • ENJOY!
  • NB: Depending on your preferences, the amts of carrot vs turnip can be regulated. Leftovers freeze well.

2 large, firm white turnips, about 1/2 pound
3 large carrots, about 1/2 pound
1/2 pound fresh snow peas
1 tablespoon olive oil
2 tablespoons chopped onions
Salt and freshly ground black pepper to taste
2 teaspoons red-wine vinegar
2 tablespoons chopped fresh coriander or parsley

Steps:

  • Scrape and trim the turnips. Cut them in half crosswise into 1/4-inch slices. Stack the slices, and cut them into batons 1/4-inch wide.
  • Scrape the carrots and cut them into 1 1/2-inch lengths. Then cut the pieces into 1/4-inch slices, and then into batons the same size as the turnips.
  • Trim off and discard the tips of the snow peas.
  • Heat the oil in a heavy skillet, and add the turnips and carrots. Cook, stirring, about 1 minute. Add the onions and cook until wilted, about 1 minute. Add the snow peas, salt and pepper, and cook, stirring, for about 4 minutes or until tender. Add the vinegar and coriander, cook briefly, toss and stir well.
