Yet another recipe I dreamed up to use my never ending supply of Amish Friendship Starter. I am also always trying to find healthy recipes to send along to school with my preschooler and this one fits the bill! These freeze well, so feel free to eat some today and freeze the rest for later!

3/4 cup amish starter
1 egg, beaten
1/2 cup buttermilk
1/2 cup pureed sweet potato (I buy baby food and use it to sneak veggies into my son, you can also use applesauce or pureed carro)
1 teaspoon vanilla
1/2 cup fiber cereal (crunched up)
1/2 cup oats
1 teaspoon salt
2 tablespoons splenda artificial sweetener
1 tablespoon brown sugar
1 1/2 cups flour (whole wheat is great, but will make for a more dense muffin)
1 teaspoon baking soda
1/2 cup shredded carrot (about 1 carrot)
1/2 cup raisins
1/2 cup chopped walnuts

Steps:

  • Beat together wet ingredients (starter through vanilla) until just mixed.
  • Add remaining dry ingredients (cereal through baking soda) and stir until just mixed (batter should be a little lumpy).
  • Stir in carrots, raisins and nuts but do NOT over-mix.
  • Fill greased muffin tins 2/3 full and bake 20 minutes at 375 degrees.
  • If not done, cook 5 minutes more and check again.

Steps:

  • 1. 1 cup Amish friendship batter * 2 cups flour 3/4 cup oil 1 tsp baking soda 2 tsp baking powder 1 cup sugar 3 eggs 1-1/2 tsp cinnamon 2 tsp vanilla Stir Well. Add: 1 cup nuts, chopped OPTIONAL 1 cup apples, chopped 1 cup raisins, or 1 cup blueberries Mix Well. Put into muffin tins well greased if not using liners. Sprinkle with topping on each muffin and bake at 350 degrees F for 15-20 minutes or until done.
  • 2. TOPPING 1 cup brown sugar 1/2 cup flour 1/4 cup margarine Mix well and sprinkle over tops of muffins before baking.

These are great low fat, healthy muffins that use Amish Friendship Bread Starter (yes, the gift that keeps on giving. . .I swear this stuff multiplies). Feel free to add nuts, raisins, cranberries, cinnamon, vanilla, etc. I make my starter with whole wheat flour, so I go ahead and use cake flour in this recipe to lighten it up a bit. I also use carrot baby food in place of the applesauce to healthify it a bit more :)

MULTIGRAIN BREAD FOR ABM (AMISH FRIENDSHIP STARTER)

I am always making up new recipes to use up my endless supply of Amish Friendship Bread Starter. This is a nice and hearty multigrain bread. I actually used 1/2 cup of Katzen's recipe #384672. . .that being said, I have written this recipe assuming you don't have a bucket of it in the pantry (as I do). Also feel free to sub out any of the grains for what you have on hand, just make sure it totals 8 T (i.e. rolled oats, quinoa, or increase amounts of the other ingredients). This makes about a 2 lb loaf.

1 cup hot tap water
1 cup amish starter
1 tablespoon oil
2 tablespoons brown sugar (optional)
2 teaspoons salt
2 cups bread flour
1 1/2 cups wheat flour (I use white whole wheat flour)
2 teaspoons active dry yeast (feel free to put the entire little packet in)
1 tablespoon rye flakes
1 tablespoon wheat flakes
1 tablespoon whole oat groats (also known as oat berries)
1 tablespoon millet
1 tablespoon flax seed
1 tablespoon poppy seed
1 tablespoon sesame seeds
1 tablespoon sunflower seeds

Steps:

  • Place ingredients in bread maker in the order suggested by your ABM manufacturer (mine is a Corner Bakery and it is supposed to go in as written above). Some are wet to dry and others are dry to wet.
  • Cook on French Bread Setting on Light crust for best results.

Dawn's Amish Friendship Cake With Starters image

This is FABULOUS...YUMMO! There are 3 steps to this Amish Friendship Cake Starter... There is the Initial Amish Starter, The Secondary Starter, and The Amish Friendship Cake... I have posted all the recipes here all in one place. Preparation time is way off, as this is not your typical recipe and preparation takes 30 days. If you want to make a Carrot Cake, use a Spice Cake mix in place of the Yellow Cake mix, and add 1 c. shredded carrot, and 1 c. raisins to the recipe.

1 cup pineapple chunk, drained
1 cup sugar
2 tablespoons brandy
1 cup maraschino cherry, including the juice
1 cup sugar
2 tablespoons brandy
1 1/2 cups amish starter, prepared above
1 (20 ounce) can sliced peaches in juice
2 1/2 cups sugar
2 1/2 cups sugar
1 (20 ounce) can pineapple chunks in juice
2 1/2 cups sugar
1 (10 ounce) jar maraschino cherries, and juice
1 (20 ounce) can fruit cocktail, and juice
1 yellow cake mix (without pudding in it)
2/3 cup oil
4 eggs
1/3 of the fruit (prepared with the starter above)
1 cup nuts, chopped
1 (3 1/2 ounce) box instant vanilla pudding

Steps:

  • Amish Friendship Cake Initial STARTER:.
  • Day 1-Day 14:.
  • 1 cup cubed pineapple, drained.
  • 1 cup sugar.
  • 2 T. Brandy.
  • Combine in a glass gallon jar. Let set it set for 2 weeks.
  • Cover loosely with aluminum foil, with a wooden spoon inserted through the foil to stir daily-DO NOT REMOVE FOIL OR SPOON!
  • Be sure to stir daily.
  • Day 15:.
  • Add 1 cup Marachino cherries including the juice.
  • 1 cup sugar.
  • 2 T. Brandy.
  • Let set two more weeks, stirring daily.
  • Day 30:.
  • Strain the fruit from the juice using a plastic strainer. (DO NOT USE A METAL STRAINER.).
  • The resulting "juice" is the "starter" for your Amish Friendship Cake.
  • Amish Frienship Cake Secondary STARTER:.
  • First we prepare another starter from the starter above.
  • 1 1/2 cups starter, prepared above.
  • 1 lg. can sliced peaches, with juice.
  • 2 1/2 cups sugar.
  • Put peaches and juice in a gallon jar. Stir once a day for 10 days:.
  • On the 10th day, Add:.
  • 2 1/2 cups sugar.
  • 1 20 oz. can pineapple chunks and juice.
  • Stir every day for 10 days.
  • On the 20th Day, Add:.
  • 2 1/2 cups sugar.
  • 1 10 oz. jar Marachino cherries and juice.
  • 1 20 oz. can fruit cocktail and juice.
  • Stir every day for 10 days.
  • On the 30th Day:.
  • Drain liquid from fruit.
  • Divide the juice into 5-6 jars each containing 1 1/2 cups of juice.
  • Give to friends, and keep one for yourself.
  • Your friends can now start with the starter you have given them, and make the 30 day cake directly.
  • Divide fruit in thirds. You can freeze 2/3 of the fruit to use later.
  • Note:.
  • When putting fruit or juice in jars, leave jars on the counter & DO NOT REFRIGERATE! DO NOT PUT LID ON TIGHT, set it on top of jar - loosely! DO NOT PUT JUICE IN THE REFRIGERATOR!
  • Amish Friendship Cake:.
  • Cake 1 yellow cake mix, without pudding in it.
  • 2/3 cup oil.
  • 4 eggs.
  • 1/3 of the fruit, prepared with the starter above.
  • 1 cup nuts, chopped.
  • 1 box Vanilla instant pudding.
  • Mix all ingredients together, and bake in a greased Bundt pan at 350, for 50 minutes or until done.
  • Important Note:.
  • Do not use a metal strainer when straining the fruit.
  • When adding fruit and juice to the jar, leave it on the counter & DO NOT REFRIGERATE! DO NOT PUT LID ON TIGHT. Set it on top loosely! DO NOT PUT JUICE IN THE REFRIGERATOR!
  • I frost my cakes with Cream Cheese frosting and top with walnuts.

These are really good. I got the orginial recipe from Sparkspeople but I made a few changes. I made mine gluten-free by using Bob's Red Mill Gluten Free All Purpose Flour (instead of the whole wheat flour), I used unsweetened applesauce (instead of oil to make it lower fat) and lastly I used vanilla flavored yogurt instead of plain. They were declared a huge hit by husband who has already inhaled 2 while I am typing this! ENJOY!

2 cups whole wheat flour
2 teaspoons baking soda
1 teaspoon pumpkin pie spice
1/2 teaspoon salt
1/2 cup vanilla yogurt
1/4 cup unsweetened applesauce
1/3 cup honey
1 teaspoon vanilla extract
2 tablespoons orange juice
1 cup carrot, peeled and shredded
1/2 cup raisins

Steps:

  • Preheat an oven to 350 degrees F. Grease 14 muffin cups, or line with paper muffin liners.
  • Combine flour, baking soda, pumpkin pie spice, and salt in a bowl.
  • Whisk together yogurt, unsweetened applesauce, honey, vanilla extract, and orange juice in a separate bowl. Gently fold carrots into the yogurt mixture.
  • Stir yogurt mixture into the flour mixture until just combined. Gently fold raisins into the batter. Scoop batter into prepared muffin cups until nearly full.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 12 to 13 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

This recipe was given to me years ago by a friend's mother along with 1 cup of starter. It's easy to keep and can be used to make a number of delicious recipes using "sourdough starter".

3 cups flour, divided
3 cups milk, divided

Steps:

  • Day 1: In a large glass or plastic bowl, combine 1 cup sugar, 1 cup flour, and 1 cup milk.
  • Stir with a wooden spoon.
  • Cover loosely with a clean cloth dish towel.
  • Keep at room temperature.
  • Day 2: Using a wooden spoon, stir once a day.
  • Day 3: Using a wooden spoon, stir once a day.
  • Day 4: Using a wooden spoon, stir once a day.
  • Day 5: Add 1 cup sugar, 1 cup flour, and 1 cup milk.
  • Stir.
  • Day 6: Using a wooden spoon, stir once a day.

1 cup all-purpose flour
1 cup grated carrot
1/2 cup whole wheat flour
1/2 cup raisins
1/4 cup packed brown sugar
2 tablespoons toasted wheat germ
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup milk
1/4 cup molasses
1/4 cup butter, melted
1 egg
1 (125 g) package cream cheese
2 tablespoons icing sugar

Steps:

  • In large bowl, stir together all purpose flour, carrots, whole wheat flour, raisins, sugar, wheat germ, baking powder, cinnamon and salt.
  • In a separate bowl, stir together milk, molasses, butter and egg.
  • Pour over dry ingredients and stir just until moistened.
  • Spoon into 10 greased or paper lined muffin cups, filling three quarters full.
  • Bake in centre of 375 degree oven for about 20 minutes or until tops spring back when lightly pressed.
  • Let cool in pan for 10 minutes.
  • Remove to rack and let cool completely.

  • In small bowl, beat cream cheese with sugar until fluffy, spread over cooled muffins.
