- To begin making the Carrot Ginger Juice Recipe first add the carrots and ginger to the Juicer and extract the juice out.
- Add a little more water, so we can extract more from the pulp of the carrot juice that remains in the juicer. Pour the juice into a jar and squeeze the juice from one lemon.
- Add just the taste by adding salt or honey of required. You can also adjust the concentration of the juice by adding water or even squeezing some orange juice.
- Serve the Carrot Ginger Juice as soon as it is made to get maximum benefits. Serve it with Grilled Sub Sandwich Recipes With Paneer & Roasted Vegetables for a healthy breakfast.
CARROT-GINGER ELIXIR
We've been making chef Scott Howard's ginger syrup in bulk and keeping it in the fridge for quick tonics and late- evening cocktails. If you have a juicer at home, by all means use it, but good store-bought 100 percent carrot juice will work just as well here.

- Bring sugar, ginger, and 1/3 cup water to a boil in a small saucepan, stirring until sugar dissolves. Remove from heat; let steep for 10 minutes. Strain through a fine-mesh sieve into a medium pitcher (you should have 1/2 cup); discard ginger. Cover and chill syrup. DO AHEAD: Can be made 1 week ahead. Keep chilled.
- Fill four 6-ounce glasses with ice cubes. Add carrot juice and lime juice to ginger syrup in pitcher; stir well. Divide elixir among prepared glasses.
CARROT-GINGER SHRUB
Pair this sweet, slightly spicy carrot-ginger shrub with seltzer, vodka, or gin for a cocktail, or use it in salad dressing with olive oil, salt, and pepper.

- Wash carrots and, if necessary, scrub with a vegetable brush to remove dirt. Peel them if you want to, but it's not necessary.
- Purée carrots in a blender or food processor.
- Pour carrot purée into clean nonreactive container. Add grated ginger.
- Pour cider vinegar over carrots and ginger. Stir to combine. Refrigerate for 2 days.
- Place a fine-mesh strainer over another bowl. Pour carrot-and-vinegar mixture into strainer. Press or squeeze the mixture to extract all the juice.
- Pour carrot juice into a large sanitized jar. Add sugar. Cap the jar, and shake well to combine. Refrigerate, shaking well every other day or so to dissolve sugar.

- First, scrub/clean your carrots* well. I tend to do this immediately after buying them, so I don't have to do this each time I want to use a carrot.
- To prepare the ginger, first, scrub it well to clean it ( optionally, you can peel it- though organic ginger can be left unpeeled).
- If you want to make this juice with a (high-speed) blender, then you'll need to peel and chop the carrots into 1-2" pieces, add the chopped, peeled ginger, and then add around 1/4-1/2 cup of water to the blender too ( to help it blend without diluting the juice TOO much).Blend it until pureed. It will look like a thick smoothie consistency.
- Carrot juice is best consumed immediately for the highest amount of nutrients. Though you can store leftover carrot ginger juice in an airtight container in the fridge for up to two days if needed.You can freeze the juice too - though it separates when thawing so is then best used for culinary uses like dressings, etc. You could also pop a few of the carrot ginger juice ice-cubes into smoothies.
