FAROFA - TOASTED CASSAVA FLOUR RECIPE
Brazilian farofa is a quintessential Brazilian side dish that can accompany many dishes, can be prepared many different ways, and is always DELICIOUS! This gluten free toasted cassava flour recipe is ready in under 10 minutes and will add a special bacony crunch to your next meal.

Steps:
- add the bacon to a cold skillet, and heat up over medium heat
- when the fat from the bacon begins to melt, add 1 tbsp of butter
- when the bacon begins to fry, add the second tbsp of butter
- add the onions and sautee until transparent, about 2 mins
- add the garlic and fry until golden
- add the yuca flour and season with salt and pepper to taste
- let it toast, stirring gently and constantly to avoid burning, about 2 mins

- Heat oven to 190C/170C fan/gas 5. Put the carrots and onions in a large roasting tin, drizzle with the oil and season well. Roast for 25 mins.
- While the vegetables are roasting, boil the farro or spelt following pack instructions. Drain and tip into a bowl. Mix the dressing ingredients with 1 tbsp water and some seasoning, then stir half through the warm grains.
- When the vegetables finish cooking, pour over the remaining dressing and mix well. Toss with the grains and spinach, then crumble over the feta.

- Add the oats to a food processor and pulse until they are blended into a flour. Transfer the oat flour to a large mixing bowl and add the cumin, salt, coriander, curry, and cayenne.
- Add the parsley, cilantro, and garlic cloves to the food processor. Pulse until finely chopped, about 20 seconds. Add the grated carrots and chickpeas and pulse again until the chickpeas are roughly chopped, about 10 seconds.
- Transfer the mixture from the food processor to the bowl with the dry ingredients. Stir until the batter comes together. Take approximately two tablespoons in your hands and roll it into a falafel patty, about 2 inches wide and 1/2-inch thick. Place the patty on the baking sheet. Repeat with the rest of the batter until you have 15 to 18 falafel.

- To cook the farro: In a medium saucepan, combine the rinsed farro with at least three cups water (enough water to cover the farro by a couple of inches). Bring the water to a boil, then reduce heat to a gentle simmer. Cook, stirring occasionally, until the farro is tender to the bite but still pleasantly chewy (pearled farro will take around 15 minutes; unprocessed farro will take 25 to 40 minutes). Drain off the excess water and return the farro to the pot. Add 1 teaspoon olive oil, the lemon juice, garlic and 1/2 teaspoon salt. Mix well, then add the chickpeas and stir to combine. Set aside, covered, until you’re ready to assemble.
- To roast the carrots: Preheat the oven to 425 degrees Fahrenheit. Line a large, rimmed baking sheet with parchment paper and add the carrots. Drizzle them with 1 tablespoon olive oil and sprinkle with cumin, salt and pepper. Use your fingers to make sure the carrots are lightly and evenly coated in oil and spices. Roast for 20 to 35 minutes, until the carrots are easily pierced by a fork near the top of their stems. Roasting time will depend entirely on the size of your carrots. I removed some of the more slender carrots at 20 minutes and checked them at 5 minute intervals thereafter, removing the carrots as they were done.
- To toast the pepitas: In a small skillet over medium heat, warm 1/2 teaspoon olive oil until shimmering. Add the pepitas and generous pinches of cumin, chili powder and salt. Cook, stirring frequently, until the pepitas are turning golden on the edges and starting to make little popping noises. Remove from heat to cool.
- To make the herbed crème fraîche, combine the crème fraîche, 1 tablespoon chopped parsley, water, and a few dashes of salt and pepper in a small bowl. Stir to combine and set aside.
