SHRIMP COCKTAIL WITH DIPPING SAUCES

1/2 cup fresh flat-leaf parsley, leaves and stems separated
1 tablespoon black peppercorns
4 cloves garlic, smashed
1 lemon, halved
1/2 shallot, halved
Kosher salt
2 pounds peeled and deveined colossal shrimp, tail on
1/2 cup mayonnaise
1 tablespoon drained green peppercorns in brine plus 1 teaspoon brine
1/2 teaspoon granulated sugar
1/2 cup ketchup
1 tablespoon prepared horseradish
1/4 teaspoon celery seed
2 dashes Worcestershire sauce

Steps:

  • For the shrimp cocktail: Add the parsley stems, peppercorns, garlic, lemon, shallot, 2 teaspoons salt and 3 quarts water to a large stockpot and stir to combine. Bring to a boil over high heat. Prepare an ice water bath.
  • Add the shrimp to the boiling water and cook just until opaque, 1 to 2 minutes. Remove the shrimp and shock in the ice water bath for 5 minutes. Drain the shrimp and refrigerate until ready to serve. Reserve the parsley leaves for the peppercorn remoulade sauce.
  • For the peppercorn remoulade sauce: Combine the mayonnaise, green peppercorns, brine and sugar in a small bowl. Chop the reserved parsley leaves and stir into the remoulade. Store in an airtight container in the refrigerator until ready to serve.
  • For the "bloody" cocktail sauce: Combine the ketchup, horseradish, celery seed and Worcestershire sauce in a small bowl. Store in an airtight container in the refrigerator until ready to serve. This can be prepared up to 2 weeks in advance.
  • Serve the chilled shrimp over crushed ice with the dipping sauces alongside.

1 cup rice, regular or instant, cooked according to package directions
Cooking spray
2 pounds large or jumbo shrimp, peeled and deveined
Salt and freshly ground black pepper
2 tablespoons freshly chopped cilantro leaves
1 cup orange juice
2 tablespoons fresh lime juice
2 teaspoons minced fresh ginger
2 teaspoons cornstarch
1/2 teaspoon garlic powder

Steps:

  • Coat a stove-top grill pan or griddle with cooking spray and set over medium-high heat to preheat. Season both sides of shrimp with salt and black pepper. Place shrimp on hot pan and cook 2 to 3 minutes per side, until bright pink and cooked through. Sprinkle shrimp with cilantro.
  • Meanwhile, in a small saucepan, whisk together orange juice, lime juice, ginger, cornstarch, and garlic. Set pan over medium heat and bring to a simmer. Simmer 2 minutes, until mixture thickens. Season, to taste, with salt and black pepper. Transfer sauce to a serving bowl. Serve 2/3 of the shrimp with the rice and dipping sauce on the side. Reserve remaining shrimp for wraps, if desired.

  • In a large nonstick skillet, heat the first five ingredients for 30 seconds, stirring constantly. Add Shrimp and onions; stir-fry for 4-5 minutes or until shrimp turn pink. Combine sauce ingredients; serve with shrimp.

2 cups chopped onions
1 cup chopped bell pepper

6 cups water

1/4 teaspoon crushed red pepper flakes
1/2 teaspoon black pepper
2 cans okra
2 lbs raw shrimp, peeled & deveined
1 lb smoked sausage, thinly sliced
hot, cooked rice

Steps:

  • In a large stock pot, heat oil until hot, stir in flour.
  • Cook flour stirring often until flour reaches a medium brown color.
  • Add onions, peppers and garlic.
  • Cook until soft.
  • Add tomatoes, tomato sauce& paste, mix well.

  • Add salt, water, red& black peppers.
  • Fry sausage in a separate skillet and drain excess fat.

4 (4 ounce) fillets sea bass
kosher salt and ground black pepper to taste
½ cup butter
3 tablespoons light olive oil
2 shallots, minced
½ teaspoon minced garlic
3 tablespoons chopped fresh parsley
3 tablespoons all-purpose flour
1 cup half-and-half
white pepper to taste
1 (16 ounce) package frozen cooked crawfish tails, thawed
1 (6 ounce) can lump crabmeat

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Season the sea bass with salt and pepper; arrange in a baking dish and set aside.
  • Melt the butter with the olive oil in a skillet over medium-low heat. Cook the shallots, garlic, and parsley in the melted butter and olive oil until softened, about 5 minutes. Add the flour and stir continually until completely incorporated into the mixture and the liquid is smooth. Pour the half-and-half into the mixture while stirring; cook and stir until thickened. Season with the white pepper. Gently fold the crawfish tails and crabmeat into the mixture, taking care to not break the crabmeat too much; cook another 1 minute. Spoon the mixture over the sea bass fillets.
  • Bake in the preheated oven until the fish flakes easily with a fork, 15 to 20 minutes. Serve immediately.

2 tablespoons olive oil
1 tablespoon minced fresh chives

5 garlic cloves, minced

3 cups reduced-sodium chicken broth
1 can (15-1/2 ounces) black-eyed peas, rinsed and drained
