12 ounces fresh cranberries
1 seedless orange (unpeeled)
1 Granny Smith apple (peeled, cored)
3/4 cup sugar

Steps:

  • Rinse cranberries and pick out any soft ones and discard. Drain and place into a food processor.
  • Cut the orange into 8 sections, leaving the peel on. Cut the peeled and cored apple into 8 sections as well. Transfer to food processor.
  • Pulse fruits in the food processor until everything is minced into small pieces. Be careful not to over pulse.
  • Stir in sugar. Transfer to a serving bowl and let sit 30 minutes before serving.

This is NOT a no carb but lower than most raw, uncooked relish. I always get asked for my recipe on this no matter where I serve it. Quick, easy and great for those what do I bring luncheons! Due to the high acid content it will be good in the fridge for a week. However, it is a pleaser dish and never lasts 24 hours. I fix double and hide a dish in the back of the fridge.

16 ounces raw cranberries, washed well
1 -2 cup pecans or 1 -2 cup walnuts
8 stalks celery (I just use an entire head)
1 apple, chopped tart is best
1/2 cup Splenda granular
6 ounces sugar-free orange marmalade
2 -6 tablespoons frozen orange juice concentrate (optional)
1/4-1/2 teaspoon cinnamon
1/8 teaspoon ground cloves

Steps:

  • Place the washed raw cranberries into a food processor.
  • Pulse until chopped finely and place into a large bowl.
  • Next put pecans into the processor and chop coursely.
  • Place them into the bowl with the cranberries.
  • Do the same with the celery, chop and add to the bowl.
  • Chop your apple finely on a cutting board. DO NOT use the processor.
  • Add the apple to the bowl and stir in the rest of the ingredients.
  • Chill over night or at least for a few hours before serving.
  • Serve with poultry, breakfast toast, cereals, or anything a nice tart bit is good with.

This is our family recipe for cranberry relish. It wouldn't be Thanksgiving without it. It's so good that I buy extra cranberries in the fall for making relish to go along with chicken the rest of the year. I first learned to make this with a table-top grinder, then adapted it to a food processor.

12 ounces cranberries (1 bag, fresh or frozen)
1 navel orange
1 apple
1 teaspoon lemon juice
1 cup sugar

Steps:

  • In food processor with metal blade, chop cranberries. No need to defrost cranberries if frozen. Frozen cranberries make bright red relish. Scrape chopped cranberries into separate bowl.
  • Replace metal blade with small shredder disk. Cut orange & apple into quarters. Remove core from apple but keep skin of both orange & apple.
  • Shred orange & apple in food processor. Replace shredder disk with metal blade and chop orange & apple pieces to about the size of the chopped cranberries.
  • Scrape chopped orange & apple into bowl with cranberries. Add lemon juice and sugar. Mix well.
  • The relish is best if you give the sugar some time to dissolve -- that's the "cooking" time.

This is my mother-in-law's recipe and as far as my husband and son are concerned, it is the most important part of thanksgiving dinner. It's nice to serve this in a glass bowl to show off the festive red color. Preparation time does not include overnight refrigeration.

1 (12 ounce) bag cranberries
1 (6 ounce) box red Jell-O (pick your favorite red flavor, or use two 3-oz boxes and mix flavors)
1 apple, cored but unpeeled
1 orange, seeded, but unpeeled
1 stalk celery, diced
1/2 cup chopped pecans or 1/2 cup walnuts
1 (8 ounce) can crushed pineapple, undrained (I typically use a 16 oz can and it also works fine)
1/4-1/2 cup sugar (optional)

Steps:

  • Chop or grind cranberries, orange (with rind) and apple (with peel). Make sure you do this in such a way as to conserve all of the juice.
  • You can use a food processor or one of the old metal food grinders that clamp to your table - mine drips horribly, but if you have kids helping, it's lots of fun for them to turn the crank and hear the cranberries pop. You could of course chop it all by hand with a knife, but you'll want to chop everything very finely.
  • Place fruits and their juices in a serving dish/bowl that will hold 8-10 cups.
  • Add diced celery, nuts and crushed pineapple with juice.
  • Dissolve jello in recommended amount of boiling water (2 cups), and add to the fruit/nut mixture.
  • Depending on how juicy your fruit is, you may not need to add any cold water to the mixture. If you think it will need it, don't add more than 1 cup.
  • Depending on the tartness of your fruits, you may or may not want to add some sugar, perhaps 1/2 cup. (I just taste it before putting it in the fridge to set and add sugar if it seems too tart.).
  • Refrigerate for several hours till set(overnight is good).

1 lb cranberries
2 cups sugar
1/2 cup water
1/2 cup orange juice
15 ounces can crushed pineapple
2 teaspoons grated orange peel

Steps:

  • Combine all ingredients in an uncovered 3-quart saucepan, and cook over medium heat, stirring often, until most of the cranberries have opened and the mixture is somewhat thickened. Be sure to cook the cranberries until they "pop" in order to release the natural pectin, which thickens the sauce.
  • Store in refrigerate for up to 1 day or until ready to use. Relish thickens a bit over time.
  • NOTE - If you prefer a smoother sauce, strain the cranberry skins through a fine sieve.
  • NOTE - For flavor variation, add ½ cup slivered almonds and 1 cup chopped apple bits with all the other ingredients (in Step #1).

  • In a medium saucepan, bring 1 cup water to a simmer. Add the cranberries, sugar, orange juice and zest. Stir until sugar is dissolved and the cranberries begin to pop, about 15 minutes.
  • Remove from heat. Divide relish in half, reserving half. Add orange segments to half of the cranberries. Stir to combine.
  • Add pepper jelly and fresh herbs to the remaining half. Stir to combine. Serve relishes in separate dishes.
