3/4 cup Pace Picante Sauce
3/4 cup fat free sour cream
1 tablespoon chili powder
2 medium tomatoes, chopped
3 cups cooked chicken breast strips (shredded)
12 corn tortillas (6-inch)
1 cup Kraft Healthy Favorites Fat Free Cheddar (grated)

Steps:

  • Directions.
  • MIX soup, picante sauce, sour cream, chili powder, tomatoes and chicken.
  • PLACE half the tortillas in 2-qt. shallow baking dish. Top with half the chicken mixture. Repeat layers. Sprinkle with cheese.
  • BAKE at 350°F for 40 minute or until hot. Serve with additional picante sauce and sour cream. Garnish with green onions.
  • Tips For 3 cups cubed cooked chicken, in medium saucepan over medium heat, in 6 cups boiling water, cook 1 1/2 pounds skinless, boneless thighs, cubed, 5 minute or until chicken is no longer pink.

1 can cream of mushroom soup
1 can cream of chicken soup
1 (10 ounce) can rotel
1 (4 ounce) can chopped green chilies
2 cups chicken broth
18 corn tortillas, cut into quarters
2 cups cooked chicken, chopped
3 cups shredded monterey jack and cheddar cheese blend

Steps:

  • Preheat oven to 350.
  • In large bowl, soak tortillas in broth for 2 minutes.
  • Remove tortillas and set aside.
  • Add soups, Rotel,& chilies to broth.
  • Mix well.
  • Grease a 9 x 13" baking dish.
  • Layer 1/3 tortillas, 1/3 sauce, 1/3 cheese& 1/2 the chicken.
  • Repeat layers twice, ending with tortillas, sauce, then cheese.
  • Cover with foil& bake for 45 minutes.
  • Remove foil, bake an additional 5-10 minutes.

Kim says I dont layer this casserole, I just mix it all together and sprinkle the cheese on top and then bake it. It's just as good and quicker. Also, you can use the healthier versions of soups and chips to make it less fattening and nobody will ever know. I found this recipe at Obesity Help. This recipe was posted by kimhouse. My family wasn't crazy over this recipe, but I posted it for safe keeping. When I made this recipe I took Kim's advice and mixed eveything together. I baked my chicken instead of boiling it. I was out of Rotel so I used petite diced tomatoes and a can of green chilies. I used canned chicken broth. I could only find 11 1/2oz bag of corn chips. I felt 16oz of cheese was to much so I used 8oz and mixed this in with everything.

1 small onion, chopped
4 boneless skinless chicken breasts
10 ounces cream of mushroom soup
10 ounces cream of chicken soup
15 ounces rotel tomatoes with diced chilies (1 can)
1 cup chicken broth
12 ounces corn chips, crushed in bag (1 large bag, didnt take the whole bag for me)
16 ounces monterey jack & colby cheese (2 packages)

Steps:

  • Boil chicken until done and cut into small chunks. Be sure to save 1 cup broth when chicken has finished cooking or use canned broth.
  • Mix cream of chicken, cream of mushroom, Rotel tomatoes and chicken broth; heat on stove.
  • Layer 1/2 of chicken, 1/2 broth mix, 1/2 of chips, 1/2 of onion, 1/2 cheese and repeat above.
  • Bake 35-40 minutes at 350 degrees in 9 1/2 x 13 inch greased pan.

2 tablespoons butter
1 onion, chopped
1/2 bell pepper, chopped
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can Rotel tomatoes & chilies
1/2 cup chicken broth (I used bouillon)
2 cups diced cooked chicken (I used a roasted chicken from Albertsons)
12 corn tortillas, ripped into bite sized pieces
2 cups shredded sharp cheddar cheese

Steps:

  • Preheat oven to 325°F
  • In large saucepan, saute the onion and pepper in the butter until tender (about 5 minutes).
  • Add soups, tomatoes, and broth.
  • Stir to combine.
  • Fold in the chicken until well blended.
  • Lightly grease a 9 x 13" baking dish.
  • Layer with 1/3 the tortillas, 1/3 the chicken mixture, and 1/3 the cheese.
  • Repeat layers twice more.
  • Bake for 40 minutes or until hot and bubbly.
  • About ten minutes before removing from the oven, sprinkle shredded cheese over the top; replace in oven until cheese is melted.
  • Remove from oven and let stand 10 minutes before serving.

2 tablespoons butter
1 medium onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
3 cups chopped cooked chicken
1 (10 3/4 ounce) can creamy chicken verde soup
1 (10 3/4 ounce) can cream of chicken soup
1 (10 ounce) can diced tomatoes and green chilies (Rotel)
1 teaspoon chili powder
1 teaspoon cumin
3 cups crushed tortilla chips, divided
2 cups shredded cheddar cheese, divided
chopped fresh cilantro

Steps:

  • Preheat oven to 325. In medium skillet over medium-high heat, melt butter, Add onion and green and red bell pepper. Saute for 8 minutes or until tender.
  • Stir in chicken, soups, tomatoes and green chilies, chili powder and cumin. Cook for 2 minutes, stirring occasionally.
  • Place half of the tortilla chips in bottom of baking pan. Layer half of the chicken mixture and half of the cheese on top of the chips. Repeat layers.
  • Bake, uncovered, for 45 minutes or until thoroughly heated. Garnish with cilantro to taste.
  • Note: Sometimes the Creamy Chicken Verde soup is hard to find (Campbells). If you have trouble, you can substitute another can of Cream of Chicken soup (or even Cream of Mushroom, Cream of Celery, etc.).
