1/2 pound butter, melted
3 cups chocolate sandwich cookie crumbs (recommended: Oreos)
1 gallon coffee ice cream (amount varies depending on size of the bowl)
2 cups chocolate fudge sauce
Whipped cream
Chocolate sauce

Steps:

  • Melt butter. Grind cookie crumbs in a food processor. Add butter to crumbs to make a formable consistency. Press into a very large pie pan leaving a slight mound in the center and the crust going all the way up on edge. Freeze the crust for several hours. Pack ice cream into a mixing bowl the same diameter as the pie pan. Freeze the ice cream in the bowl for several hours. Invert the ice cream onto the crust and work the ice cream out of the bowl. Pour fudge sauce on top of the mud pie. Cover with plastic and freeze again. Cut into slices to serve. Decorate with whipped cream and chocolate sauce.

9 chocolate graham crackers (1 sleeve)
1/3 cup chopped pecans
3 tablespoons unsalted butter, melted
1 stick unsalted butter, cut into pieces
2 ounces unsweetened chocolate, chopped
2 tablespoons all-purpose flour
Pinch of salt
1 1/4 cups granulated sugar
2 tablespoons light corn syrup
2 tablespoons coffee-flavored liqueur
1 1/2 teaspoons vanilla extract
3 large eggs
1 1/2 cups cold heavy cream
1 tablespoon confectioners' sugar
1/2 teaspoon vanilla extract
3 tablespoons finely chopped pecans
Chocolate sauce, for drizzling (optional)

Steps:

  • Make the crust: Preheat the oven to 375 degrees F. Pulse the graham crackers and pecans in a food processor until finely ground. Add the melted butter and process until moistened. Reserve 2 tablespoons of the chocolate crumb mixture for topping, then press the rest into the bottom and up the sides of a 9-inch pie plate. Bake until set, about 10 minutes; transfer to a rack and let cool.
  • Meanwhile, make the filling: Melt the butter and chocolate in a medium saucepan over medium heat, stirring. Remove from the heat, then stir in the flour and salt until smooth. Stir in the sugar, corn syrup, coffee liqueur and vanilla. Add the eggs, one at a time, stirring until smooth. Pour the filling into the prepared crust and bake until set and cracked on top (like a brownie), about 30 minutes. Transfer to a rack and let cool slightly, about 2 hours (the pie should still be slightly warm).
  • Make the whipped cream: Beat the heavy cream, confectioners' sugar and vanilla with a mixer until soft peaks form. Top the pie with the whipped cream, pecans and reserved chocolate crumb mixture. Drizzle with chocolate sauce.

Amy Robinette, who grew up in Spartanburg, S.C., is committed to adapting Southern desserts, which have often come to rely on supersweet and artificial ingredients, back to real food. In her kitchen, the chocolate chess pie her grandmother always made - filled with white sugar, evaporated milk, and cocoa powder - has been adapted to local ingredients. The pie gets its name from "pluff" mud, the sticky, sulfurous sediment that lines the bottom of the South Carolina tidal marshes; some say it is the true source of Lowcountry flavor. 1 1/2 cups/354 milliliters honey
4 1/2 tablespoons/32 grams dark cocoa powder
6 tablespoons/85 grams butter, cubed
3/4 cup/180 milliliters heavy cream
4 eggs
1 chilled, unbaked pie crust in a 9-inch pan (see recipe)
2 tablespoons/30 milliliters milk
Flaky sea salt, for topping

Steps:

  • Heat oven to 325 degrees. Combine honey, cocoa, butter and cream in a large heavy-bottom saucepan over medium heat. Cook, stirring occasionally, until butter is melted and mixture is just starting to simmer.
  • Meanwhile, lightly beat 3 eggs in a medium bowl. Very slowly add 1/2 cup of hot honey mixture, whisking constantly. Pour tempered egg mixture back into the pot, whisking constantly to keep the eggs from scrambling. Continue to cook, stirring, until mixture is smooth and thick, 3 to 4 minutes; remove from heat.
  • Remove pie crust from refrigerator and flute edges. Whisk together remaining egg and the milk until well combined. Brush egg wash over edge of pie dough, making sure to cover the ins and outs of the fluting.
  • Pour filling into pie shell and lightly tap pie plate on the counter to release any air bubbles. Bake pie for 45 minutes to 1 hour, or until filling is no longer soupy when jiggled. Allow pie to cool for at least 3 hours, then sprinkle with sea salt.

1 (6 ounce) chocolate sandwich cookie crumb crust (such as an OREO® crust)
1 quart coffee ice cream
1 (12 ounce) package miniature chocolate chips
1 (12 ounce) jar hot fudge topping
½ (18 ounce) package crushed chocolate sandwich cookies, divided
1 (8 ounce) container frozen whipped topping, thawed
¾ cup chocolate syrup

Steps:

  • Freeze the crust until firm, about 30 minutes. Place half the coffee ice cream into a bowl, and let it stand about 10 minutes to soften. Return remaining ice cream to the freezer. Mix softened ice cream with the mini chocolate chips. Spread the ice cream and chips in an even layer over the frozen crust. Cover with plastic wrap, and freeze for 2 hours.
  • Heat the topping in the microwave on low until warm and easy to pour, 30 seconds to 1 minute (do not let the sauce get very hot). Pour into a bowl. Set aside 2 tablespoons cookie crumbs for garnish; stir remaining cookie crumbs into the fudge topping. Remove the pie from the freezer, and layer the cookie crumbs and fudge topping mixture over the ice cream with chips. Cover with plastic wrap, and return to freezer for 2 hours.
  • Take the remaining frozen coffee ice cream out of the freezer, and allow to stand for about 10 minutes to soften. Layer the ice cream over the layer of cookie crumbs and fudge topping. Cover with plastic wrap, and return to freezer for 2 more hours.
  • Remove pie, and frost the top of the pie with the whipped topping. Top with the reserved cookie crumbs. Cover with plastic wrap, and return to freezer for 2 more hours to freeze the whipped topping layer. Cut the pie into serving pieces, and drizzle each serving with about 1 tablespoon of the chocolate syrup.

30 chocolate wafer cookies, crushed
8 tablespoons unsalted butter, melted and cooled
8 oz dark chocolate, 70-80% cacao, coarsely chopped
16 tablespoons unsalted butter
1 cup granulated sugar
1 cup dark brown sugar, packed
½ teaspoon kosher salt
2 teaspoons vanilla extract
4 large eggs
1 cup all purpose flour
¾ cup granulated sugar
⅓ cup unsweetened cocoa powder, not dutch-processed, plus more for garnish
⅓ cup all purpose flour

2 cups whole milk
2 tablespoons unsalted butter
1 ½ teaspoons vanilla extract
1 cup heavy cream, chilled

Steps:

  • Make the crust: Preheat the oven to 350°F (180°C). Grease a 9-inch (23 cm) springform pan with nonstick spray and line the sides with a strip of parchment paper, trimming it flush with the top of the pan.
  • In a large bowl, stir together the cookie crumbs and melted butter until the crumbs are evenly moistened. Transfer the crumbs to the prepared pan and use the bottom of a measuring cup to press them into an even layer over the bottom of the pan. Set the pan aside while you make the brownie layer.
  • Make the brownie layer: In a large glass bowl, combine the chocolate and butter and microwave on high power, 30 seconds or until melted and smooth.
  • In a separate large bowl, whisk together the granulated sugar, brown sugar, salt, vanilla, and eggs until lightened in color and foamy, about 1 minute. Pour in the melted chocolate mixture and whisk until smooth. Add the flour and stir until just combined.
  • Pour the batter over the crust in the pan and smooth out the top with a rubber spatula. Bake until a toothpick inserted halfway between the center and the edge comes out clean, about 40 minutes.
  • Meanwhile, make the pudding layer: In a medium saucepan, whisk together the granulated sugar, cocoa powder, flour, and salt until combined. Add the egg yolks and a splash of the milk and stir until it the mixture forms a thick, smooth paste. Add the remaining milk and whisk until smooth. Set the pan over medium heat and cook, stirring continuously, until the mixture starts to bubble and thicken, 8-10 minutes. Remove the pan from the heat, and add the butter and vanilla and stir until the butter has melted and the mixture is smooth and well combined.
  • When the brownie layer is ready, transfer the pan to a wire rack, pour the warm pudding over the brownie layer, and smooth out the top with a rubber spatula. Let cool to room temperature, about 1 hour. Cover and refrigerate for at least 4 hours, or up to 1 day.
  • When ready to serve, whisk the chilled cream in a medium bowl until it forms stiff peaks.
  • Remove the pie from the refrigerator. Remove the outer ring of the springform pan, then peel away and discard the strip of parchment paper and set the pie on a serving plate. Spread the whipped cream over the top of the pie, and dust with additional cocoa powder. Serve the pie chilled.

1 c sugar
2 large eggs, beaten
1/2 c butter, melted
1/2 c flour, plain
1/3 c cocoa
1/4 tsp salt
1 tsp vanilla
hot fudge sauce
3/4 c sugar
1/2 c cocoa
1 can(s) evaporated milk, 5oz
1/3 c corn syrup, light
1/3 c butter
1 tsp vanilla
large marshmellos and small marshmellos

Steps:

  • 1. Preheat oven to 350 degrees. Blend sugar and melted butter in an electric mixer; add eggs one at a time, just until blended. Combine flour, cocoa and salt. Add to the butter mixture. Stir in vanilla.
  • 2. Spray an 8-inch pie plate with cooking spray. Pour fudge mixture into pie plate. Bake at 350 degrees for 25 minutes or until almost set. Remove from oven; turn the oven to broil.
  • 3. Layer marshmellos on top of the pie, starting with the center, making a circle and working your way out around to the outer edges. Start with the largest marshmellos in the center outward and the smaller marshmellos on the outmost circles and filling in between the larger marshmellos. Stack them up until you have a mound, looking like a little mountain. Put pie back into the oven (now on broil) watching constantly until the marshmellos are browned on top and melted. Remove from oven. Top with fudge sauce.
  • 4. HOT FUDGE SAUCE: While pie is baking, combine sugar and cocoa in small saucepan; blend in evaporated milk and corn syrup. Cook over medium heat, stirring constantly, until mixture boils. Boil and stir approximately 1 minute. Remove from heat and stir in butter and vanilla. Drizzle over pie.

1/2 cup finely chopped pecans
2 tablespoons butter, melted

1 3/4 cups cold milk
1 (3 1/2 ounce) package chocolate flavor instant pudding and pie filling mix

Steps:

  • PREHEAT oven to 375°F Process wafer crumbs, pecans and butter; press firmly onto bottom and up side of 9-inch pie plate. Bake 10 min.; cool.
  • BEAT cream cheese and sugar in large bowl with electric mixer on medium speed until well blended. Gently stir in 1 cup of the whipped topping; spread over crust. Pour milk into medium bowl. Add dry pudding mix. Beat with wire whisk 2 minute or until well blended. Spoon over cream cheese layer.
  • REFRIGERATE several hours or until set. Top with remaining whipped topping just before serving. Store leftovers in refrigerator.
