I took that recipe from my health food store. I used to eat it when I was young, and just tried to do it by myself now... it's so easy! And it tastes as good as in my souvenir! :D

Number Of Ingredients 6

1/2 cup sunflower seeds
1/2 cup sesame seeds
1/2 cup honey
1/2 cup carob powder
1/2 cup peanut butter
1/4 cup shredded coconut (about)

Steps:

  • Crush sunflower and sesame seeds (or not if you want crunchier balls).
  • Mix all the ingredients except coconut.
  • Shape into bite-sized balls.
  • Roll the balls in the coconut.
  • Refrigerate (so that they get a little harder).

This is one essential holiday treat in our household. The peanutty, coconutty chewiness is irresistible... even to many people who've never tried carob.

Number Of Ingredients 5

1 cup smooth peanut butter (I use natural peanut butter- and you could try chunky)
1 cup agave nectar (the nectar's a perfect vegan alternative) or 1 cup corn syrup
1 cup carob powder, sifted (sift then measure)
1/2 cup sesame seeds
1/3 cup dried shredded coconut

Steps:

  • In a small saucepan, combine the peanut butter and sweetener. Stir over med-low heat until melty.
  • Remove from heat.
  • GRADUALLY add the carob powder and stir it in- ditto the sesame seeds.
  • It's easier to roll into balls once the mixture has cooled a little, so if you can, let it sit 5-10 minutes or even refrigerate.
  • Scoop up a chunk with a spoon and roll it into a walnut-sized ball (1 inch) in your fingers. Put it in a small bowl with the coconut and shake the bowl around till the carob ball is coated.
  • Store the balls in the fridge. They freeze great, but you'll have to let them thaw or they'll break your teeth!

My favourite breakfast, especially before training. You can make them in advance really quickly, and the recipe can be doubled or tripled if your appliances permit it. It's portable, on the go, and contains cocoa for added energy (can be replaced with carob if you don't want it). They freeze and thaw well if you make a lot (or you can eat them cold!), and keeping them in the fridge gives an excellent texture. Vary the ingredients depending on what you have on hand or what suits your tastes. Enjoy!

4 ounces nuts, ground (use a spice or coffee grinder)
4 ounces dried fruit, torn to be no larger than raisins
2 tablespoons cocoa powder (use carob for caffeine-free balls)

Steps:

  • Note : at step 2 you can add a couple drops of vanilla extract (or any other aroma), and/or a couple dashes of cinnamon and/or other spices to vary the taste. Btw you can really use whatever nuts/seeds and dried fruit you want! I like pumpkin seeds and coconut with apricot and cranberries.
  • Place all ingredients in a blender for 2 minutes, or until it starts to form clumps and pieces of fruit are barely visible.
  • Transfer the mixture to a bowl, and work it with your hands to see if it sticks together when pressed hard. If not, add water, a couple drops at a time, until it does.
  • Form into 16 half-ounce balls. You can store them on top of eachother in a container, they won't stick together and won't loose their shape if you carry them. I recommend refrigerating them overnight to let the flavours blend a little and the texture set.

1 cup pecans, soaked for 12 hours,drained,and dehydrated for 12 hours
1 cup walnuts, soaked for 12 hours,drained,and dehydrated for 12 hours
1/2 lb pitted dates
1/4 cup raw honey
1/2 teaspoon celtic sea salt
1/2 vanilla bean, ground to powder
2 tablespoons orange zest
carob powder, for coating balls

Steps:

  • Place pecans, walnuts, and dates in food processor and process until the mixture is ground fine.
  • Add honey, salt, vanilla, and orange zest to the nut and date mixture, and process until finely chopped.
  • Oil hands and roll mixture into quarter size balls.
  • Place carob powder on a plate and roll the balls in powder 2 times.
