These brownies feature neither sugar nor chocolate, rather they are sweetened with honey and use carob powder and brewed tea to give flavor.

2 cups whole spelt flour
1 cup carob powder
1 teaspoon salt
2 teaspoons baking powder
1 ½ cups honey
1 cup strong brewed vanilla hazelnut tea (such as Yogi®)
½ cup heavy cream
½ cup vegetable oil
2 eggs

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Mix the spelt flour, carob powder, salt, and baking powder together in a large bowl.
  • Stir the honey, brewed tea, cream, vegetable oil, and eggs together in a separate bowl. Add the honey mixture into the flour mixture, and stir to thoroughly combine; pour into an 8x11-inch baking dish.
  • Bake in the preheated oven until a toothpick inserted into the center comes out gummy rather than wet, about 45 minutes. Allow to cool before refrigerating overnight for best results.

1/3-cup carob powder
2 tsp. baking powder
1/3-cup honey
1/2-cup unsweetened applesauce
1 tsp. vanilla extract
1 cup water
1/4-cup chopped nuts (optional)

Steps:

  • In a large mixing bowl, combine flour, carob powder and baking powder. In a separate bowl, thoroughly mix remaining ingredients except nuts. Add dry ingredients to wet ingredients and mix well. Stir in nuts if using. Pour batter into a nonstick or lightly oiled 8-inch square baking dish. Bake at 350F for 35 minutes.

1/3 cup whole wheat flour
1/3 cup wheat germ (toasted or raw)
1/3 cup carob powder (or cocoa powder)
1/4 teaspoon salt
1/3 cup light olive oil
1/3 cup granulated sugar
1/3 cup clear honey
2 teaspoons vanilla extract
2 eggs, large
1 (7 ounce) can Reddi-wip topping (or generic clone)
1/2 cup pecans, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Lightly grease a 9 inch glass pie plate.
  • In a large mixing bowl, whisk together whole wheat flour, wheat germ, carob (or cocoa) powder, and salt.
  • In a medium mixing bowl, whisk together light olive oil, granulated sugar, clear honey, vanilla extract, and eggs.
  • Add wet ingredients to dry, and whisk until just combined; then pour batter into prepared glass pie plate.
  • Bake for 25 minutes.
  • Transfer baked brownie pie to a wire rack to cool completely; then cover, and refrigerate for 24 hours (for a more moist texture).
  • To serve: top each piece with 2 tablespoons (or more) of Reddi-Wip topping and 1 tablespoon of chopped pecans.

1/2 cup butter
1 egg
1 teaspoon vanilla
1 teaspoon orange peel
1 teaspoon lemon peel
1 cup pitted chopped dates
1/3 cup chatfield carob powder
1 cup rolled oats
1/2 cup pastry flour
1/2 cup wheat germ
1 teaspoon baking powder
1/2 teaspoon ground allspice
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/3 cup milk

Steps:

  • Combine butter and egg and beat well. Add vanilla, orange peel, lemon peel, dates and carob powder and combine thoroughly.
  • In a separate bowl, stir together oats, flour, wheat germ, baking powder and three spices. Combine the two mixes, add milk and beat until blended.
  • Spread batter in a 10x12 inch rimmed baking dish. Sprinkle with carob chips or nuts. Bake 25 minutes in a 350 degree oven. Cool on rack. Cut into squares.

These brownies are almost fat free, low sugar and provide around 100 calories each... They have a much lighter taste than regular brownies and admittedly lack some richness but they are still delicious, especially with a tiny bit of chocolate spread to finish them off!

Steps:

  • Preheat the oven to 190degrees (fan) Mix together the carob powder, flour, sugar and baking powder in a large bowl. In a separate bowl, mix the water, milk, eggs, oil and mashed bananas. Pour the wet into the dry ingredients with the vanilla extract and mix thoroughly.
  • Now add the chopped walnuts if using them. You could also add dark chocolate chips if you wish. At this point, if the mixture is too thick, add a little extra milk until it is looks thick but stir-able.
  • Transfer the mix to a greased, non-stick brownies tray (could use baking parchment but I didn't seem to need it).
  • Cook in the preheated oven for around 20-30 minutes - the brownies will feel firm to the touch, not wobbly like normal brownies.

These are dense, moist, and deeply carob-y. I like to serve them chilled very cold with whipped cream. They are more fudgelike than cakelike. This recipe comes from my sister who served them to me after my son was born. I believe she got this from the "Deaf County Country Cookbook."

2 eggs, separated
1/2 cup sulphured molasses or 1/2 cup maple syrup

Steps:

  • Mix flours, carob powder, and salt together in a large bowl.
  • In a small bowl combine egg yolks, molasses, oil, water, and vanilla.
  • Add to the flour and mix well.
  • Add nuts and stir.
  • Beat the egg whites until stiff and fold into batter.
  • Spread in an oiled 8 inch square pan.
  • Bake 25-35 minutes at 325°F.
