Time 1h50m

Number Of Ingredients 17

2 pounds boneless pork shoulder or pork butt (diced into (1.5-2) inch chunks)
1 tablespoon butter
1 tablespoon olive oil
1 small onion (chopped)
2 garlic cloves (minced)
½ teaspoon dried thyme
½ teaspoon dried rosemary
2 bay leaves
salt and pepper to taste
2 cups yukon potatoes peeled and diced
2 large carrots (cut into 1-inch chunks)
2 large ribs celery (roughly chopped)
4 cups chicken broth
15 ounces canned diced tomatoes (undrained)
1 cup frozen green beans
2 tablespoons freshly minced parsley cup
1-2 tablespoons cornstarch (plus an equal amount of water or broth)

Steps:

  • Cut pork into 1-inch chunks (or a little larger).
  • Heat a large soup pot or dutch oven on the stove over medium-high heat. Melt 1 tablespoon each oil and butter. Add pork, onions and celery and brown for several minutes on all sides; pork does not have to be cooked all the way through.
  • Add garlic, dried thyme, rosemary and bay leaves and cook for about a minute, then add broth and tomatoes (with the juice). Bring to a boil, reduce heat to low and simmer for about an hour or until pork is tender.
  • Add potatoes, carrots, and green beans to the stew and bring to a boil. Reduce the heat to low again and cover. Simmer for an additional 15-20 minutes or until vegetables are tender and broth is slightly thickened.
  • To thicken the stew: In a small bowl, whisk together cornstarch and water or broth with a fork until smooth. Stir in the cornstarch slurry and simmer, uncovered, for 5-10 minutes or until thickened. Stir in fresh minced parsley.

Classic Homestyle Pork Stew image

This easy and delicious homestyle pork stew is the perfect hot, filling meal that's loaded with root vegetables and tender, falling-apart pork shoulder.

Provided by Karlynn Johnston

Categories     Main Course     Soup

Number Of Ingredients 19

2 1/2 pounds pork shoulder (cut into 1/2 inch pieces)
1/2 cup flour
1/2 teaspoon salt
1/2 teaspoon pepper
6 slices thick cut bacon (diced)
1 medium white onion (diced)
2 tablespoons minced garlic
4 cups beef stock
2 tablespoons Worcestershire Sauce
2 tablespoons tomato paste
1/3 cup red wine (optional)
1 teaspoon dried rosemary
1 teaspoon dried thyme
3-4 medium carrots (washed and cut into 1-inch chunks)
3 large russet potatoes (washed and cut into 1-inch chunks)
2 stalks celery (sliced)
1 cup sliced white mushrooms
2 bay leaves
fresh parsley to garnish

Steps:

  • Whisk together the flour, salt and pepper. Place the pork in the flour mixture and toss until the pork is coated. Shake off the excess.
  • In a large Dutch oven over medium high heat, cook the bacon until it's tender crisp. Remove the bacon and drain on a paper towel lined plate, leaving the drippings.
  • Add in the pork and cook in batches until all sides of the cubes are browned. Remove and place on a plate. Add in the onions and saute for 6-7 minutes, or until soft. Add in the garlic and saute another 2 minutes until browned and fragrant.
  • Whisk together the broth, Worcestershire, tomato paste, rosemary and thyme. (add red wine now as well if desired).
  • Pour a small amount of the stock mixture into the bottom of the Dutch oven and deglaze by scraping the browned bits off of the bottom of the pot. Pour more stock mixture in as needed until the bottom is cleaned and the browned bits have dissolved into the liquid, then add the rest of the broth.
  • Add the pork and the bacon back into the pot.
  • Add in the vegetables and bay leaves and then stir until combined.
  • Bring the mixture to a low boil, cover and reduce the heat.
  • Cook for 40-50 minutes, until the pork is fork tender.
  • Remove and serve.

Pork Stew: Carne Adovada image

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 4h40m

Yield 8 servings

Number Of Ingredients 15

2 dried red chile peppers
1 teaspoon coriander seeds
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon black peppercorns
2 teaspoons salt
2 pounds cubed pork
2 tablespoons all-purpose flour
2 tablespoons butter, cubed
2 tablespoons grape seed oil
1 large white onion, minced
3 garlic clove, lightly crushed with the side of a knife blade, and minced
1 tablespoon chili powder
1 tablespoon paprika
4 cups water

Steps:

  • Preheat oven to 250 degrees F. Spread all the spices (chile, coriander, cumin, oregano, peppercorns) on a sheet of aluminum foil with the edges turned up to avoid spillage and toast the spices for a few minutes. Transfer the toasted spices to a molcajete or mortar and pestle and grind together.
  • Sprinkle the pork cubes with the spices, covering all surfaces of the meat as much as possible. Let the pork sit covered in the refrigerator for 2 hours.
  • Create a beurre manie by mashing the flour into the butter in a small bowl. Set aside until needed as a thickener for the stew.
  • Heat the grape seed oil in a deep saute pan over medium-high heat until it begins to shimmer. Add the pork cubes and brown on all sides. Lower heat to medium and add the garlic and onion and stir to combine flavors. Cook until the onion turns translucent, then stir in chili powder and paprika. Add 4 cups water and reduce heat to low. Cover and let simmer until fork tender, about 2 hours. Add water as needed throughout the cooking process. In the last 30 minutes of cooking time, add the beurre manie to thicken. Serve hot.

PORK & APPLE STEW WITH PARSLEY & THYME DUMPLINGS

Pork & apple stew with parsley & thyme dumplings image

This healthy family supper has dumplings that soak up all the flavours of cider, mustard and a hint of apple, and it's 3 of your 5-a-day

Provided by Sara Buenfeld

Categories     Dinner, Main course, Supper

Time 2h

Number Of Ingredients 21

1 tbsp rapeseed oil
2 onions , halved and sliced
3 celery sticks , thickly sliced
2 bay leaves
1 tbsp picked thyme leaves
500g lean pork fillet , cut into large chunks
2 tsp English mustard powder
4 large garlic cloves , grated
2 tbsp spelt flour
4 tbsp cider vinegar
800ml bouillon or chicken stock
1 Granny Smith apple, peeled, cored and cut into chunks
2 leeks , thickly sliced
4 carrots , cut into chunks
140g spelt flour
1 tsp baking powder
1 tsp English mustard powder
2 tbsp finely chopped flat-leaf parsley
1 tbsp picked thyme leaves , plus a few sprigs to garnish
2 tbsp bio yogurt
2 tbsp rapeseed oil

Steps:

  • Heat 1 tbsp of the oil in a flameproof and ovenproof dish. Add the onions, celery, bay and thyme, and fry for about 8 mins until softened. Add the pork and cook for a few mins until it changes colour, but it doesn't need to brown as you don't want to overcook it.
  • Stir in the mustard powder, garlic, flour and vinegar, then pour in the bouillon, stirring to prevent any lumps forming.
  • Add the apple, leeks and carrots, bring the liquid to the boil, then reduce to a simmer. Cover the pan and simmer for 1 hr, stirring occasionally, until the pork and vegetables are tender.
  • When the stew is nearly cooked, heat oven to 190C/170C fan/gas 5. To make the dumplings, tip the flour, baking powder, mustard powder, parsley and thyme into a bowl and stir to combine. Put the yogurt in a jug, make up to 100ml with water, then stir in the oil. Lightly stir the liquid into the flour to make a soft, slightly sticky dough. Divide the dough equally into eight and shape into balls. Drop them on top of the stew, drizzling each one with the remaining oil. Bake for 20 mins until the dumplings are golden. Scatter with the extra thyme, if you like, before serving.

PORK STEW

Pork Stew image

I always made this stew with beef, but pork is so much better.I made this according to my husband's likes. It is good with jean's Recipe #65340

Provided by out of here

Categories     Stew

Time 2h30m

Yield 6 serving(s)

Number Of Ingredients 11

6 boneless pork chops, cubed
3 tablespoons butter
6 potatoes, cubed
7 carrots, sliced thick

Steps:

  • In a large Dutch oven pan, put the butter and the cubed pork. Cook until all the pork is browned, about 30 minutes.
  • Add the onion, and the chicken bouillon and a little chicken stock. Let this simmer until tender (this is how you get good gravy on the stew).
  • When pork is done, add the vegetables.
  • Stir all together and add the chicken broth and enough water to cover the vegetables.
  • Simmer until the vegetables are done.
  • To thicken the gravy, I use the peppered gravy mix in a 1/2 cup water.

20 SOUP AND STEW RECIPES WITH PORK BROTH - FOOD & WINE
20-soup-and-stew-recipes-with-pork-broth-food-wine image

From foodandwine.com
Estimated Reading Time 7 mins
  • Pork-and-Cider Stew. This hearty stew from chef Fernanda Milanezi is super-simple to make for a crowd. It’s finished with heavy cream, which amplifies the wonderful apple flavor.
  • Yucatán Pork Stew with Ancho Chiles and Lime Juice. Tia Harrison breaks down a pig each week at Avedano’s and finds making stew a versatile way to use cuts like pork shoulder, shanks and belly.
  • Simple Pork Posole. Mexican posole is typically a thick, hearty soup made with hominy (chewy dried corn kernels with the hull and germ removed). For his version, Ethan Stowell slow-simmers chunks of pork butt in water with onion and garlic to create a dish that’s appealingly brothy.
  • Shoyu Ramen. After visiting New York City’s top ramen spots (including Ippudo NY, Sapporo and Momofuku Noodle Bar), Grace Parisi created her dream ramen with a pork-and-chicken-based broth that gets extra depth of flavor from kombu (seaweed) and shoyu (Japanese soy sauce).
  • Pork Cheek and Black-Eyed Pea Chili. Michael Symon defines himself as a “porketarian,” saying he can’t get enough of the meat. For his luscious chili, he uses incredibly flavorful and succulent pork cheeks—an unusual cut worth seeking out.
  • Pork-and-Green-Chile Stew. A mix of mild chiles (poblano, Anaheim) and hot ones (serrano) gives body and heat to this quick braise made with boneless pork shoulder (ask your butcher to trim it for you).
  • Pork Stew with Cockles and Spicy Red Pepper Sauce. This combination of briny cockles and smoky pork is traditional in southern Portugal’s Alentejo region, though the fresh red chiles in the sauce here add a distinctive twist (for a sweeter variation, use red bell peppers instead).
  • Slow Cooker Ham Hock and Chickpea Stew. Marcia Kiesel credits split pea soup, one of her favorites, as the inspiration for this hearty stew. Like split peas, chickpeas need to simmer for a long time, making them great for a slow cooker.
  • White Bean and Ham Soup. When Grace Parisi was growing up, her mother made white bean and escarole soup every Friday. To transform the soup into a main course, Parisi substitutes ham and spiced croutons for the greens.
  • Pork-and-Kale Soup with Sizzling Puffed Rice. ”I love food that makes noise,“ says Edward Lee. When F&W challenged the Top Chef Season 9 contestant to make a fast dish with pork, kale and white wine, he created a deeply flavorful soup, then added crumbled rice cakes that crackle as they hit the broth.
