1 batch carne asada
12 to 16 corn tortillas, homemade or store-bought
1 batch guacamole (or 2 avocados, sliced)
toppings: chopped white onion, chopped fresh cilantro, salsa (red, green or pico de gallo), crumbled queso fresco, sour cream, sliced radishes, sliced jalapeños

Steps:

  • Marinate and cook the steak according to recipe instructions.
  • While the steak cooks, go ahead and prepare the guacamole and whatever other toppings you would like. (If you are making homemade corn tortillas, you can also make those while the steak is marinating.)
  • Once the carne asada is cooked and has rested for at least 10 minutes, slice or dice the steak into bite-sized pieces. Fill each corn tortilla with your desired amount of steak and toppings.
  • Then serve up the tacos immediately and enjoy!

2 cups vegetable stock or broth
1 (28-ounce) can diced tomatoes
2 chipotle peppers
1 yellow onion, chopped
4 cloves garlic, chopped
4 pounds beef round roast
2 tablespoons ground cumin
2 tablespoons chili powder
2 teaspoons salt
2 teaspoons freshly cracked black pepper
2 poblano peppers
4 tomatillos, chopped
2 avocados, halved, pitted and flesh diced
2 cloves garlic, chopped
1 lime, juiced
1/4 bunch cilantro, leaves chopped
1 tablespoon white vinegar
Pinch salt and freshly cracked black pepper, plus more for seasoning
3 cups canola oil
24 corn tortillas
24 small flour tortillas
1 small head green cabbage, shredded
2 cups crumbled queso fresco

Steps:

  • Preheat the oven to 325 degrees F.
  • Add the vegetable stock, tomatoes, chipotle peppers, onions and garlic to a Dutch oven and stir to combine.
  • In small bowl, combine the cumin, chili powder, salt and black pepper. Sprinkle the spice mixture over the beef so that it is evenly coated. Put the seasoned beef into the Dutch oven and cover. Braise in the oven until the meat is fork tender, about 3 hours. Remove the beef from the pot and put it into a baking dish. Shred with 2 forks and drizzle with some of the braising liquid to keep the meat moist. Cover with some aluminum foil until ready to serve.
  • Preheat a broiler.
  • Put the poblano peppers on a sheet pan under the broiler for 8 minutes, turning every 2 minutes until the skins are charred. Remove the pan from the broiler, put the peppers into a bowl, cover with plastic wrap and let them sit to allow the skin to separate from the flesh, about 10 minutes. Core, seed and peel the charred skin from the peppers.
  • Add the peppers along with the remaining salsa ingredients, except 3/4 of the diced avocado, to a blender. Puree the mixture until smooth. Pour the mixture into a medium bowl, and add the remaining diced avocado. Gently toss the salsa with a rubber spatula to coat the avocado. Taste and adjust the seasonings with more salt and pepper, if needed. Set aside
  • Bring the canola oil to 350 degrees F in a large skillet over medium heat. Fry the corn tortillas in batches until crispy but still slightly pliable, about 2 to 3 minutes. Transfer them to a sheet tray lined with paper towels to drain any excess oil.
  • Put the flour tortillas in a damp towel and microwave for 45 seconds on high to soften them. Arrange a fried corn tortilla onto each flour tortilla. Spoon some of the beef onto the fried tortilla, top each taco with some shredded cabbage, 2 tablespoons green salsa and 1 tablespoon queso fresco. Repeat with the remaining ingredients. Arrange on a serving platter and serve.

1 large garlic clove, minced
1/2 cup orange juice
1 tablespoon lime juice
2 tablespoons canola oil or 2 tablespoons vegetable oil
1 tablespoon soy sauce
2 tablespoons cilantro leaves
1 tablespoon honey
1/2 teaspoon chili powder
1 lb flank steaks or 1 lb skirt steak, fat trimmed
1 teaspoon kosher salt
1 large mango, diced (about 1 cup)
1/4 cup red onion, minced
1 jalapeno pepper, seeds removed and minced
2 tablespoons lime juice
1 tablespoon cilantro, chopped
1/4 teaspoon chili powder
6 (6 inch) flour tortillas (or whole wheat tortillas or corn tortillas)
sliced avocado (optional)
colby-monterey jack cheese, shredded (optional)

Steps:

  • Carne Asada:.
  • In a blender, combine chipotle pepper, garlic, orange juice, lime juice, oil, soy sauce, cilantro, honey and chili powder to make marinade. Place steak in a plastic seal bag and pour in marinade; massage to coat evenly. Refrigerate for at least 3 hours and not more than 8 hours.
  • Preheat a charcoal or gas grill to medium-high. Remove the steak from the marinade, season with salt and grill for about 4 minutes a side. Transfer to a cutting board and rest for 5 to 10 minutes. Once meat has rested, slice steak across the grain diagonally.
  • Mango Salsa:.
  • Combine all ingredients in a bowl and stir. Refrigerate until ready to serve.
  • To Assemble:.
  • Warm the tortillas for about 30 seconds on each side in a dry skillet or on the grill, until toasty and pliable.
  • Serve steak strips on the warmed tortillas with avocado, cheese then topping with mango salsa.

1 teaspoon ground cumin
2 cups diced fresh mango
1 jalapeno pepper, seeded and minced
2 tablespoons minced red onion

2 tablespoons fresh lime juice
Salt and ground black pepper
8 taco shells
1 cup shredded Romaine lettuce
1 cup grated Cheddar (regular or reduced-fat)

Steps:

  • Spoon lasagna filling into a large skillet and add chili powder and cumin. Bring mixture to a simmer over medium heat. Simmer 5 minutes. 2 pounds flank or skirt steak, trimmed of excess fat
1 recipe Mojo, recipe follows
Olive oil, for coating the grill
Kosher salt and freshly ground black pepper
16 (7-inch) corn tortillas
Shredded romaine or iceberg lettuce, for serving
Chopped white onion, for serving
Shredded Jack cheese, for serving
1/2 cup Pico de Gallo, recipe follows
2 limes, cut in wedges for serving
4 garlic cloves, minced
1 jalapeno, minced
1 large handful fresh cilantro leaves, finely chopped
Kosher salt and freshly ground black pepper
2 limes, juiced
1 orange, juiced
2 tablespoons white vinegar
1/2 cup olive oil
4 vine-ripe tomatoes, chopped
1/2 medium red onion, chopped
2 green onions, white and green parts, sliced
1 Serrano chile, minced
1 handful fresh cilantro leaves, chopped
3 garlic cloves, minced
1 lime, juiced
1/4 cup extra-virgin olive oil
1 teaspoon kosher salt

Steps:

  • Lay the flank steak in a large baking dish and pour the mojo over it. Wrap tightly in plastic wrap and refrigerate for 1 hour or up to 8 hours, so the flavors can sink into the meat. Don't marinate the steak for more than 8 hours though, or the fibers break down too much and the meat gets mushy.
  • Preheat an outdoor grill or a ridged grill pan over medium-high flame (you can also use a broiler). Brush the grates with a little oil to prevent the meat from sticking. Pull the steak out of the mojo marinade and season the steak on both sides with salt and pepper. Grill (or broil) the steak for 7 to 10 minutes per side, turning once, until medium-rare. Remove the steak to a cutting board and let it rest for 5 minutes to allow the juices to settle. Thinly slice the steak across the grain on a diagonal.
  • Warm the tortillas for 30 seconds on each side in a dry skillet or on the grill, until toasty and pliable.
  • To make the tacos, stack up 2 of the warm tortillas, lay about 4 ounces of beef down the center, and sprinkle with some lettuce, onion, and cheese. Top each taco with a spoonful of the Pico de Gallo salsa and garnish with lime wedges. Repeat with the remaining tortillas.
  • In a mortar and pestle or bowl, mash together the garlic, jalapeno, cilantro, salt, and pepper to make a paste. Put the paste in a glass jar or plastic container. Add the lime juice, orange juice, vinegar, and oil. Shake it up really well to combine. Use as a marinade for chicken or beef or as a table condiment.
  • Yield: approximately 1 1/4 cups
  • In a mixing bowl, combine all ingredients together. Toss thoroughly. Let it sit for 15 minutes hour to allow the flavors to marry.
  • Yield: 2 cups
