This recipe is from an old (1970s) Betty Crocker cookbook. I misplaced the recipe, and after years of searching I finally found it. I'm adding it to food.com for safekeeping. This is a sweet pineapple-based sauce; serve with baked ham or grilled ham steaks. It's a great substitute for the raisin-mustard sauce that is traditionally served with ham. You can substitute nutmeg if you don't like cloves. Prep and cook times are approximate. This makes enough sauce for 2 - 4 people. You can scale up the recipe to serve more. Leftovers can be reheated on the stove or in the microwave.

1 (8 ounce) can pineapple chunks in juice (not in syrup)
1/4 cup brown sugar, packed
1 tablespoon cornstarch
1/8 teaspoon ground cloves
1/3 cup orange juice
1/2 cup raisins, light or golden
water

Steps:

  • Drain pineapple; reserve juice.
  • Add water, if needed, to the reserved juice to equal 1/3 cup.
  • In a small saucepan combine brown sugar, cornstarch, and cloves.
  • Stir in orange juice and the water/pineapple juice mixture.
  • Cook over medium heat, stirring until thick and bubbly.
  • Add pineapple and raisins, and cook (and stir) 2 more minutes.

1 cup chili sauce
8 green onions, thinly sliced
2 -4 jalapeno peppers, seeded and chopped
3 cloves garlic, minced
2 tablespoons cooking oil
1/4 cup lemon juice
1/4 cup chicken broth or 1/4 cup water
1 teaspoon salt
1 teaspoon ground ginger
1 teaspoon ground allspice

Steps:

  • In a medium mixing bowl combine chili sauce, green onions, jalapeno peppers, garlic, oil, lemon juice, chicken broth or water, salt, ginger, and allspice.
  • Pour desired amount of sauce into small bowl.
  • Brush on chicken or pork frequently the last 10 minutes of grilling.
  • Makes 2-1/3 cups (enough for 6 to 8 pounds chicken pieces or 3 to 4 pounds boneless pork).
  • Store unused portion of sauce in refrigerator up to 3 weeks.

1/2 cup packed brown sugar
2 tablespoons cornstarch
1 teaspoon ground mustard
1-1/2 cups water
1/2 cup raisins
2 tablespoons white vinegar
2 tablespoons lemon juice
1/4 teaspoon grated lemon zest
2 tablespoons butter

Steps:

  • In a saucepan, combine brown sugar, cornstarch and mustard. Stir in the water, raisins, vinegar, lemon juice and zest until blended. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in butter until melted. Serve warm over sliced ham.

1 cup sugar
¼ cup mustard powder
2 tablespoons all-purpose flour
2 egg yolks, beaten
2 cups half-and-half
1 cup white vinegar

Steps:

  • In a medium bowl, whisk together the sugar, mustard powder and flour. Mix in egg yolks until smooth. Heat half and half in the top half of a double boiler, or in a metal bowl over a pan of simmering water until just short of boiling. Stir in the egg yolk and sugar mixture, and then stir in the vinegar. Continue to stir over simmering water until thickened, about 5 minutes.

  • In a large stockpot of large container, add the ham, fill the container or pot with water to cover. Soak the ham for 24 hours, changing the water 3 times.
  • Slice the celery stalk, peel and cut the carrots. Stick the cloves to the onion and set everything aside.
  • Remove the ham from the soaking liquid and rinse. In another stockpot, place the ham, celery, carrots, onion, bouquet garni made with 2 sprigs of parsley, 1 large sprig of thyme and one large bay leaf. Add wine and peppercorn. You may add a little bit of salt if desired but not necessary. Cover with water and bring to a boil. Let ham cook for about 2 hours over low to medium heat.
  • Remove ham from cooking liquid. If desired remove rind from ham. Pour the pineapple syrup over ham and sprinkle brown sugar all over ham also. Place ham under the broiler and let caramelized on all sides. Remove immediately after ham is well caramelized. Set aside
