This delicious concoction is the traditional rum punch recipe used in the West Indies, passed down for years. The old rhyme goes, 'One of sour, two of sweet, three of strong, four of weak.' Any fruit juice can be used. Serve chilled over ice, with fruit garnishes and a sprinkling of grated nutmeg.

1 cup fresh lime juice
2 cups simple syrup
3 cups amber rum
4 cups orange juice
4 dashes bitters
freshly grated nutmeg

Steps:

In a pitcher, combine lime juice, simple syrup, rum and orange juice. Add a few dashes of bitters and some grated nutmeg to taste. Serve chilled over ice.

Ingredients

1 cup sugar
1 vanilla bean, split lengthwise
1 ounce gold rum
1/2 ounce bourbon
1 ounce heavy cream
Freshly grated nutmeg, for sprinkling

Steps:

Make the vanilla syrup: Combine 1 cup water, the sugar and vanilla bean in a small saucepan. Bring to a simmer over low heat, stirring until the sugar dissolves. Remove from the heat and let cool, then remove the vanilla bean.
Make the cocktail: Combine 1 ounce vanilla syrup, the rum, bourbon and heavy cream in a cocktail shaker with ice. Shake until frothy.
Strain the drink into a coupe glass. Sprinkle with nutmeg.

4 cups orange juice
4 cups pineapple juice
1/2 cup lime juice or 1/2 cup lemon juice
1/2 cup honey
4 cups ginger ale
1 cup rum
1 cup pineapple chunk
1 cup melon ball

Steps:

Mix honey and juices together. They will mix well if both are at room temperature.
Chill for 3 hours or overnight.
Before serving add rest of ingredients.
Pour over lots of ice.
Garnish with citrus slices.

This is a refreshing drink found all over the Caribbean. It can be made into an adult beverage with the addition of a little rum.

Ingredients

3 lbs carrots
6 cups water
14 ounces sweetened condensed milk
1 teaspoon vanilla
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

Clean the carrots and grate them, or chop them into a food processor or blender. Add the water and pulse until pureed. It is best to do this in two batches. Strain into a bowl using a fine strainer or cheese cloth. Squeeze the pulp to get all of the juice. You can strain a second time if you prefer less pulp in the juice.
Add the vanilla, cinnamon and nutmeg and stir well. Add the sweetened condensed milk to your taste. Start with 1/2 a can and add until it is sweet enough for you. Chill for a couple of hours and serve over ice.

2 cups dark rum
1 cup curaçao or other orange liqueur
1/2 cup grenadine
1 block of ice or 5 cups ice cubes

Steps:

Stir first 7 ingredients in large punch bowl. Refrigerate until cold. (Can be made 6 hours ahead. Keep refrigerated.)
Add block of ice or ice cubes to bowl with punch. Ladle punch into glasses.
