I wanted meat loaf but also something unique, so I decided to spice up my usual recipe by using Jamaican jerk seasoning. My family loved it! I completed the meal by serving it with string beans and yams. -Iris Cook, Batavia, Illinois

2 large eggs, lightly beaten
1 medium onion, finely chopped
1/2 cup dry bread crumbs
2 tablespoons green pepper, finely chopped
1 tablespoon Caribbean jerk seasoning
2 garlic cloves, minced
2 teaspoons garlic powder
2 teaspoons dried cilantro flakes
1 teaspoon dried basil
3 pounds ground beef
GLAZE:
1/2 cup packed brown sugar
2 tablespoons peach nectar or juice
2 tablespoons ketchup
2 teaspoons barbecue sauce
Dash garlic powder
Dash pepper

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 9 ingredients. Add beef; mix lightly but thoroughly. Transfer to 2 ungreased 9x5-in. loaf pans. Mix glaze ingredients; spread over tops. Bake until a thermometer reads 160°, 40-50 minutes. Let stand 10 minutes before slicing., Freeze option: Securely wrap cooled meat loaf in foil, then freeze. To use, partially thaw in refrigerator overnight. Unwrap meat loaf; reheat on a greased 15x10x1-in. baking pan in a preheated 350° oven until heated through and a thermometer inserted in center reads 165°.

Comfort food recipe with a twist! Top this traditional ground beef and pork dish with pineapples and sweet cherries.

2 lb ground beef
2 cups bread crumbs
2/3 cup barbecue sauce
2 eggs, beaten
1 1/2 tsp salt
dash of pepper
1 19oz can sliced pineapple drained with syrup reserved for sauce
Maraschino cherries, for garnish
Reserved pineapple syrup
19 oz can water
1 tbsp cornstarch
1/2 cup barbecue sauce

Steps:

  • Preheat oven to 350F.
  • In a large bowl, mix together ground beef, bread crumbs, barbecue sauce, eggs, salt and pepper. Pack into a loaf pan.
  • Bake for 1 hour 5 minutes. Invert on a platter and cut into slices. Add a slice of pineapple between each slice of meatloaf. Insert a cherry inside each slice of pineapple.
  • To make the sauce, add reserved pineapple syrup, water and cornstarch to a pot and bring to a boil. Stir constantly. Turn down heat to medium and continue to cook until thickened. Stir in barbecue sauce.
  • Pour sauce over meatloaf and serve.

6 green onions, chopped fine
3 scotch bonnet peppers, seeded and chopped
2 garlic cloves, chopped
2 tablespoons white wine vinegar
1 tablespoon brown sugar
3/4 tablespoon fresh ground allspice
1 teaspoon dried thyme
1/4 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Seed the peppers, peel the garlic.
  • Add everything to a blender or processor and blend well.
  • Store in a covered container.
  • Use for basting on pork or beef.

This is NOT your same old meatloaf, mon! It's slightly sweet...slightly spicy...totally delicious. Try it with Jamaicanned Sweet Potatoes and Corn Bake (recipe #382814).

2 teaspoons coriander
2 teaspoons brown sugar
4 garlic cloves
1 tablespoon olive oil
1 1/2 teaspoons thyme
1 1/2 teaspoons salt
1 teaspoon black pepper
1 teaspoon cinnamon
3/4 teaspoon nutmeg
1 small jalapeno pepper
1/2 tablespoon chili sauce (Vietnamese chili sauce or 1/4 teaspoon red pepper flakes and 1/4 teaspoon oil)
1/8 cup naranja agria juice (substitute lime, lemon or orange juice)
1/8 cup soy sauce
1 lb ground beef
1 batch jerk sauce (see recipe above)
1 egg
3 tablespoons progresso panko breadcrumbs (or any unseasoned bread crumbs)
1 cup ketchup
1 tablespoon brown sugar
1 teaspoon soy sauce
1 teaspoon Worcestershire sauce
1 1/2 tablespoons dark corn syrup (substitute light corn syrup or pancake syrup, if necessary)
1/2 teaspoon thyme
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4-1/2 teaspoon cayenne pepper (depending on how spicy you want it)
1 dash cinnamon
1 dash nutmeg
1 teaspoon dry sherry
1 teaspoon apple cider vinegar

Steps:

  • Preheat oven to 350 degrees.
  • Put all JERK SAUCE ingredients in food processor and pulse until well blended.
  • Put ground beef in medium mixing bowl, add JERK SAUCE, egg and breadcrumbs.
  • Mix ingredients thoroughly (I wash my hands and dig in, but you can use a plastic or wooden spoon).
  • Form an oblong meatloaf and put in 350 degree oven for 20 minutes.
  • Remove and add MEATLOAF TOPPING using spatula to spread on top and on sides of meatloaf.
  • Continue cooking for 25 to 35 more minutes.

1 1/2 lbs lean ground beef or 1 1/2 lbs ground turkey
3/4 cup quick oats (uncooked) or 3/4 cup old fashioned oats (uncooked)
3/4 cup onion, finely chopped
1/2 cup catsup
1 egg, lightly beaten
1 tablespoon Worcestershire sauce (could use soy sauce)
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons caribbean jerk seasoning
1 (8 ounce) can crushed pineapple (in natural juices)
1 (9 ounce) jar mango chutney
1 jalapeno pepper, finely chopped (optional)
1 tablespoon chopped of fresh mint or 1 tablespoon cilantro

Steps:

  • Heat oven to 350 degrees.
  • Combine meat, oats, onion, catsup, egg, worcestershire sauce, garlic, salt, pepper, and Caribbean jerk seasoning in large bowl; mix lightly but thoroughly.
  • Shape meatloaf mixture into 10x6-inch loaf on rack of broiler pan. Bake 30 minutes.
  • Drain pineapple, reserving juice for another use. Combine pineapple, chutney, jalapeño pepper and mint; mix well.
  • Remove meatloaf from oven; spoon 1/2 cup pineapple mixture over top of meatloaf. Continue baking 20 to 25 minutes, until meatloaf is to medium doneness (160 degrees for beef, 170 degrees for turkey), until not pink in center and juices show no pink color.
  • Let stand 5 minutes before slicing. Serve with remaining pineapple mixture.

1 cup cooked white rice
1 cup canned black beans, rinsed and drained
1 cup thinly sliced scallion
1/2 cup firm white breadcrumb
2 tablespoons lime juice

3 garlic cloves, minced
2 teaspoons lime zest
2 tablespoons chopped fresh thyme (or 2 t. dried)

  • In a small saucepn, heat the jelly until melted; spread over the top of the loaf.
  • Bake for 1 hour or until the loaf is firm and the top is richly browned.

1 cup boiling water
2/3 cup couscous
1 cup red bell pepper, seeded and diced
2 teaspoons dried thyme
2 teaspoons curry powder
1 teaspoon cumin
1 teaspoon allspice
1 teaspoon ground ginger
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
2 tablespoons canola oil
as needed vegetable oil cooking spray

Steps:

  • In small cup or bowl, combine water and couscous; cover and allow to stand 5 minutes plus or until couscous has absorbed all water.
  • In small non-stick skillet, over medium-high heat, saute red bell pepper, thyme, curry powder, cumin, allspice, ginger, salt, black pepper, paprika and cayenne pepper in oil 1 to 2 minutes; allow to cool.
  • In medium bowl, combine turkey, bell pepper mixture and couscous. Shape mixture into a round loaf using a 9-inch pie plate or a rectangular loaf using a 8-by-4-by-2-inch pan. Spray pan with vegetable cooking spray.
  • Bake at 350 degrees F for 35 to 45 minutes or until meat thermometer reaches 165 degrees F when inserted in the center of the loaf and juices run clear.
