SIDELINE SALMON (CARIBBEAN JERK SALMON)

Steps:
- Add all of the sauce ingredients to bowl. Mash to combine and crush the ingredients into a marinade. Let stand for 25 minutes.
- Preheat a grill to medium, and the coals have a light grey ash color. Cook low and slow.
- Put the salmon fillet on the grill, skin side down. Spread the jerk sauce over the fillet and grill for approximately 15 minutes, depending on the heat. Flip the fillet, remove the skin, then spread it with jerk sauce. Let it grill for an additional 15 minutes. Flip the salmon 1 more time to seal in the flavors. Remove the salmon from the grill to a serving platter and serve.
CARIBBEAN JERK PORK
Steps:
- Lightly spray the grill rack or broiler pan and rack with cooking spray. Preheat the grill on high or preheat the broiler.
- In a food processor or blender, process all the seasoning blend ingredients until smooth. Transfer to a large shallow glass dish.
- Add the pork to the seasoning blend, turning to coat. Cover and refrigerate for 15 to 20 minutes, turning occasionally.
- Grill the pork or broil about 4 inches from the heat for 5 to 6 minutes on each side, or until slightly pink in the center. Sprinkle with the salt. Serve with the lime wedges to squeeze on top.

- Jerking, a method of cooking in Jamaica, involves rubbing meat with, or marinating it in, a fiery-hot, intensely flavored mixture, then grilling it. Although chicken and pork are the most commonly jerked foods, beef, goat, and fish can also be prepared this way. Jerk seasoning almost always includes some Scotch bonnet or habanero chiles, but we lowered the heat a notch here by using jalapeño. Other very typical jerk seasonings are allspice, cinnamon, ginger, nutmeg, cloves, thyme, garlic, and onions.

Steps:
- Coat a rimmed baking sheet with nonstick cooking spray. Place fillets, skin side down, on baking sheet.
- In a small bowl, whisk together orange juice, oil and vinegar; pour evenly over fillets. Sprinkle fillets with seasoning; cover and let stand 20 minutes.
- Preheat broiler to high. Remove cover from fillets; broil 5-6 minutes or until fish flakes easily with a fork. Transfer to a platter and serve.

- To prepare the quinoa, bring 2 cups of water to boil in a medium sized sauce pan. Add in salt and oil and bring to a boil. - For the fish, pat them dry with a paper towel and marinate them with the Caribbean jerk seasoning, cumin, olive oil, and lemon juice. Heat a large 12 inch non-stick skillet over medium heat. Place the fish fillets in the skillet and pan sear for 5-7 minutes on each side until fully cooked.
