DEVILED EGGS WITH CRAB

Steps:
- In a medium mixing bowl combine the crabmeat, celery, mascarpone cheese, mayonnaise, sour cream, Dijon mustard, lemon juice, and chives. Season, to taste, with salt and pepper. Spoon the crab mixture into the egg halves.
- Transfer the filled eggs to a platter and serve.
CARIBBEAN DEVILED EGGS

Steps:
- Place eggs in a sauce pan and cover with cold water.
- Bring to a boil and cook for ten minutes.
- Remove from heat and discard hot water. Allow cold water from tap to run over eggs until cool.
- Remove shell and cut eggs in half.
- Remove yolks to a small bowl.
- Mash with a fork and then add mayonnaise, pepper sauce, pepper, butter, onion juice, and salt. Mixture should be the consistency of a thick paste.
- Using a pastry bag or spoon fill the egg whites with the egg yolk mixture.
- Chill for a couple of hours.
- Serve garnished with olive slices or parsley.
CLASSIC DEVILLED EGGS
Make devilled eggs to serve at a Boxing Day buffet. They're filled with mustard, spring onions, mayo, yogurt and a pinch of cayenne. Top with chives, if you like

- Put the eggs in a pan of just simmering water and cook for 10 mins. Turn off the heat, and leave the eggs to rest in the hot water for 2 mins. Drain, then transfer the eggs to a bowl of ice-cold water and leave to cool. Peel the eggs and slice in half, then scoop the yolks out into a bowl with the mayonnaise, yogurt, mustard, spring onions, celery salt and cayenne pepper. Mash everything together until smooth, then spoon into a piping bag fitted with a plain round nozzle.
- Pipe the mixture into the hollowed-out eggs, or carefully spoon into the middles using a small spoon. Sprinkle over some chives, if using, then serve.

DIET DEVILED EGGS
Inspired by my hubby's latest diet. His own personal idea of blending south Beach and low fat. Thus I was tasked with developing a deviled egg recipe that didn't overdo it on the mayo and was still low-carb. These are really yummy!

Steps:
- Peel hard-boiled eggs, halve and remove yolks to a bowl.
- Add remaining ingredients except for paprika.
- Blend thoroughly. I use an immersion stick blender. You could use that or hand-held electric mixer. But you want something to make it creamy and take away texture of cottage cheese.
- Fill egg halves and dust with paprika. Enjoy!

This recipe was my Mother's and she taught me to make them. My sons and their families always request these eggs for all family get-together dinners.

Steps:
- Peel shells off cooled hard-boiled eggs; slice into halves lengthwise.
- Remove yolks from whites and place in a small round bowl.
- Mash yolks with a fork into fine pieces.
- Add 2 heaping tablespoons Mayonnaise, yellow mustard, diced gherkins and finely chopped jalapeno (seeds removed), and salt and black pepper to taste.
- Stir mixture until creamy.
- Spoon mixture into a zip-lock sandwich bag; seal bag and snip off one corner of the bag.
- Squeeze mixture out of corner of bag into egg white halves.
- Sprinkle tops of filled deviled eggs with paprika.
- Chill in refrigerator 1 to 2 hours or until cold before serving.

- Basic: Cut 6 eggs in half. Toss egg yolks into a bowl, and mash with a fork. Stir in ingredients and then fill 12 egg whites with the egg yolk mix.
- Curried: Cut 6 eggs in half. Toss egg yolks into a bowl, and mash with a fork. Stir in mayo, mustard, curry powder and salt and then fill 12 egg whites with the egg yolk mix.
- Pickled: Cut 6 eggs in half. Toss egg yolks into a bowl, and mash with a fork. Stir in mayo, horseradish sauce and salt and then fill 12 egg whites with the egg yolk mix. Top with minced pickled onion.
- Fire: Cut 6 eggs in half. Toss egg yolks into a bowl, and mash with a fork. Stir in mayo, pepper, adobo sauce and salt and then fill 12 egg whites with the egg yolk mix.

- Fill a small to medium sized pot with water, add the eggs (while the water is still cold) and pinch of salt, and place the pot on the stove over medium heat. Bring the water to a boil, and turn the heat off as soon as the water starts to boil. Let the eggs sit in the hot water for about ~10-15 minutes, 10 minutes will result in softer boiled eggs and 15 minutes will result in a more solid and harder boiled yolk. For deviled eggs, I prefer the yolk to be a little on the more solid side (closer to 15 minutes) since it makes a better filling. Exact times will also vary based on the size of the eggs.
- For the crab salad filling, mix the cooked crab meat with diced onions, diced bell peppers, diced cucumbers, diced radish, lime juice, olive oil, chopped cilantro, and salt/pepper. Save refrigerated until ready to use.
