Steps:
- Shred the cabbage fine. Grate onion and apple into the cabbage.
- Cook in butter melted over low heat until vegetables are limp, shaking the pan now and then to prevent scorching.
- Add the remaining ingredients. Mix well and let come to a boil. Reduce heat as low as possible and let simmer 15 minutes.

CARIBBEAN CABBAGE IN WINE SAUCE
My interpretation of a spicy Caribbean side dish served at a legendary Jamaican restaurant in my town. I like to serve this with a full Caribbean-style meal of Jerk Chicken, Jamaican Rice and Peas, Fried Plantain and cornbread.

- Pour the water into a large pot. Separate cabbage into leaves, and place in a steamer basket. Set the basket into the pot with the water. Bring to a boil over medium heat, and place the ear of corn over the cabbage. Cover, and steam for 15 to 20 minutes, or until corn is tender. Remove the basket from the pot, and cool slightly.
- Cut the ear of corn into four pieces and place them in a serving bowl with the cabbage. Combine the butter, vermouth, shallots, garlic, salt, pepper and red pepper flakes; pour over the cabbage, and stir to coat evenly. Separate the salad onto four plates, and garnish each one with a piece of the corn.

Steps:
- In a large saucepan, heat the olive oil, add the fennel seeds and toast for 1 min to release the flavour. Stir in the onion and cook gently for 2 mins, then stir in the cabbage to coat in the oil and fennel.
- Pour in the white wine and vinegar, allow to reduce by about half for 5 mins, then simmer on the hob for another 5 mins until the cabbage is cooked and the sauce has thickened slightly. Stir in the coriander and serve.
