Steps:
- In a food processor, blend together all the ingredients but the chicken until smooth. Reserve 1 cup of marinade. Place chicken wings into a large resealable plastic bag and pour remaining marinade over them. Seal and marinate in the refrigerator 4 to 6 hours.
- Preheat oven to 350 degrees F. Line 2 sheet trays with parchment. Remove chicken from bag and place on the baking sheets. Bake 20 minutes. Meanwhile, in a small saucepan bring reserved marinade to a boil. Reduce by 1/3 until it thickens slightly, about 10 minutes. After 20 minutes, remove chicken from oven. Brush chicken with the glaze. Raise the heat to 400 degrees F and cook chicken until cooked through, another 20 minutes.
CARIBBEAN JERK CHICKEN WINGS
Steps:
- Preheat grill to medium-high.
- Prepare sauce by combining all ingredients together in a saucepan over medium heat. Cook until heated through.
- Rub jerk seasoning into chicken wings. Grill for 10 to 12 minutes or until cooked through. Brush generously with sauce and serve.

- Combine the habanero, soy sauce, honey, both sugars, fennel seeds, cayenne, allspice, thyme, ginger, garlic and scallions in a blender. Add the vinegar, lime juice and orange juice and blend until smooth. Place the wings in a large resealable plastic bag and pour the marinade over them. Seal and refrigerate 4 to 6 hours.
- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Remove the wings from the bag, place on the lined sheets and bake 20 minutes. Meanwhile, bring the marinade to a boil in a small saucepan over medium heat and cook until reduced by one-third, about 10 minutes.
- Remove the wings from the oven and brush with the glaze. Raise the oven temperature to 400 degrees F and continue to bake until the wings are cooked through, 20 more minutes.

- Preheat grill to medium heat.

- Grill 15 min.; turn over.

- Heat grill to medium heat. Trim and discard excess fat from chicken.
- Mix seasonings in small bowl until well blended; stir in lime juice to form paste. Rub onto chicken.
- Place chicken, skin-side up, on grill; cover with lid. Grill 25 min., turning and brushing with 1/4 cup barbecue sauce after 15 min. Turn chicken over; brush with remaining barbecue sauce. Grill 5 min. or until chicken is done (165°F).

- Puree all ingredients except chicken in food processor. Add marinade and chicken to re-sealable plastic bag, mix thoroughly and let marinate, refrigerated, for 4 to 8 hours.
- Preheat oven to 350 degrees F.
- Heat grill to high, remove excess marinade from chicken and place on grill. Grill each side of chicken for 3 to 4 minutes then place on a pan and finish in the oven for 15 minutes.
- Squeeze a lime wedge over each piece of chicken and serve.

- Add chicken to a large resealable plastic bag.
- Add garlic, onion, ginger, jalapeno, soy sauce, honey, lime juice, orange juice, salt, pepper, paprika, thyme, allspice, nutmeg, cinnamon, cayenne, bay leaves, and oil to a medium-sized bowl. Stir to combine. Transfer marinade to the bag.
- Seal the bag and place in the refrigerator for at least 2 hours, up to overnight.
- When ready to cook, preheat grill to 400˚F.
- Remove wings from marinade and discard the excess. Transfer chicken to the grill and cook for 30-40 minutes, flipping every 10-15 minutes, until skin is crispy and chicken registers 165˚F internally on a meat thermometer.

- Heat oven to 400°F.
- Combine all ingredients except wings. Remove 1 cup sauce. Pour 1/2 cup into each of 2 small bowls. Refrigerate for later use. Pour remaining sauce over chicken in shallow dish; turn to evenly coat all wings. Refrigerate 15 min. to marinate.
- Remove wings from marinade; discard marinade. Spread wings onto rimmed baking sheet sprayed with cooking spray. Bake 35 min.

- Whisk together the sour cream, cilantro, cumin, garlic powder, and salt. Fold in the tomatoes. Chill until ready for use.
