BRAISED VEAL WITH CARDAMOM-SPINACH PUREE

2 teaspoons olive oil
1 3 1/4-pound boned loin of veal, rolled and tied
2 teaspoons salt
Freshly ground pepper to taste
5 cups milk
2 1/2 teaspoons ground cardamom
1 jalapeno, stemmed, seeded and minced
1 clove garlic, peeled and minced
1 small onion, peeled and chopped
8 cups stemmed young spinach or watercress, washed

Steps:

  • Heat the oil in a large Dutch oven over medium heat. Season the veal with 1 teaspoon of the salt and pepper. Place the veal in the pot and brown on all sides, about 10 minutes; take out of the pot and set aside.
  • Pour in the milk. Stir in the cardamom, jalapeno, garlic and onion. Bring just to a simmer. Reduce heat, return the veal to the pot, and adjust the heat so that the milk stays just below a simmer. Cook, uncovered, for 1 hour 20 minutes, turning the roast once. Remove from heat, and let the veal stand in the liquid for 20 minutes. Remove the veal from the pot, remove the strings from the veal, and cover with a warm, damp towel.
  • Place 1 cup of the cooking liquid in a large saucepan. Bring to a simmer over medium heat. Add the spinach, and cook, stirring constantly, until it is completely wilted. Transfer to a food processor and process until smooth. Stir in salt and pepper.
  • Slice veal into 6 pieces. Spoon some puree into the center of each of 6 plates. Place veal over sauce. Surround with parsleyed potatoes (see recipe), and serve immediately.

750 g baby spinach leaves
1 ounce unsalted butter
2 shallots, finely chopped
1 teaspoon cardamom, freshly ground
1/4 teaspoon hot pepper flakes
3 1/2 ounces double cream
1/2 lemon, zest of, grated
3 tablespoons sliced almonds, toasted

Steps:

  • blanch spinach in boiling salted water for 30 seconds, drain in a colander and refresh under cold running water.
  • squeeze out water until spinach is quite dry.
  • place in a blender and blitz to a coarse puree.
  • heat butter in a saucepan, add shallots and cook for 1 min, until softened.
  • Add cardamon and chili and mix well.
  • stir in the spinach and cream and heat gently until they are lightly bound together.
  • add the lemon zest, season with salt and black pepper and serve sprinkled with the toasted almonds.

Steps:

  • Heat olive oil in a large Dutch oven over medium heat. Season veal with 1 teaspoon salt and pepper to taste, place in the pot and brown on all sides, about 10 minutes. Remove veal from the pot and set aside. Pour in the milk. Stir in the cardamom, jalapeno, garlic and onion. Bring just to a simmer. Reduce heat, return veal to pot and adjust heat to prevent milk from simmering. Cook, uncovered, for 1 hour and 20 minutes, turning roast once. Remove from heat and let meat stand in the liquid for 20 minutes. Remove roast from pot, cut off the strings and cover with a warm, damp towel.
  • Place 1 cup of cooking liquid in a large saucepan and bring to a simmer over medium heat. Add the spinach and cook, stirring, until spinach is wilted, 2 to 3 minutes. Transfer spinach and liquid to a food processor and process until smooth. Stir in remaining teaspoon of salt and pepper to taste.
  • Trim the ends of the roast and slice across into 6 pieces. Divide the spinach puree among 6 plates, placing it to one side, and top with veal. Serve immediately with Indian-Spiced Potato Gratin (see recipe).

1 1/2 cups molasses
1 1/2 cups melted butter
1 1/4 pounds flour
3/4 ounces baking soda
1 teaspoon baking powder
3/4 ounce ground ginger
1/2 ounce ground cinnamon
1/2 tablespoon ground clove
1/2 tablespoon ground nutmeg
1/2 cup minced shallots
1/2 ounce salt
1-ounce ground black peppercorns
16 ounces hot water
2 boniato, diced into 1-inch squares
3 quarts salted water
8 ounces whole butter
Sea salt and freshly ground white pepper

6 ounces ground cardamom
2 ounces ground white pepper
3 ounces garlic powder
5 bay leaves
2 ounces ground coriander
2 ounces ground juniper
6 ounces brown sugar
3 ounces kosher salt
3-pound caribou loin
2 ounces whole butter
1/4 cup whole butter
1 large carrot, diced
1 celery stalk, diced
1/4 cup minced shallot
1 tablespoon black peppercorns
2 sprigs thyme
1 1/2 quarts port wine
1 quart cranberry juice
2 oranges, zested
2 cloves garlic
1 quart veal stock
2 ounces sugar
2 ounces orange juice
6 ounces whole cranberries
1 baking potato, like russets
1/2 cup clarified butter
6 sprigs tarragon

Steps:

  • Gingerbread: Preheat oven to 350 degrees F.
  • Mix eggs to smooth. Add sugar, molasses, and melted butter. Mix well. Blend in all dry ingredients, including the shallots until smooth. Add water and incorporate completely. Butter individual bundt or cupcake molds and fill half way. Bake until a toothpick comes out semi-dry. Reserve at room temperature.
  • Boniato Puree: Place the boniato in water and bring to a boil. Simmer until tender, approximately 30 minutes. Process through food mill and blend in whole butter. Season with sea salt and ground white pepper. Reserve hot in pastry bag with plain piping tip.
  • Caribou: Grind the cardamom, white pepper, garlic powder, bay leaves, ground coriander, ground juniper berry, brown sugar, and kosher salt together in coffee grinder. Evenly coat caribou with mixture and sear in whole butter to light golden brown. Cook to rare and reserve.
  • Sauce: Heat butter in saucepan to golden brown, add carrot, celery, and shallot. Cook on medium heat to golden brown. Add peppercorns and thyme. Next add port wine and reduce by half. Add cranberry juice and reduce again by half. Add orange zest, garlic, and veal stock. Cook on medium, simmer until sauce reduces by at least half and is desired consistency. Strain and reserve hot. Place sugar, orange juice, and cranberries in a small pot and cook on low until all the liquid has evaporated. Reserve.
  • Garnish: Preheat oven to 300 degrees F.
  • Slice potato paper-thin and stamp out into 1 1/4-inch circles. Brush butter onto parchment paper and form a "galette" by alternating potatoes with tarragon to form a complete ring. Bake for 1 to 1 1/2 hours between buttered parchment paper. Cook to golden brown. Reserve.
  • Presentation: Place gingerbread in center of plate and pipe a semi-circle of boniato puree around. Next, slice caribou 1/6 of an inch thick and fan around puree. Ladle sauce over meat and dollop cranberries throughout. Accent plate with potato "galette" and serve.

1 1/2 cups chopped onion
5 tablespoons olive oil
2 1/4 teaspoons ground cardamom
1 large garlic clove
1 4-pound boneless pork rib roast
1 1/2 pounds mushrooms, halved
2 cups canned low-salt chicken broth
1/2 cup whipping cream
1 tablespoon all purpose flour
1 tablespoon butter, room temperature

Steps:

  • Preheat oven to 350°F. Puree 1/2 cup chopped onion, 2 tablespoons oil, 2 teaspoons cardamom, and garlic in processor. Spread 1/2 cup chopped onion in center of large roasting pan; top with pork. Sprinkle pork generously with salt and pepper; coat with onion puree. Toss mushrooms, remaining 1/2 cup onion, and 3 tablespoons oil in bowl; sprinkle with salt and pepper; arrange around pork.
  • Roast pork 1 hour. Spoon mushrooms into large saucepan. Add 1 1/2 cups broth to roasting pan. Roast pork until thermometer inserted into thickest part registers 145°F, about 20 minutes longer. Transfer pork to platter; tent loosely with foil (temperature will rise 5 to 10 degrees as roast stands).
  • Scrape juices from roasting pan into saucepan with mushrooms. Add cream, remaining 1/2 cup broth, and 1/4 teaspoon cardamom to pan; bring to boil. Blend flour and butter in small cup; mix into mushroom sauce. Cook sauce, stirring often, until reduced enough to coat spoon, about 5 minutes. Season sauce with salt and pepper; serve with pork.

Yield Makes 12 servings

Number Of Ingredients 6

6 pounds rutabagas, peeled, cut into 1-inch cubes
1 teaspoon coarse kosher salt
24 whole green cardamom pods
1/2 cup créme fraîche
1 tablespoon chopped fresh thyme
Freshly ground white pepper

Steps:

  • Place rutabagas in large pot with enough cold water to cover by 1 inch. Add salt and cardamom pods; bring to boil. Reduce heat, cover partially, and simmer until rutabagas are tender, about 25 minutes.
  • Drain rutabagas; discard cardamom. Working in batches, puree rutabagas in processor. Return puree to pot. Cook over medium heat until dry, stirring, about 5 minutes. Mix in créme fraîche and thyme. Season with salt and white pepper.
  • DO AHEAD: Can be made 1 day ahead. Spread puree in buttered baking dish. Cover; chill. Reheat in 350°F oven until heated through, about 25 minutes.
